Nutrient requirements and food selection to meet those requirements are discussed. Students evaluate their own food intake and eating behaviors and learn to be informed consumers of food and nutrition information. Essential Learning Outcomes: Critical Thinking: Students will demonstrate disciplined processes of actively and skillfully conceptualizing, applying, analyzing, synthesizing, and/or evaluating nutrition information gathered from, or generated by, observation, experience, reflection, reasoning, or communication, as a guide to belief and action. Course Objectives: Students who are successful in this class will increase knowledge of the science of nutrition with a greater understanding of the relationship between food and health become familiar with the nutrient requirements of the human body, factors affecting those requirements, and current advancements being made in this area apply nutrition information by selecting and evaluating a nutritious food intake interpret information on a nutrition label and use this information, along with other nutrition tools, to evaluate diets identify reputable sources of nutrition information and distinguish between reliable and unreliable information Assignments: Chapter Quizes: Chapter Quizes are to provide other important nutrition information found in the textbook which is not covered in class. Chapter Quizes should be completed on canvas as indicated on the class syllabus and submitted thru Canvas. See Canvas for specific instructions under “Assignments”. Chapter Controversy Outlines: Chapter Controversy Outlines should be completed as indicated on the class syllabus and submitted thru Canvas. Each chapter in the textbook has a specific subject controversy at the end of the chapter. You are to pick 4 chapter controversies of interest to you and write a 1 page outline (single spaced) for each. See Canvas for specific instructions. Supertracker Nutrient Intake Analysis Report We will be using Supertracker Nutrient Analysis program http://www.supertracker.usda.gov (this is not hyperlinked so you need to copy it into your internet address bar) to complete Assignments 2, 4, 5, 6, & 7. See Canvas for specific instructions under “Assignments”. Assignments in Canvas 1. To login to Canvas: go to the www.suu.edu webpage and select ‘My SUU Portal’ from the upper left hand side. After logging in, select the ‘Canvas’ link from the right side of the page. Once you are in the Canvas system, hover the mouse over the tab ‘Courses’, then select NFS-1020 from the drop down list. This will give you access to the NFS 1020 course content. (If you login to Canvas from a tablet or phone, these instructions may not apply). 2. All assignments are to be submitted using Canvas per class syllabus. Each Assignment should be labeled with NFS 1020, (Section #), (Student Name), (Assignment name). Ex: NFS 1020 06, John Smith, Chapter Controversy #2 1 3. Canvas will be used extensively in this course for completing assignments. Canvas is compatible with Firefox, Safari, or Chrome. DO NOT login to Canvas using Internet Explorer. Canvas and Internet Explorer are not compatible. 4. MAC USERS: When you upload files, please do not upload them in Mac format or they will not be able to be opened. The following file types are acceptable: .doc, .docx, .rtf, .pdf, .xls, .xlsx. Please do NOT submit .pages files. 5. OTHER CANVAS TIPS: IMPORTANT!! When logging into Canvas, please use Mozilla Firefox (the latest version), Google Chrome, or Safari. Click on Assignments tab and a list of individual assignments will magically appear. For instructions about how to complete each assignment, simply select it. Instructions for completing and submitting each assignment is explained. Make sure you read each assignment explanation as they are subject to change. 4. Click on Grades tab to view your current grade in the course. 5. Check out the Inbox tab and Compose an email for me. 6. Watch for Announcements about the class including assignments, exams, etc. Make sure you are set up to receive Canvas Announcements. Canvas will be updated on a regular basis! Ignore class updates at your own peril! Canvas updates supersede the written syllabus. Check your grade on Canvas after each test/assignment is returned to you. After each test/assignment, grades will be posted on Canvas. It is your responsibility to verify that your grade has been correctly recorded within 1 week of posting. If there is a problem, please bring a copy of the test/assignment to the professor’s office so appropriate corrections can be made within 1 week of the grades posting. Exams 1. There will be 4 exams, plus a comprehensive final. All exams will be multiple choice with 50 questions, 2 points per question, worth 100 points. 2. At the end of the semester, your lowest exam score from exams 1-4 will be dropped from your final grade. If you have an emergency and are unable to take an exam, this will count as your dropped exam. The final exam may NOT be dropped from your final grade. 3. Exams will be given at the Testing Center, ELC 2nd florr. Tests will be available for 3 days- see syllabus schedule. Testing Center hours: 9am-with test completed by 8pm – Test must be started by 7 pm. See syllabus for exceptions. You will be allowed 90 minutes to take the test. There will not be class held on exam days. 4. 5. 6. Testing Center Policies and Requirements: Cell phones must be turned off. No silent or vibrate mode allowed. Make sure you have a valid photo ID ready. We cannot administer any exam without positive identification (SUU ID, driver license, state ID, passport, etc.). Remember to bring supplies that you will need as designated by your instructor (pencil with good eraser, 100 point scantron,). To allow students time to test before closing, all exams must be started at least one hour before closing. Per the Nutrition Department policy, copies of exams will NOT be returned. You may review your exam in the Instructor’s office during office hours. All exams will be on scantrons, be sure to erase all stray marks completely. NO credit will be given for changed answers/erase marks. Be sure to bring a good eraser to class on test days! The final exam will only be given during finals week. No early final exams will be given. The final exam will be available in the testing center. See syllabus for times. Read and study all reading assignments per class syllabus. 2. Complete all assignments as indicated on the class syllabus. 3. Turn in assignments on time. They are due by 11:59 pm on the due date indicated on the syllabus. Assignments will be accepted up to 1 week (7days) late for 50% of the points. 4. All assignments are to be submitted using Canvas. Computer problems are NOT an acceptable excuse for late work. Use the computer early. If an assignment is turned in past due date and time, 50% deduction in points. Miscellaneous (but important) 1. Cheating on exams and assignments will not be tolerated. Anyone caught cheating will receive an automatic zero on that exam/assignment. Second time offenders will fail the course. 2. Please do not bring children to class. If you are unable to find appropriate childcare, please arrange to have a classmate take notes and pick up handouts for you. 3. You are responsible for identifying classmates from whom you can get notes/handouts if you are absent. 4. Due to the large class size and to allow for all student participation and an optimal learning environment, please limit questions or comments to 3 per student per class. More questions can be asked following class. See Instructor’s office hours. 5. Please be courteous in class. Silence or turn off your cell phone when you come to class. Excessive talking during lecture is disruptive other students and to the professor. If excessive talking becomes disruptive, you will be asked to leave class. No texting (or other phone use) during class. 6.
