Just don't have too many! Champagne, Absinthe. GREY GOOSE LE FIZZ £10.50 Vodka made from grapes is sweetened with the grassy notes of elderflower and sharpened with the addition of lime juice. These flavours are then brought to life when the drink is lengthened with soda water Grey Goose Vodka, elderflower liqueur, lime, soda. RALLY FIZZ £9.50 The floral and sweet attributes of Prosecco are emphasized with the inclusion of gin and elderflower liqueur. These in turn are balanced out with a little citrus in the form of lemon juice. Together they create a fresh crisp drink perfect for the warmer seasons. Prosecco, Hendricks Gin, elderflower liqueur, lemon. 1 SHARP FRESH CRISP FRESH SHARP CRISP THE PEGU CLUB COCKTAIL £9.00 In the 1880’s Rangoon, Burma, a club was established in order to serve the many British army officers who were posted there during the Third Anglo-Burmese War. This club was named after a river which ran through the country called the Pegu. Due to the scorching heat and bone dry conditions during this time, the officers required a drink to be created which would, with one sip, quench their thirst and also provide quick relief from their daily toil. Thus the Pegu Club cocktail was born. Tanqueray Gin, Triple Sec, Angostura bitters, West Indian orange bitters, lime, sugar. AVIATION £9.90 Created by Hugo Ensslin, Head Bartender at the Hotel Wallick in New York in the early 20th Century. Tanqueray Gin, Creme de Violette, Maraschino Liqueur, lemon, sugar. BRONX TRIPLE O £9.90 CORPSE REVIVER NO2 £10.50 There are a collection of drinks, which are suitably referred to as Corpse Revivers. The original aim of these recipes was to provide a speedy recovery from the previous night’s festivities. The drink which has stood the test of time. The origin of the Bronx is still contested to this day. What we do know is that it was either discovered in Philadelphia by one Joseph S. Sormani, a Bronx Restaurateur, or Johnny Solon, a Bartender at the Manhattan Hotel. Either way, this is our version, which was updated by Mr A. Hayakawa in 2013. Hendricks Gin, Lillet Blanc, Triple Sec, Absinthe, lemon. Bombay Sapphire Gin, Sweet and Dry Vermouth, lemon, sugar, orange juice, orange flower water, orange bitters. Originating in Cuba at the time of the Spanish American War, this drink is named after a mining engineer, Jennings Cox. Without realising it, he had started something which would grow to become the base of innumerable drinks around the globe. The list is endless, but the original recipe is the simplest and, in our opinion, the finest. PENICILLIN £7.50 You would be forgiven for presuming that this recipe dates back to the golden era of pre-prohibition bartending, although in reality it is a perfect example of how a modern drink can be so successful it creates its own legend. Created in 2005 by New York Bartender Sam Ross. DAIQUIRI NATURALE £8.00 Bacardi Superior Rum, lime, sugar. Black Bottle Whisky, honey and ginger syrup, lemon, Ardbeg Spray. 2 3 EXOTIC TROPICAL POLYNESIAN EXOTIC TROPICAL POLYNESIAN MAI TAI £10.00 In 1934, Victor Jules Bergeron, or Trader Vic to his acquaintances, opened his first restaurant in Oakland, San Fransisco. The restaurant specialised in Polynesian food and Victor had a real talent for mixing drinks. A few years later he was testing a new recipe on two Tahitian friends and after taking a sip of his creation, one of the party, Carrie Guild exclaimed “Maita i - Roa Aé” which in Tahitian means out of this world. The recipe was a success and the name stuck. Shortened to Mai Tai, the drink rocketed to fame over the following few decades and is still ever popular to this day. Appleton’s 8 Year Old Rum, Wray & Nephew Overproof, Triple Sec, Orgeat, lime, sugar. PISCO SOUR GLANDULA DEL MONO £8.50 (MONKEY GLAND) Chile or Peru? That is the only question which concerns this drink. Both countries claim this creation as their national beverage and both have their own techniques regarding its execution. Either way, the recipe we opt for is as follows. Pisco, lime, sugar, Angostura bitters. egg £13.00 Created by Phil Ward this is a tequila based variation of the Monkey Gland cocktail, which was a favorite gin based prohibition drink Blanco Tequila, Absinthe, lemon, orange, grenadine white, BUMBO RUM FLIP £9.50 £7.50 Shortly after the British conquest of Jamaica, a time when piracy was rife, the admiralty switched the sailor’s daily ration from brandy to rum. Nearly a century later Admiral Edward ‘Old Grog’ Vernon, introduced water and lime to the mix. The health properties from the citrus proved beneficial and the drink became popular, known as Grog. Bumbo was a slightly later adaption which included spices and was said to be much more palatable. The flip first appeared in the 17th Century. Originally they consisted of a mixture of beer, rum, molasses and cream that would have been heated with a red hot poker. Over time the poker lost out and the humble egg was favoured to emulsify all the ingredients into a rich, decadent drink. Pampero Anejo Especial Rum, Falernum, Yellow Chartreuse, grenadine, egg yolk, nutmeg Pusser’s Navy Rum, spiced tea, lime, demerara sugar. 4 5 FLUFFY FRUITY SOFT FLUFFY FRUITY SOFT DAISY £8.50 The term Daisy dates back to the late 19th century. One of the earliest references is from 1876, in the second edition of The Bon Vivant’s Companion written by the legendary Bartender Jerry Thomas. Also referred to as The Bartender’s Guide this book cited the recipe as: 4 dashes gum syrup 3 dashes of Curaçao Liqueur The juice of half a small lemon 2 small wine glasses of Brandy 2 dashes of Jamaica Rum Fill the glass one-third full of shaved ice. Shake well, strain into a large cocktail glass and fill up with seltzer water from a syphon. Rather than referring to one singular drink, the Daisy is applied to a large range of similar styled drinks. What most people don’t realise is that this formula became the basis for countless modern classics, including the Margarita, Cosmopolitan and Sidecar to name merely a few. The recipe we use has not changed since we opened in 2009. CLOVER CLUB MARY PICKFORD £7.50 £8.50 Named after a group of industry elites who gathered together regularly at the Bellevue Stratford hotel, in pre prohibition Philadelphia. Described in its heyday as being a distinguished patron of the oak panelled lounge, the Clover Club cocktail was all but forgotten until recent years. Thankfully, it is now celebrated. Credited to Bartender Fred Kaufman, who fled the U.S. for Cuba during the prohibition era. This drink was created for the young Hollywood star of the same name who was filming a silent movie with Charlie Chaplin at the time. They frequented the bar at the Hotel Nacional de Cuba where Fred was employed. Tanqueray Gin, Martini Rosso, raspberry syrup, lemon, egg white. DAIQUIRI NO2 FRENCH MARTINI £9.50 £9.25 The history of the Daiquiri is long and varied and some of today’s modern creations can seem quite far removed from what is considered to be the original recipe. This combination suits the modern sweet tooth while still celebrating the heritage of the drink. Everyone’s guilty pleasure. Ketel One Vodka, Chambord, Pineapple. Pampero Anejo Especial Rum, Crème de Fraise, lime, sugar, egg white. Tanqueray Gin, Triple Sec, Grenadine, lemon, soda. 6 7 SHORT POTENT HARD POTENT SHORT HARD OLD FASHIONED £9.00 The term ‘cocktail’ was first seen on March 16th, 1806, in a publication of The Balance and Columbia Repository, in Hudson, New York. The Editor, in response to a reader’s enquiry, described the drink as a potent concoction of spirits, bitters, water and sugar. If you asked for a cocktail in any bar at that time, it is highly likely that you would receive a version of this recipe with rum, gin or brandy as its base. Other spirits would also be used and by the 1860’s the introduction of Curacao, Absinthe and other liqueurs became common. Eventually, whiskey became the spirit of choice and patrons of the bar scene would ask for theirs to be served ‘in the old fashioned style’ hence the name now applied to this iconic drink. NEGRONI £8.50 The Americano, a drink popular in Italy in the early 1900’s consisting of Sweet Vermouth, Campari and soda water, was the favourite tipple of the Count Camillo Negroni. Tanqueray Campari. Gin, Martini Rosso, SAZERAC £12.00 In mid 1800’s New Orleans, a local liquor importer named Sewell T. Taylor acquired a brand of cognac named Sazerac de Forge et Fils. A local bar then changed its name to Sazerac House and started pouring a cocktail using this cognac mixed with bitters made by a local druggist Antoine Amedie Peychaud. The recipe altered over the years and this is our preferred version. Hennessy Fine de Cognac, Bulleit Rye, Pechaud’s bitters, Absinthe, sugar. MARTINEZ £9.00 Hailed as the predecessor to what we know now as the Martini, the Martinez is similar in content but very different in constitution. First recorded in O.H. Byron’s 1884 publication ‘The Modern Bartender’, it was listed as an alternative to a Manhattan. BROOKLYN £12.50 The Brooklyn is one of five cocktails named for the boroughs of New York City, the Manhattan being the most famous. It resembles a Manhattan but with the addition of Maraschino Liqueur, Cocchi Americano and bitter Amer Picon. Bulleit Rye Whiskey, Cocchi Americano, Amer Picon, Maraschino EL PRESIDENTE £8.25 The El Presidente earned its acclaim in Havana, Cuba during the 1920s through the 1940s during the American Prohibition. The cocktail was named in honor of President Gerardo Machado and quickly became the preferred drink of the Cuban upper class. Bacardi 8 Year Old Rum, Martini Rosso, grenadine, triple sec Martini Rosso, Tanqueray 10 Gin, Maraschino Liqueur, orange bitters 8 9 MARTINIS MARTINIS It is safe to say the Martini is one of the world’s most iconic and renowned mixed drinks. The story is a long and interesting one, which is substantial enough to fill the countless books written over the years dedicated to this libation. We will try here to summarise its history and list a few of our preferred recipes and techniques. Written records of the Martini started appearing towards the mid to late 19th century, but like many classics of its kind, it is certain that people would have been enjoying the mix of gin and vermouth many years before. During prohibition the easy access of both of these ingredients ensured the Martini was cemented in our culture and it became the drink of choice for those wishing to consume hard liquor in a civilised manner. Over the years the ratio of spirit to vermouth changed, originally the mix would most likely be 1:1, probably due to the crudeness of the quite often homemade gin and the low price of French and Italian vermouths. As the gin became more refined, the ratio gradually shifted towards what we commonly see now as a Martini, heavy on the gin, very light on the vermouth. The usual questions you will face when asking for a Martini are as follows: GIN OR VODKA? Vodka Martinis became popular after the spirit was introduced to America in the 1940’s. The botanicals of gin provide a more complex flavour but vodka still hits the mark. SHAKEN OR STIRRED? 99% of the time your Martini will be stirred. Shaking makes it colder but adds more dilution. It’s your choice. OLIVE OR TWIST? A nice green olive sitting in the glass is what most images of the Martini portray. A twist of citrus peel adds a whole new level of scent and flavour to the drink. DRY OR WET? Less vermouth is drier, more is wetter. The point is, whether you are a regular Martini drinker or not, you are the one who should decide how it is served and we are here to point you in the right direction. Bourbon is technically a blend of differing grain bases but has to contain a larger wheat percentage than other grains in the blend. Rye whiskies tend to be a bit more peppery, earthier but have fruitiness buried in its characteristics. Canadian Club is also a blend that includes rye in its mix and was sold as such during prohibition in the US due to their favouring it. Japanese whiskies were similar to Scotch originally but are now generally aged in indigenous Japanese oak. Most of the single malts from this region end up in blends but there is still a small selection which are great as aperitifs. At one time, there were as many as 23 distilleries on this small island but now there are only 8. Ardbeg, although having the highest ppm (parts per million) of peat is surprisingly light and fruity. Lagavulin and Laphroaig both offer the biggest challenge to the palate, as they are both big, robust whiskies best enjoyed after dinner. With peat adding a hint of flavour similar to that found in an Islay malt. The Western Highland whiskies are less peaty than Islays but still slightly smoky, most commonly found to have sweet starts and dry finishes. The Southern, Eastern and Central Highlands are lighter bodied, sweeter with dry finishes. The Northern Highlands tend to offer a slightly spicy character with a light body and dry finish. This region now includes the Islands with distilleries found on the Islands of Mull, Jura, Orkney, Arran, Lewis and Skye.
