In Cuba, Don Facundo discovered a high-quality levadura (“yeast” in Spanish) and introduced controlled fermentation to the rum world. During the carefully controlled fermentation process, the Bacardi Levadura and demineralized water are added to the molasses to form a “mash.” The 150-year-old Bacardi Levadura is closely guarded as it provides BACARDÍ rum with qualities no other rum can replicate.
