Lawry's makes southern style barbecue easy with their new Memphis Style Barbecue
Rub. All of the seasonings needed to make authentic Southeast US BBQ are included
in this blend of spices. Simply sprinkle over your favorite pork shoulder, pork baby back
ribs, beef steaks and even hamburgers to get the great savory homestyle taste in your

MEMPHIS SMOKED RIBS WITH CHIPOTLE BBQ SAUCE
Ingredients
Quantities
Racks of pork spare ribs, St. Louis style
2
Apple cider vinegar
1 cup
Dark brown sugar
2 cups
Tomato paste
1 cup
Chipotle, ground
2 teaspoons
Onion, dry granulated
2 teaspoons
Lawry’s Memphis Sytle Barbecue Rub
1 cup
Hardwood chips, soaked and drained, hickory recommended
Instructions
Coat ribs generously with Rub (1 cup. 6 cup ingredient), let sit at least
30 minutes. Place chips in smoke box and preheat smoker to 225
degrees F. Place ribs in smoker. Cook 2 hours. Turn smoker off, but
leave heat on, cooking for 2 hours more. Meanwhile, mix all other
ingredients in medium sauce pan, bring to boil then simmer 5 minutes.
Cool to room temperature.
Plating Instructions: Cut each rack in half. Serve dry with Chipotle BBQ
Sauce on side.
Chef’s Tip: Optional Mop Sauce: Mix 2 tablespoons Rub, 1 cup water, 1
cup Cider Vinegar. Bruch ribs with mop every 30 minutes. This will keep
the ribs moist and flavorful.
