MEMPHIS SMOKED RIBS WITH CHIPOTLE BBQ SAUCE Ingredients Quantities Racks of pork spare ribs, St. Louis style 2 Apple cider vinegar 1 cup Dark brown sugar 2 cups Tomato paste 1 cup Chipotle, ground 2 teaspoons Onion, dry granulated 2 teaspoons Lawry’s Memphis Sytle Barbecue Rub 1 cup Hardwood chips, soaked and drained, hickory recommended Instructions Coat ribs generously with Rub (1 cup. 6 cup ingredient), let sit at least 30 minutes. Place chips in smoke box and preheat smoker to 225 degrees F. Place ribs in smoker. Cook 2 hours. Turn smoker off, but leave heat on, cooking for 2 hours more. Meanwhile, mix all other ingredients in medium sauce pan, bring to boil then simmer 5 minutes. Cool to room temperature. Plating Instructions: Cut each rack in half.
