CHILIBOMB’S Texas Chili
INGREDIENTS:
• 6 Tbsp Butter
• 2 Large Spanish Onions, diced
• 4 Cloves Garlic, minced
• 2 Lbs Ground Beef
• 1 Lb Sweet Italian Sausage – break up sausage links out of casing
(If you want to eliminate sausage, increase ground beef to 3 Lbs)
• 2 Cups Water
• 2 Cans Chicken Broth (14.5 oz)
• 1 Whole Canned Tomato (28 oz in Juice)
• 1 Large Green Pepper, diced
• 1 Tsp Celery Seed
• 3 Small Bay Leaves
• 6 Tbsp Chili Powder
• 1 Tsp Ground Cumin
(Optional – Toast 2 Tsp of Cumin Seeds in a hot skillet until fragrant, grind in
hand held coffee grinder or spice grinder for the most intense cumin flavor)
• 1/2 Tsp Basil
• 3 Tbsp Salt (or less if desired)
• 5 Tbsp Brown Sugar (Optional – If you want to give your chili a sweet flavor)
• 1 Tsp Cayenne or (Optional – 1 Large Fresh Jalapeño, diced and de-seeded)
• 2 Cans Kidney Beans (Optional - If you like beans in your chili, add before serving)
• 6 Tbsp Masa Harina Flour (Optional – to thicken)
DIRECTIONS:
Sauté Onion & Garlic in butter until clear, add meat and brown. Transfer meat mixture to large
sauce pan then deglaze* pan with one can of chicken broth. Remove the deglaze and add with
remaining ingredients, including second can of chicken broth. Bring to a boil and reduce heat
and simmer uncovered for about 3 hours, stir occasionally.
*Raise the heat to high, bringing the liquid to a boil while you stir and scrape the browned bits
until they dissolve into the sauce. This stirring and scraping is the key to deglazing — all those
delicious little caramelized bits of cooked meat infuse the liquid, making it taste fantastic.
