WOW A Friend “2011 Ed’s Challenge” Is Met!
It was announced at the 2011 Awards Dinner
that we met Ed’s challenge! By end of year
2011, we had 4,600 participants enrolled, had
collected $125,000 in donations, and had
helped 77 employees in their time of need!
A very big ‘thank you’ for everyone’s hard
work and dedication in making this happen!
It could not have been done without your
efforts! Below is a picture of Ed & Joan
presenting their matching check of $125,000.
However, we now have a new challenge to
meet. While presenting us with their matching
gift, Ed and Joan threw out a new challenge
to the WOW a Friend Foundation. If we can
raise $150,000 and have 5,000 participants by
year end 2012, they will again match it!
Please continue to promote the WOW a
Friend program to both new and existing
employees. As always, we thank you for your
support and will continue to update you in

each one of the families who had lost everything and invited them in

Panera Bread Wins

I recently attended the Melville Chamber of Commerce Annual

locations were the recipient of the Michael J. Weisbrod Business of
the Year Award for their outstanding dedication to the community
and the businesses in the area. I was personally WOWed in learning

great relationships and in turn have greatly built our reputation and

I just thought I would take a second to share another exciting
achievement for Doherty Enterprises as we continue to grow, while
others shrink or just plain go away. On January 16, 2012 we unlocked
the doors to our newest location in Ramsey, NJ. Under the leadership
of Melissa Holic, General Manager, the team has jumped off to a
great start.
The pub is held together by several key people:
1. The Management team consists of Melissa Holic, Rey Santos,
Joseph Fazio, Lauren Pescatore, and Juan Vargas.
2. The Training team, lead by their fearless leader Reggie Toomey,
consists of Juan Gallardo, Asuncion Sandoval, Israel Velez,
Juan Gonzaga, Marisa Sankowski, Bryan Carlisle, Tom Lesak,
Karyn McLoughlin, and Frank Catalano.
3. The support managers brought in all the way from Spuntino were
Mike Guido and Josh Bernstein; they were rockin’ out in the prep
room.
4. Your lovely POS people are Kate Baviello, Kirsten Whitlow,
Bianca Tierney. We had some additional help from
Ashley Greenfield, Larry Hinton, and Antonio Solano.
5. Our master of all trades is Guy Dupont, Director of Operations.

A Message From David DiBartolo
As we start the new year we continue to be challenged with fuel prices,
driving food, insurance, labor costs, shipping, competition…the list
(or excuses) can go on and on. Our company, along with 90% of the
country, is experiencing the same issues. We can narrow and reduce
the gaps of sales and profit decline by MANAGING OUR BUSINESS
EVERY MINUTE OF EVERY DAY. One guest at a time, one transaction,
one person doing their job correctly, one smile, one thank you.
New Hyde Park Panera Bread hosted a terrific girl scout tour and
both the children and their parents could have not have been more
grateful. Way to WOW your community! pictured below ▼
Our guests have a lot of choices as to where they choose to eat. Their
experience at one of our restaurants will determine if they will visit us
again. If we do not deliver them a WOW experience they will simply
choose another restaurant to dine in. We must build guest loyalty.
How can we do this? Deliver and execute the BASICS. You have heard
me say this over and over again, but I believe if we deliver the basics
to our guests they will visit and choose us more frequently over our
competitors. Our guests want 5 things:
Care Package For Applebee’s Hillsborough
Soldier Exceeds Expectations
1. Warm greetings and friendly service throughout their meal
2. Quality food and beverage the way they ordered it (hot food hot)
3. Timing: accurate wait, quick meal delivery, quick payment
4. Clean facilities
5. Feel appreciated for their business and money spent
Back in November, Matthew Coates, server at Hillsborough
Applebee’s, was deployed overseas. Bill Van Houten, General
Manager of Hillsborough, is extremely proud of Matt and the person
he has become. Bill wanted to show his support for Matt and his
fellow soldiers and decided to put together a care package. Bill and
the Doherty office staff were overwhelmed and very pleased with how
many things were collected. A special thanks to all of Jim Pelliciari’s
district for collecting items for Matt! pictured above ▲
Successful delivery in our restaurants is made of dozens of basics
that nobody notices…until you don’t do them. I can sit here and list
hundreds of basics but will give you my top 10.
1. Hire for attitude
2. Proper training by the right trainers
3. Strict compliance to recipes, specs and operational procedures.
Never deviate
4. Remembering always that our guest is the boss, period! They
want consistency (the list above)
5. Standards (uniforms, steps of service, plate presentation,
organization of restaurant)
6. Sanitation (restrooms, outside landscaping, walk-ins, back docks,
employee restrooms, your office)
7. Great looking and tasting food
8. Consistency, delivering it over and over and over again
9. Be fair
10. A ‘Thank You’ goes a long way! Catch someone doing it right
Lastly, I can not stress the next point enough and that is IT’S
GOT TO COME FROM YOUR HEART to want to be the best, to
consistently deliver, to ‘WOW Every Guest, Every Time’…you can’t
teach that!
Thanks,
David DiBartolo

Amanda Booth And The Paramus
Applebee’s Team Offer A True
Homecoming For Local Soldier
MONTHLY
JOURNAL OF
Amanda Booth, Paramus Applebee’s Manager, received a phone
call with news that she couldn’t resist helping out with. Army Captain
Greg Backer was coming home on leave to surprise his family for
Thanksgiving. Amanda was asked if she could help arrange a dinner
for Captain Backer and his family, and if she could have News Channel
12 film the event. Needless to say, she jumped at the opportunity to
help.
Captain Backer arrived, but it was difficult getting his parents to come
to the restaurant. Finally, the members of the American Legion came
up with a plan to bring his parents in and they went to his parent’s
house to get them. When Ron from the American Legion arrived at
Captain Backer’s parent’s house, he found out that his mother was not
home, but after some calls they got in touch with her and arranged
for her to meet them at the restaurant. Captain Backer was getting
very nervous that this was not going to work out and was relieved
once he heard his parents were on their way.
While waiting for his parents to arrive at the restaurant, the Paramus
team had a chance to talk to Captain Backer, who said he chose
Paramus Applebee’s because it is his parent’s favorite restaurant and
they loved coming there. Captain Backer waited in the office until
his parents arrived and were sat at a table. The staff put on their
Veterans Day t-shirts and followed Captain Backer as he delivered
some boneless wings to his parent’s table.
As Captain Backer walked towards the table, the team had Lee
Greenwood’s song, “God Bless the U.S.A.” playing, which just so
happened to be Captain Backer and his mother’s favorite song. When
Captain Backer arrived at his parent’s table they were shocked and it
took a few moments for it to even register with them that their son
was standing in front of them. His mother and father both started
crying and hugging their son, and guests in the restaurant started
applauding. As Captain Backer was talking to his family a number of
guests came up to him to thank him. Children also expressed their
thanks and asked to take a picture with him. Captain Backer’s parents
then contacted his twin brother and had him come to the restaurant
and Captain Backer was able to surprise him as well. Once the entire
family was together Amanda Booth presented Captain Backer with
and Applebee’s Veterans Day shirts and thanked him for his service
on behalf of everyone at Applebee’s and Doherty.
What a great story! A huge thank you to Amanda Booth and the
Applebee’s team for making this happen!

We just opened our 3rd Shannon Rose in Ramsey, NJ!
First week opening sales records were shattered! (See photos)
A total of 61 Applebee’s restaurants hosted a very special event on
Saturday, December 3rd – the Annual Breakfast with Santa. On this
single morning the Applebee’s teams WOWed over 9,000 guests by
serving them breakfast, taking their picture with Santa, and supplying
giveaways for children and special raffles for adults. Everyone had
a fantastic time! By hosting this event, the teams were able to raise
$98,430 for Toys for Tots (WOW!) – but they didn’t stop there!

WHAT’S CURRENTLY UNDER CONSTRUCTION
Adams Street (Brooklyn) Panera Bread
Construction is moving along. We will be completed for a
March 12th opening.
Starting back in early October, the Applebee’s teams began selling
gift packs in denominations between $1 to $20. These gift pack
sales bumped the total amount raised for Toys for Tots to $322,209!
Unbelievable! The Butler Applebee’s location alone raised almost
$17,000! WOW!
Syosset Panera Bread
We have completed all demolition and are awaiting the steel for
the new roof. Yes, we are ‘raising the roof’ as the old diner ceiling
was just too low! Opening date has been set for May 21st.
Clifton Spuntino Wine Bar and Italian Tapas
Another Doherty original! Our old Johnny Carino’s in Clifton, NJ
will be the home for our first Spuntino. Construction is progressing
well and we anticipate a grand opening in the Spring. (See photo)
Syosset Panera Bread
Since 1999 Applebee’s has raised over $2.7 million dollars for the
Toys for Tots foundation. Thank you to everyone who has either
volunteered their time, made a contribution to the Toys for Tots
program or sold gift packs. It’s truly a WOW to say that this year will
now be our highest donation to Toys for Tots ever! Thank you all!

Doherty Office Holiday Party
Our annual office holiday party was a success! A few years ago, in lieu of a grab bag, we decided to donate money to local charities. In 2010 and
2011 we chose to make our donations to the WOW A Friend Foundation. This past year we donated $470! We also decided to do something
different this year – we had an Ugliest Sweater contest. Everyone had the opportunity to put on their ugly holiday sweaters and make fun of each
other. The winner of the Ugliest Sweater contest was Rich Festa! You can clearly see why he was the winner! Congratulations Rich!
