The Beer Styles
Lager....
Characterized by its light body, pale hue and mellow flavor, this beer is made with bottom-fermenting yeast and “lagered”
(German for stored or aged) at temperatures close to freezing. Its worldwide popularity is due to its clarity and smoothness.
Pilsner.....
Originally from Pilsner, Bohemia, this lager-style has a slightly tannic character, with an emphasis on hops. Aged in
wood, it glows with golden color and is traditionally the palest of all lagers.
(Weiss, Weizen)..... Highly carbonated, low in alcohol and prized for its refreshing qualities. Wheat beers substitute malted
wheat for barley, resulting in a characteristic yeasty aroma, dense foam head and thirst quenching tartness.
Wheat
Ale.....
More full bodied, hop flavored and bitter than lagers. Its characteristic malt flavor, full flavor palate result from the use of
top-fermenting yeast. Many micro-brews are brewed in this style.
IPA.....
India Pale Ale was invented in the late 18th century for thirsty British Colonial troops stationed in India. Regular beer
would spoil on the 5-month voyage, so brewers made a stronger, more highly-hopped brew that would survive the trip. It became very
popular. Lighter and hoppier than pale ales, if you like hops, you’ll love IPAs.
Porter..... A traditional
English beer, originally brewed to satisfy the demand for a 50/50 mix of ale and stout. Its dark brown hue
and full body come from roasting the barley before brewing. Less hoppy than a normal ale with a hint of sweetness.
Stout.....
Richer and more full-bodied than porter, stout is a dark, heavy, top-fermented beer with a rich malty flavor and bitter hops
taste. It is usually low in carbonation and may be served at closer to cellar temperatures.
Belgium/Trappist..... Trappist Ales
are indeed brewed within the monasteries in Belgium. Today many former trappist beers
are brewed for monasteries in the old style. This list offers several of the great remaining trappist beers. The beers display high ABV
as a result of as much as 3 times (tripel) the malt normally used. The result is complex flavors with a smooth, almost sweet finish.
Barleywine..... An
English term for an extra strong ale. Barleywine is very full-bodied, malty, highly hopped and very high in
alcohol. Typically consumed in smaller servings, this beer makes an excellent nightcap.

Gold. Toasty, fresh baked cracker and roasted corn aromas follow through on a round entry to a foamy, medium
body with mild earthy, grassy hops and excellence balance and smoothness. Finishes with a long, caramelized
grain and Asian pear accented fade. Very tasty and food friendly, particularly with spicy Asian curries.
Pale golden amber color. Delicate aromas of citrus peels and baguette bread follow through to a frothy,
grainy medium body of wheat toast, clay, and caramelized dried fruit flavors with a long, sweet and
sour citrus and earthy hop finish. Nice depth of flavor and vibrancy.
Deep amber color. Aromas of apricot butter on raisin toast follow through on round, crisp entry to a dryish
medium-to-full body with excellent balance and vibrancy. Finishes with a long nutty praline and earthy
citrusy hop fade. An excellent refreshing beer with nice complexity.
Deep golden color. Honeyed baguette and apricot skin aromas follow through on a round, supple entry to a
dryish medium body with great depth and balance. Finishes in a crisp, citrus on toast fade with earthy hops
lingering. Delicious and very Czech-like with a fruity twist.
Brilliant golden yellow color. Sweet honeyed floral tea, dried fruit, and clay-like hop aromas. A round frothy
entry leads to a frothy, fruity medium body of dried peaches, honeyed nut toast, and delicate sweet spice.
Finishes with a sweet citrus and earthy hop fade. A very fruity and fresh, crowd-pleasing style.
Golden brownish color, scents of maltiness, with a subtle banana and citrus background.
Taste shows a toasted malt, light hop bitterness, with slightly sweet aftertaste.
Deep reddish amber color. Dense aromas of fruity caramel, spicy honey, and golden raisin bread.
A rich, powerful, yet effortless entry leads to a satiny medium-full body of enveloping layers of caramel,
toasted grains and breads, marmalade, and delicate spices. Finishes with an extremely long, raw honey,
dried apricot, and mild earthy hop flourish. Remarkably flavorful and insanely drinkable.
Dark chestnut brown color. Aromas of toasted pumpernickel and dried ham follow through on a supple,
smooth entry to a creamy carbonated dry-yet-fruity medium-to-full body with dark roasted nuts and cocoa
notes. Finishes with a long, sweet and savory mocha-like fade with mild earthy hops in support.
Deep mahogany brown with a ruby cast. Vibrant aromas of baker’s chocolate, fruit nut caramel fudge, light
molasses and cigar box spice jump from the glass and follow through to a rich, velvety full body with a
lingering nutty, spice, and earth fade. Wonderfully rich and contemplative. Truly world-class.
Dark brown color. Nutty, dark chocolate covered cherry aromas follow through to a frothy, dryish medium-full
body of tangy tangerine, and dried peach, honey, and brown sugar flavors. Finishes with a tangy chocolate,
orange peel, and vibrant spicy and earthy hop fade. Nice expression of hops through the sweet malt.
Brilliant deep copper red color with a foamy head. Raisin puree, chocolate croissant, and orange
soufflé aromas follow through on a rich, chewy entry to a broad, dry-yet-fruity full body with brown sugar,
baked apple, and toffee notes. Finishes with a long, butter molasses and warming pepper fade
with hints of sautéed parsnip and fennel.

Very light and fluffy head, like a weizen. A hazy straw yellow beer. Lightly hop scented, flowery
and a hint of citrus with good malt in the background. Taste is very light and crisp, the hops come
through in the middle and are light and dry. Citrus and floral hints and a bready flavor remains at the
start and moves quickly to the lightly bitter hops. This beer has a great taste profile.
Dark gold with an amber hue when poured. Nice sweet citric malt aroma with orange overtone,
balanced by a light pine hop note. Juicy citric malt meets a dry, herbal hopiness when first tasted.
Notes of orange, melon, green tea and forest leaf come through on the palate. Lightly dry, tangy finish.
Full enough in body to make for a well-rounded brew, a first class example of Cascade hops.
Pure pale amber color. Aromas of candied grapefruits and apricots with a hint of citrus shaving cream follow
through on a round, plush entry to a dryish medium-to-full body with bread pudding and toasted nut notes.
Finishes with a long, crisp, and refreshing honeyed citrus and pine accented fade. A deliciously flavorful and
balanced pale ale.
Bright copper color. Gentle aromas of toast, orange soufflé, and earthy hops follows through on a round,
supple entry to a dryish medium-to-full body with hints of praline, cocoa, and pepper. Finishes in a long,
refreshing and balanced fade with great astringency. A spot on domestic version of ale.
Brilliant amber color with a lacy head. Brown butter roasted nut and circus peanut aromas follow through
on a round, soft entry to a dry-yet-fruity medium body with tangy orange cream and mossy tree bark notes.
Finishes with a tart, astringent grapefruit rind and honeyed orange marmalade fade. A deliciously fresh and
vibrant amber ale with rounded, pure flavors and a mellow texture.
Deep amber color. Vibrant grapefruit and pine-like hop aromas scream west coast IPA. A round supple entry
leads to a tangy medium-full body of candied grapefruit peels, caramel, and smoky sap flavors. Finishes with
a long long clean and refreshing smoky-piney hop fade. Very well put together with extremely vibrant, but not
over-the-top American hops.

creamy entry to a rich, dryish medium-to-full body with great vibrancy and balance. Finishes with a long,
refreshing burnt orange peel, custard, and toast fade. A rich, flavorful IPA in the English vein.

toasted grain flavors. Finishes with a long, crisp interplay of roasted nuts and sweet citrus.
Reddish amber. Flowery, citrusy nose. Full bodied, seet, slightly syrupy mouthfeel, and a late bitterness
that just keeps growing. Despite it´s bizarre hop ratio it somehow manages to remain somewhat balanced.
As usual a very interesting brew from Dogfish Head.

Orange/straw color; traditionally hazy with a huge cloud deck of foam. Aroma; spicy distinctive Belgian ale
funkiness, Taste; fruity, peppery, spicy clove notes. Seems to evolve with each sip. A dry, tasty finish.
Very drinkable and refreshing overall. One of the premier examples of the Saison/Farmhouse style.
Brilliant old gold color with a light foamy head. Fresh cut green apple aroma follow through on a soft,silky
entry to a dryish medium body with perfumed honey and apple tart notes. Finishes with vibrantly refreshing,
lightly spicy apple and wheat grain dough fade. Great purity and balance.
Pours a hazy lemon color. Intense nose of floral and spice elements: wild flowers, grapeseed oil, lavender and
coriander. Flavors of citrus and honeydew are followed by notes of cardamom, lemon zest, lavender and lilac.
Integrated and balanced with hints of cinnamon and light nuttiness on the finish. A complex and delicious beer,
but the potent florals make it a love-it or hate-it style.
Slightly hazy golden amber color with a fine mousse. Aromas of toasted muffin, poached egg, sautéed
spinach and peach jam are reminiscent of Eggs Florentine and follow through on a round, foamy entry to a
dryish medium-full body with tangy spiced orange, honeyed apple and pear skin, and creme brulee crust notes.
Finishes with wave of alcohol, baguette, and earthy hop flavors. A big, delicious food centric beer.
A Belgian-style Golden Ale with a Southeast Asian twist. Instead of using candy sugar (typical for such a beer),
rice is used in the mash to lighten the body and increase the gravity, and spice with Thai Basil.
The result is an aromatic, digestible and complex beer.
Deep amber color. Pine tree, hops and grapefruit peel aromas follow through on a bright, lively entry to a
fruity-yet-dry medium-to-full body with cocoa dusted citrus and toasty fruit cake flavors. Finishes with a
refreshing tart kumquat custard and juniper fade. A rich and delicious, zesty amber ale to serve with teriyaki.
Hazel brown in color, semi-transparent. Sudsy tan head that shrinks quickly. Little lacing.
Sweet malt, slightly nutty scent as well. Dominated by malt, a slight touch of hops, and some caramel.
Taste is clean and crisp. Sweet malt flavor dominates and is nicely done. Nutty, slight buttery taste,
some caramel. Clean finish with no aftertaste. Outstanding drinkability makes this special.
Deep chocolate brown color with nice clarity, not opaque like a stout. Dark fruit aromas with sweetness
along the lines of brown sugar, and a little alcohol. Spices are like bread pudding with rum-soaked raisins.
Strong dark malt flavor reminiscent of sweet brown bread. Some dark fruitiness and a vague spicy note.
Reddish black with rich beige head. Mild, sweet and velvetty with spun sugar and a pleasant mouthfeel.
Black Silk! Rich and creamy with anise aromas and hints of sweetness and mild bitterness.
The smell is sweet with toffee, slight hops , possibly tangerine and the smell of alcohol
all in the vicinity. It pours a transparent orange copper with a creamy head which retains quite well.
The taste is again of butterscotch hints with the alcohol lingering in the discreet background, medium bodied,
extremely smooth and surprisingly crisp. As it warms a slight fruitness and an enhanced bitterness
become more apparent. Overall, the excellence of this beer can be credited to the combination of rich
malt character and just the right amount of bittering hops.

Pours a nice dark brown with an off white head maybe a finger high, good lacing. Scents, explode
into the nose, of chocolate, banana, raisin, cloves and malt. Some cinnamon on top of the clove.
Taste is slightly sweet, with a nice malty base and notes of cloves and raisins throughout, no real hop flavor.
The mouthfeel is very lightly spritzy with an overall clean, creamy body. Incredibly drinkable, well balanced
in the body, not overpowering in the flavor, just delicious beer. You would never know this is an 8% beer.
Deep russet brown color with a manilla head. Aromas of buttery treacle, grilled lime, and densely compacted
spices and herbs follow through on a round, supple entry to a dryish medium-full body with molasses,
poached pear and praline notes. Finishes with a long, spiced apple, mineral, and delicate herbal hops fade.
An impressive beer that demands grilled meats and roasted root vegetables.
Saison Rue is an unfiltered, bottle conditioned, Belgian/French-style farmhouse ale. A beer of subtlety
and complexity, with malted rye, spicy, fruity yeast notes, biscuit-like malt backbone, butterscotch
and a slight citrus hop character. This beer is so well balanced, it takes the saison style into a richer,
more complex direction. It definitely shows the difference between a white bread (ordinary saisons, if you will)
and a rye bread presentation.
Rich, expressive aroma of raisins, dates, cherries, roasted nuts, vanilla sweetness, caramel and bourbon
soaked fruits. Toasted malts ,toffee and chocolates... a toblerone bar. Taste is a sweet fusion of deep,
dark caramel and vanilla beans with burnt, cauterized sugars and a good pinch of Dutch cocoa. The brew
warms the palate near instantaneously and this easily makes way for the crashing waves of oaky, bourbonesque
flavors to roll on in. A pronounced fruitiness -- plenty of juicy figs, raisins, plums, and sweet cherries.
Perhaps there’s maybe even a small hint of smokiness in there as well.
Dark brown color. Rich toasted malt aromas with lightly floral hops. Crisp and refreshing and medium-bodied
with deep flavors of toffee and chocolate-covered citrus peel. Finishes with wonderfully earthy bittering hops.
Hard to believe that this is a barley wine, seems too effortless.
Seasonal Beers

Brewed with 17 lbs. of yams per barrel (in other words, a lot of yams!), this autumn seasonal
is a different take on the “pumpkin” beer style. Brewed with cinnamon, nutmeg, allspice, vanilla,
molasses, and maple syrup, and fermented with our traditional Belgian yeast strain, this bold and
spicy beer is perfect on a cold autumn evening.

An unfiltered, bottle conditioned Belgian-style black wheat beer, or “black wit” The smell is
complex and deep. Notes of oatmeal, dates, lightly roasted malts, and candied sugars. Taste is of
roasted malts and oatmeal flavors up front giving way to light undertones of orange zest, rich
caramelized maltiness. molasses, brown sugar, plums and dates. Chamomile is added for its floral
aroma, while the coriander and citrus peel give the characteristics of a traditional witbier.

Robust burnt roast color, rich creamy head but lightly carbonated. A nice smell of dark
roasted malt contains some nuances of coffee and cream. Taste is creamy, roasty, subtle,
and refreshing, with all the flavors in the nose coming to visit the tongue. Mouthfeel and
drinkabiliy are exceptional and extraordinary.
Deep copper brown color. Aromas of milk chocolate covered hazelnuts follow through on a
supple entry to a dry-yet-fruity medium body with lively carbonation and a honeyed
pumpernickel toast notes. Finishes with a crisp, white grapefruity-like hops and a lingering
subtle hazelnut mocha latte note. Very tasty and refreshing.
Brown black color. Rich warm chocolate pudding aromas follow through on a supple, frothy
entry to a dry-yet-fruity medium-to-full body with some hops, roasted nuts and tart verging
on sharp dried citrus notes. Finishes with a long, tangy astringent bitter chocolate fade.

a mossy clay edge and follow through on a rich, chewy entry to a dry-yet-fruity full body with great
smoothness, depth and balanced. Finishes with a long, charred nut, bitter chocolate, and mossy river
stone fade with great astringency.

The aroma is very malty with fermented fruit (prune, plum, apple, fig), hint of fermented whole wheat bread
and grian, leather, and iron. The flavor is malty, but not distinctly malt-flavored... it’s more like liquid sugar than
grain. It’s dark, but it only hints at caramel. And it’s fruity, but delicately so. There’s a lot of apple in the mouth,
but most of its raisin and plum notes appear in the lingering finish, Mildly bitter, almost to the point of
being sweet but never quite getting there, it’s very easy to drink. It’s rich in the mouth and velvety soft.

vinegar aromas. A racey, zesty entry leads to a sweet and bracingly tart medium-to full-bodied palate with
caramel apples, cider vinegar, vanilla, and brown spices. Finishes with a caramel and sour apple skin fade.
A challenging but very rewarding beer that is a great example of a naturally soured Flemish red ale.
Deep amber-brownish color, slightly cloudy. Flavors of spice; cinnamon, clove, with some nutmeg, toasted
breadiness, dark fruit (plum like), with nice mild hops at the end. Medium bodied, almost chewy mouthfeel,
with carbonation that seems alive. Finishes off extremely smooth and clean.
Delicate spice, pepper aromas and notes of clean malt sweetness.Appearance is cloudy (from escaped yeast)
and pale. A grand creamy, chunk head adorns the top and sticks with great stay. The color and head are
perfection incarnate. Smooth and extremely creamy on the palate. A lively carbonation creates a light
mouthfeel and crispness. Upfront flavors are bitter and sweet, with a lean on the sweet; distinct fruity
malt esters, bold spiciness and rind-like twang that mellows and balances. Finishes slightly grain/dry
with some residual spice and dextrin notes. Deceivingly seductive and powerful.
Pours a dark hazy brown with a thin, sticky head. The smell is amazing. Spicy pepper, sweet prune, medicinal
herbal tea with an almost menthol quality. Earthy, leathery with a ton of different flavors; Sweet and tart
cherries, black pepper, spicy, earthy, oak notes. Green tea with lemon grass. There is some understated hop
bitterness. Lots going on. It’s 10.5 abv, but the intensity of the flavors merge with the heat beautifully.

medium-to full bodied palate with dark caramel, raisin, and dark chocolate flavors. Finishes with a long
fade of chocolate citrus peels. Very deep and flavorful that keeps evolving.

This is an incredibly smooth, clean, balanced, and drinkable abbey beer. A truly great beer!
