at Kentland farm

Abstract
Student farms and gardens are part of a movement concerning local food systems and direct
connections between producers and consumers. Although student farms began decades ago,
recently their numbers and impacts have increased. Campuses have integrated student farm and
garden projects, offering authentic experiential learning opportunities for students, as successful
measures of sustainability. This study explores student perceptions of the campus food systems
related to the Virginia Tech (VT) Dining Garden and the Farms & Fields project venue in a main
campus dining hall. A twenty question survey was created to assess student-awareness and
interest in the VT Dining Garden using mixed quantitative and qualitative methods and analysis.
The survey was conducted in two dining halls, over two time periods, lunch and dinner, to ensure
a broad range of consumers. Surveys (n=600) were distributed with a total response rate of
50.3%. Results overall showed 55% consumer awareness of the project. Close to this same
response level, 51% reported they were more likely to utilize the Farms & Fields campus dining
option knowing its connection to the VT Dining Garden. Relatively little importance of organic
or local procurement versus nutritional value, portion size and variety of choice was indicated
from the survey response. Student motivations for volunteering in the garden were tracked
identifying opportunity to work outdoors, gain horticultural skills and participate in local food
systems as highly rated factors. Qualitative data showed positive responses toward the
community aspect of the project and perceptions of higher quality and healthier options
available. Based on these results, continued outreach for student engagement in the project could
focus on community and university partnership development at the VT Dining Garden.

Introduction
In the past fifteen years, local food in the U.S. has come to the forefront of discussion in
popular culture through significant journalism and media play, an increased presence and
demand for locally sourced ingredients in restaurants nationwide, and recognition of the niche by
large national grocery suppliers such as Wal-Mart. In the Congressional Research Service
bulletin, The Role of Local Food Systems in U.S. Farm Policy, locally produced foods were
reported to comprise a small, but growing, part of U.S. agricultural sales. The U.S. Department
of Agriculture (USDA) estimated that farm-level value of local food sales totaled about $4.8
billion in 2008, about 1.6% of the U.S. market for agricultural products. These statistics suggest
that local food markets account for a small, but growing, share of U.S. agricultural production.
An estimated total of 107,000 farms were engaged in local food systems, about 5% of all U.S.
farms (Johnson, Aussenburg & Cowan, 2012).
Increased attention to local foods as a nation-wide movement has engaged the populous
to consider where food is grown and how food-buying decisions can support local farmers and
businesses. There is no consensus on a definition of “local” or “local food systems” in terms of
the geographic distance between production and consumption, but defining “local” based on
marketing arrangements, such as farmers selling directly to consumers at regional farmers’
markets or to schools, is well recognized (Martinez, et al., 2010). Many consumers and
communities are recognizing that local food is favorable in tangible ways, such as improved taste
and quality, but also indirectly in support of the producers and businesses within a regional

economy. Table 1 summarizes the range of characteristics identified by consumers that are
attributed to “local food”. Advocates also highlight the benefits of local foods in reducing
environmental impacts such as the carbon footprint of the product as it does not travel the
approximately 1500 miles a typical U.S. food is estimated to move before consumption (Pirog,
Van Pett, Enshayan & Cook, 2001).

Greater general awareness of local food production has spurred further discussion of its
importance in the context of economic development, ecological stewardship and public policy
regarding health, nutrition and food security. As local foods are inherently place-based, each
producer or operation has localized production variables which can be difficult to generalize or
measure comparatively as with traditional market factored goods. In terms of scale of
production, comparative advantage and competitive efficiencies, buying local is generally not the
logical, least expensive choice. However, savvy producers have capitalized on the emerging
trends and genuine interest of food origins to add value to their products which is not accounted

for when left to a global distribution based market. Embracing the factor of closeness of a
product emphasizes the relationship between the consumer and the source of their food.
Knowing the source becomes important as ecological and social impacts are also factored
into the consumer choice. Without distinction, there may be little incentive other than a price tag
for a buyer to purchase food coming from a neighbor’s pick-up than that coming off of a longhaul freight truck. Tying a product back to the locality has defined and created the scope of
examination itself – the community food system.
The concept of community food systems is sometimes used interchangeably with
"local" or "regional" food systems, but by including the word "community" there
is an emphasis on strengthening existing (or developing new) relationships
between all components of the food system. This reflects a prescriptive approach
to building a food system, one that holds sustainability – economic,
environmental and social – as a long-term goal toward which a community strives
(Wilkins & Eames-Shavely, n.d.).
Tapping into consumer demand and building awareness of a local food alternative has been a key
driver in promoting growth in local and regional food production nationwide. Initiatives to offer
local foods on college and university campuses are spreading nationwide (Perez & Allen, 2007).
These “farm-to-college” programs aim to leverage institutional purchasing power to support
local growers and principles of sustainable food systems, while providing fresh and healthy food
to the campus community. There is a growing body of research and scholarship in community
based food systems utilizing interdisciplinary approaches and strategies to investigate and assess
the multi-faceted impacts of local food. The primary purpose of this study was to survey student
perceptions about the campus food system. A literature review searching the key terms “student
farms,” “sustainable agriculture,” and “campus food systems” was conducted.

Review of Literature
Food Systems Models
Models of food systems show relationships and connections between different aspects of
the production and consumption processes and
players. They serve as conceptual tools for
understanding the dynamics and impacts
between agricultural, industrial, social,
ecological, economic and health factors
involved. Many existing models key in on one
segment or perspective of the system, but one
developed by researchers at Cornell’s Division
of Nutritional Sciences presents an integrated
approach by applying systems theory. As
defined by the authors:

Systems theory takes a holistic perspective in examining system boundaries,
delineating subsystems and their relationships, emphasizing the process of
homeostasis and considering relationships between systems. Systems are viewed
as sets of elements that function together as collective units. Boundaries exist
between a system and its environment, and may be more or less open or closed
because of varying permeabilities. Whole systems have properties greater than the
sum of their component parts (Sobel, Kettel Khan, & Bisogni, 1998).
Figure 1 depicts this integrated model which considers not only the chains and cycles of the
system but also the context and interactions involved. This integrated conceptual model presents
food and nutrition activities as part of a larger context and identifies linkages among the bio7
physical, or environmental, and socio-economic, or commercial disciplines that connect back
into the food system.
Student Farms
Student farms and gardens are a growing part of the community food system movement
emphasizing direct connections between consumers and their food sources and utilizing campus
resources to procure and produce local foods. Although student farms began decades ago, even
as early as the late 1800s on small campuses such as Berea College in Kentucky and Warren
Wilson College in North Carolina, recently their numbers and impacts have increased. The
exemplary student farm model established at the University of Santa Cruz in 1967 has served as
a driver in the student farm movement for contemporary programs and those following in
succession up to the present day (Sayre & Clark, 2011). In the U.S., campuses have integrated
student farm and garden projects bridging coursework and curriculum as well as offering
authentic experiential learning opportunities such as intern and apprenticeships, as successful
measures of sustainability.
In 2011, Fields of Learning, a seminal work edited by Laura Sayre & Sean Clark was
published on the subject of student farms. This compilation presents a holistic view of the scope
and range of garden and farm projects on college and university campuses in North America.
The book provides an overview of the progression and growth of student farms and identifies
over 100 projects with many of those recently established within the last two decades. A
chronology of case studies from fifteen campuses ranging from private liberal arts colleges to
land grant research universities to community and technical colleges written by faculty, staff and
students involved in each project details the commonalities and complexities across student farm
projects. Each of these chapters illustrates a model of a food system with characteristics unique

to each place setting, stage of development and contextual background. However, within each
model there are inherent characteristics that are relevant to student farms across the board. All of
the student farms profiled emphasize:



experiential education – outdoor classroom service learning - curriculum development
ecological food production – sustainability environmentally friendly practices
local food procurement – connecting consumer with their resources – human and natural
Keeping a multi-faceted perspective of the purpose and goals of a student farm reinforces the
systems view of these programs and projects.
Another significant article and study conducted by researchers at Ohio State University
brings the history and current status of student farms in the U.S. to light. An online survey
targeting student farm managers gauging perceptions of their operations and participants yielded
responses from 50 programs. The study identified a total of 80 student farms and gardens
located at colleges and universities, including land-grants, liberal arts colleges, community
colleges and technical colleges. Geographically, farms were located primarily in the eastern
United States and on the west coast (Leis, Whittington, Bennett & Kleinhenz, 2011). These
programs represent the wide range of learning opportunities through which students can gain
experience to supplement coursework, major programs and certificate programs, and provide
opportunities for internships and volunteering.
Community Capitals Framework
An important tool identified through background research for this study is the
Community Capitals Framework which was developed by researchers at the North Central
Regional Center for Rural Development as an approach to analyze how communities work.
Through examination of entrepreneurial communities, they found those that were most

successful in supporting healthy sustainable community and economic development paid
attention to seven types of capital: 1) natural; 2) cultural; 3) human; 4) social; 5) political; 6)
financial; and 7) built (Emery, Fey & Flora, 2006). Their methodology first identifies strengths
or assets as capitals of a community and the role each plays in development. Then focus shifts to
the interaction among these seven capitals as well as how investments in one capital can build
assets in others. In developing the Virginia Tech dining garden project and this study, this
framework provided structure to chart the original and subsequent important factors and agents
involved in developing the project. Table 2 illustrates the Community Capitals Framework and
how it was utilized to describe the VT Campus Food System.

As a subject, food systems and student farms are basic, fundamental and straightforward
in terms of purpose, objectives and process to produce and nourish consumers. However, as this
examination demonstrates, there are complexities and contextual dynamics which quickly
surface. As stated in a study conducted at the University of British Columbia on campus food
system:
Students have diverse areas of expertise, they have a shared interest in food and
the complexity of the food system. More generally, they share the realization that
there is no aspect of life that cannot be related to food: from human well-being
and health to biodiversity and ecosystem health (in which humans are intrinsically
a part), to the impacts of human activity in the natural world, to issues related to
hunger and malnutrition, and to the very nature of human communities. (Rojas,
Richer & Wagner, 2007)
Thus, the study put forward and conducted involving the VT dining garden served as a platform
to better view and understand these greater food system-student farm complexities. VT Dining
Services serves over 6 million meals annually to over 18,000 dining plan holders. (“About
Dining Services,” 2013). Conducting the survey in the dining venues reaches out to the captive
audience of consumers who populate the campus food system.
Key Questions
In consideration of the current literature and scope of the VT dining garden project, the
following questions formulated the basis for the research conducted in this study. These key
questions were developed with the understanding that consumers are participants in the campus
food system at many levels and with varying awareness and motivation in their connection to the

food source. The principle research question below is followed with a subset of questions to
provide an understanding of the VT food system as a whole.
Are consumers aware of the VT Dining Services garden and the connection to Farms & Fields?





What aspects of the food system motivate dining choice?
Are organic practices important?
How about student and/or staff involvement?
Does raised awareness influence choice?
How best can we build a volunteer base?
The survey tool that was subsequently designed displayed questions around consumer awareness,
interest and participation in the campus food system, both in the garden and dining halls, as well
as the theoretical classroom that links both.
Materials and Methods
This study explored student perceptions of the campus food systems related to the
Virginia Tech (VT) Dining Garden and the Farms & Fields (F&F) project venue in Owens Food
Court, a main campus dining hall. A twenty question survey (Appendix A) was developed using
the VT survey tool to assess student-awareness and interest in the VT Dining Garden and its
connection to F&F. The survey was designed to evaluate knowledge of staff and student
involvement in the project, motivations and perceptions for meal choices and interest in
participation at the garden. The tool included a mix of quantitative and qualitative questions.
The instrument was approved by the Institutional Review Board at VT. The survey was piloted
in two undergraduate Horticulture Department classes (HORT 2244: Plant Propagation; HORT
2134: Plants and Greenspaces in Urban Communities) to assess the quality of response and
provide feedback for adjustments.

The survey was conducted on April 23rd , 24th and 25th, 2012 in two dining halls, Owens
Food Court and D2 at Dietrick Hall, over two time periods, lunch and dinner, to ensure a broad
range of consumers. Diners were asked to voluntarily accept and fill out the survey at the
entrance to the dining hall and then return it into a collection box as they left. Distribution and
collection was active for three hours during lunch periods and two hours during dinners. A total
of 150 surveys were distributed during each dining period for an overall total of 600 surveys.
Summary
Demographics
Of the 600 surveys, 302 responses were collected with usable data for a total response
rate of 50.3%. Of the total number of respondents 56% were male and 44% female. The
breakdown by academic level was 32% freshman, 23% sophomore, 17% junior, 20% senior, 6%
graduate student, 1% staff and faculty. Breakdown by college was 35% Engineering, 16%
Science, 14% Agriculture and Life Science, 12% Liberal Arts & Human Science, 11% Business,
6% Architecture and Urban Studies, 5% Natural Resources and Environment and < 1%
Veterinary Medicine. Over half (57%) of respondents lived on campus and 43% off.
Respondents identified themselves from suburban (64%), rural (20%) and urban (16%)
backgrounds.
Survey Results
Results overall showed 55% consumer awareness of the VT Dining Service garden
project. Close to this same response level, 51% reported they are more likely to utilize Farms &
Fields knowing of its connection to the VT Dining Garden. Although 47% of respondents were

aware of student involvement in management and production at the garden, only 34% knew of
staff participation in the production. While a small percent (6%) of respondents had volunteered
or visited the garden, triple that response rate (19%) were interested in volunteering with the
project.
Qualitative results show relatively little importance of organic or local procurement vs.
nutritional value, portion size and variety of choice was indicated from the survey response.
Figure 2 shows the comparison of aspects important to diners regarding meal choices illustrating
the relative significance. Thirty-nine percent of respondents reported positive feedback based on
quality, personal and environmental health sustainability and community support. Student
motivations for volunteering in the garden were tracked. Highly rated factors included the
opportunity to work outdoors, gain horticultural skills and participate in local food systems.

Discussion
As identified in a study conducted at the University of Santa Cruz, providing food system
education in the dining halls, campus restaurants, and at coffee carts, or in other words, at the
direct point of purchase, is likely to be the most appreciated and most effective method for
sharing information with a broad audience (Perez & Allen, 2007). Continuing to provide
information of the connection of the VT Dining Services garden at the F&F venue can spread
information about the principles, practices and philosophy involved in creating and supporting a
local food system. Through the process of gathering information, collecting data and reflecting
on the results, an appreciation for the complexities of the project and understanding the
importance of dissemination of knowledge gained has arisen. Utilizing the concept of “Learning
with Life,” as presented in a University of British Columbia study, could help VT Dining
Services to reach its consumers in taking their personal experiences and interests related to food
then presenting the reality as it is to finally move toward a vision of a reality as it should be or an
ideal (Rojas, et al., 2007). Promoting background information on the VT Dining Services
garden, the results of this survey plus a vision for future development through interactive social
media, round table discussions, and experiential education opportunities can build on the positive
feedback and initial intentions of building a campus food system.
Conclusions
While survey response was 50.3%, respondents commented about the long length of the
questionnaire and thus many of the qualitative questions were left blank and this could have

impacted the number of overall surveys returned. Creating focus groups could be an alternative
approach to collecting additional data from participants. Qualitative data showed positive
responses toward the community aspect of the project and perceptions of higher quality and
healthier options available. Based on these results, continued outreach for student engagement in
the project could focus on community and relationship development aspects of the VT Dining
Garden. In identifying key assets and relationships plus integrating respondent feedback the
following schematic (Figure 3) was designed to map the key elements involved in the VT dining
services garden system.

Effective April 20, 2012, the Virginia Tech IRB Chair, Dr. David M. Moore, approved the amendment
request for the above-mentioned research protocol.
This approval provides permission to begin the human subject activities outlined in the IRB-approved
protocol and supporting documents.
Plans to deviate from the approved protocol and/or supporting documents must be submitted to the
IRB as an amendment request and approved by the IRB prior to the implementation of any changes,
regardless of how minor, except where necessary to eliminate apparent immediate hazards to the
subjects. Report promptly to the IRB any injuries or other unanticipated or adverse events involving
risks or harms to human research subjects or others.
All investigators (listed above) are required to comply with the researcher requirements outlined at
