Catch the cocktail fever this winter
Forget the winter warmers your granddad used to make to banish a head cold - hot cocktails
are what the discerning drinker should be seeking out this season, according to London’s top
mixologists.
Thanks to its versatility and of course taste, the perfect ingredient for a winter warmer is

Wax Jambu – which has recently opened the UK’s first Rum Cove bar serving exclusively
Authentic Caribbean Rum-based drinks – has developed a new hot rum toddy recipe, which
he’s calling Gold Fever.
Jimmy explains: “The hot rum toddy is a classic serve that I’m seeking to rescue from its
connotations as a medicinal drink, only to be enjoyed when your senses are at their lowest
ebb. By using premium aged rums from the Caribbean and enticing mixers, we have been
able to modernise a classic drink that can excite the palate and bring a drop of Caribbean
sunshine into any winter’s day. Hot is the new cold!”
The Gold Fever Toddy blends the sweetness of the world’s sunniest spirit with the kick of
ginger, provided by Fever-Tree Ginger Ale or Ginger Beer according to preference, and will
be available at Wax Jambu’s Rum Cove throughout the winter. However, Jimi is keen to
share the love with those who can’t make it to his bar between now and Christmas by getting
people to try making their own Gold Fevers at home:
Gold Fever Toddy
You will need:

A saucepan

200ml of Authentic Caribbean Rum

400ml of Fever Tree ginger ale or ginger beer

1 lime

1 orange

1 lemon

Cinnamon sticks

Nutmeg

Cloves

A bar or tea strainer
Method:
Add the following ingredients to a cold pan; 200ml of Authentic Caribbean Rum, the zest of
half a Lime, the peel of 1 orange, the juice of half a lemon.
Add 300ml of Fever-Tree Ginger Ale or Ginger Beer to the pan and put on a low heat, at no
point should the contents come to the boil.
Stir in two snapped cinnamon sticks, freshly ground nutmeg & 3 cloves.
Depending on your palate, you can add more citrus or spice to suit.
Keep stirring and tasting until you’re happy with your Toddy, then fine strain into your serving
bowl or soup kettle to keep warm.
Serve in a small glass mug with a cinnamon stick and slice of lemon or lemon twist as
garnish.
