Outcomes and evidence requirements Outcome 1 Demonstrate knowledge of the structure of the poultry meat industry. Evidence requirements 1.1 The structure of the poultry meat industry is described in terms of industry sectors and their relationships. Range 1.2 breeding, hatching, growing, feed milling, meat processing, distribution. Poultry meat products are described in terms of their intended consumer and use. Range raw and ready-to-eat products for human consumption, products for petfood, products destined for rendering. Outcome 2 Demonstrate knowledge of poultry meat production systems. Evidence requirements 2.1 The implications for poultry meat production systems are described in terms of their degree of intensification. This unit standard is free range, barn. A WFHS is described in expiring terms of its purpose and associated control measures. Range 2.2 Range 2.3 veterinary medicines, feed and environmental contaminants, health checks of birds, other agricultural compounds. The purpose of supplier statements, or supplier guarantee programmes, for poultry supplied for primary processing is described. Outcome 3 Demonstrate knowledge of commercial slaughter and dressing systems for poultry meat. Evidence requirements 3.1 Poultry meat processing systems are described in terms of processing steps and processing equipment commonly used at each step. Outcome 4 Demonstrate knowledge of the significance of zoonotic organisms relevant to poultry, their impact on human health and their relevance to pre-slaughter and post-mortem examination of poultry. Range Salmonella sp, Campylobacter sp. Evidence requirements 4.1 Zoonotic organisms are identified and described in terms of their significance to human health and how an individual operator would know of the status of their live birds and final product in terms of these organisms. 4.2 Zoonotic organisms are identified and described in terms of how poultry is initially contaminated and the control measures that can be applied at production, live bird transport and primary processing.
