Thai Style Pan Grilled Salmon over Salad Serves 4 Whenever I think of Thailand I can’t help but be reminded that its climate makes it one of the hottest cities in the world and of course it is the, “Land Of Smiles," because of its ever smiling, inviting, soft spoken, friendly, and hospitable inhabitants. But also boasts the most dudes that look like ladies…What? (Chuckle if you dare) Ingredients 4-Salmon Fillets skinned 6 to 8 ounces each 1 tablespoon plus 2 teaspoons of Asian Fish Sauce Salt and Pepper 1 tablespoon of Grape seed or some other neutral tasting oil…we want the Thai flavors to sing not Pavarotti 2 English (Seedless) Cucumbers cut into 2 inch stick about ¼ widths…you deserve the fancy for this one 1 small red onion, halved and finely sliced 2 Scallions thinly sliced, both white and green parts 1 pint Grape tomatoes halved 20 fresh Mint leaves torn…call me a day in advance and I will give you some from my yard…now where’s your excuse. 3 tablespoons of fresh chopped Cilantro ⅔ cup of cup of Thai Sweet Chili Sauce…if you don’t have this get it, it even makes Jackasses taste better… ½ teaspoon of finely grated lime zest 4 tablespoons of Lime Juice How it’s done Preheat your grill pan or gas grill to high heat. Rub the Salmon fillets with the 1 tablespoon of Fish Sauce and sprinkle both sides with salt and pepper and cover with plastic wrap; let marinate on the counter for 15 to 20 minutes. Meanwhile, combine the cucumber, red onion, scallions, tomatoes, mint and cilantro in a large salad bowl and toss and set aside. Combine the Chili Sauce, 2 teaspoons of fish sauce, lime zest and lime juice in a small bowl and whisk to blend well and set aside Remove the salmon fillets from the marinade and brush with the oil. Grill the fillets flesh side down first for 3 minutes, flip and grill for another 5 to 6 minutes or until just opaque with fork tested. To serve divide the salad among four plates and top each with a Salmon fillet and drizzle over the dressing.
