Explanatory notes 1 Definitions Organisational requirements refer to instructions to staff on policy and procedures which are documented in memo and/or manual format and are available in the workplace. These include but are not limited to site-specific and company standard operating procedures (SOPs), occupational health and safety, food safety and quality management requirements, specifications, production schedules and instructions, manufacturers’ advice, standard forms and reports. Cool storage refers to areas where products are held for processing and or curing as well as for distribution. A cool store operates refrigeration systems to keep a product’s quality but they do not operate at the low temperatures required to freeze stores. Outcome 2 Monitor product and ambient temperatures in a cool storage environment in a dairy processing operation. Evidence requirements 2.1 The correct temperatures for dairy product storage are identified according to organisational requirements. 2.2 Refrigeration equipment is monitored to ensure it is in operated according to organisational requirements. Outcome 3 Handle chilled product to ensure quality and food safety in a dairy processing operation. Evidence requirements This unit standard is Range handling requirements may include but are not limited to – product temperatures, product rotation and/or ageing, packing expiring arrangements, packaging, documentation. 3.1 Handling requirements for chilled product are identified according to organisational requirements. 3.2 Product acceptance, storage and release documents are completed according to organisational requirements. Outcome 4 Respond to emergencies in a dairy cool storage operation. Evidence requirements 4.1 Signs and symptoms of exposure for workers are identified. 4.2 Appropriate action is taken to minimise effects of exposure of self and others, according to organisational requirements.
