Definitions
Organisational requirements refer to instructions to staff on policy and procedures which
are documented in memo and/or manual format and are available in the workplace.
These include but are not limited to site-specific and company standard operating
procedures (SOPs), occupational health and safety, food safety and quality
management requirements, specifications, production schedules and instructions,
manufacturers’ advice, standard forms and reports.
Cool storage refers to areas where products are held for processing and or curing as well
as for distribution. A cool store operates refrigeration systems to keep a product’s
quality but they do not operate at the low temperatures required to freeze stores.
