ASPARAGUS AND WILD RICE SOUP
1 lb asparagus
3 TBL butter
1 large onion
4 cups chicken broth
1 cup wild rice
2 cups light cream
salt and pepper
Cut the asparagus into ½-inch pieces and coarsely chop the onion. Melt 2 TBL of
butter in a saucepan over medium heat and sauté the asparagus and onion until tender.
Add the chicken broth and wild rice and bring to a boil. Reduce heat, over, and simmer
until the rice is tender and the soup is thick. Sir in the cream and cook until heated.
Season with salt and pepper. Serves 6-8.
