Quite often new foods are modifications of existing products. There are many ways that a food product can be modified, these include: adding ingredients, e.g. changing the flavour of scones by adding different ingredients; adding or changing toppings, e.g. a fruit dish may be covered with crumble, sponge, pastry, flapjack – all produce different products; adding or changing casings, e.g. a meat pasty may be made from different types of pastry, flavoured pastry, or bread dough; changing the way it is prepared, e.g. you can modify the texture by the way you prepare vegetables (grate, finely chop, dice, slice); changing some basic ingredients, e.g. change the type of meat cut used; changing the quantities of some ingredients, e.g. reduce the fat content by lowering the total used, reduce sugar content (if you alter the ratio of some ingredients this may affect the outcome); adapting the recipe to meet a particular dietary need, e.g. a gluten free product, nut-free product; adapting a recipe to suit a particular audience, e.g. meals for toddlers. Budgeting – How to cost a recipe The Make it with Mince challenge requires you to plan and make your dish within a budget of £10. This means that you will need to know about food prices and be able to work out how much you have spent on your dish. If you are not sure of the cost of the ingredients for your dish you can investigate using the internet and online supermarket shopping sites to find out. Costing is easy to calculate using a computer spreadsheet. You can set up a spreadsheet with formulas to automatically calculate the cost. Task 1 - Calculate I am going to make chilli nachos. I need the following ingredients: 450g lean beef mince 1 x 410g can red kidney beans 1 x 500g jar chilli con carne sauce 150g tortilla chips 40g reduced fat Cheddar cheese To work out the cost of each ingredient used, divide its total cost by its weight . Then multiply this number the weight needed. Here is an example: Cheddar cheese costs £2.70 for 400g. To find out how much 1g costs: 270 ÷ 400 = 0.675 pence The recipe needs 40g: 0.675 x 40 = 27 pence Activity Work out the cost of the ingredients for the chilli nacho recipe. Method 1. Heat a large, shallow, non-stick frying pan until hot and cook the mince, onion, garlic and ginger for 5-7 minutes. 2. Reduce the heat and add the tomatoes, chillies, seasoning, garam masala and half the coriander. 3. Bring to the boil, reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. 4. Garnish with the remaining coriander and serve with plain basmati rice, poppadoms and a cucumber raita, or a selection of relishes. It is a good idea to try to get this balance right every day, but you do not need to do it at every meal. It might be easier to get the balance right over a longer period, such as a week. Task Look at the dishes listed below. They are called composite dishes because they are made up of more than one food group. 1. List the main ingredients and show which food groups are covered. Tasks Add extra pulses (peas, beans, lentils) – they are high in fibre and filling. 1. Select a beef or lamb mince recipe and give it a makeover. Use brown rice and pasta or wholegrain foods – they contain more fibre and keep you fuller longer. Keep the skin on potatoes. 2. Explain why you have made the changes. Choose lean meat or trim away any visible fat. Dry-fry beef or lamb mince. Use lower or reduced fat ingredients where you can. Recipe: Add more liquids to bulk the recipe up, e.g. canned tomatoes. Avoid adding too much butter or oil. Go for healthier cooking methods, such as stirfrying, microwaving and steaming. Changes 9
