Revised Date or /Fall 2011 ANSC 2602 Principles of Dairying Course Philosophy and Instructor Requirements Philosophy: This course is designed to introduce students to successful dairy production in Arkansas and the United States by understanding breeds, selection, feeds, care of dairy cattle, product testing, composition, quality, food value, and consumption of dairy products. Instructor Objectives: The instructor's teaching techniques should ensure that the students are able to: Be knowledgeable of the dairy industry. Recognize essentials of successful dairy farm operations. Identify the dairy breeds. Select sires for genetic mating improvements. Be knowledgeable of A. I. procedures in dairy animals.. Course Teaching Requirements: The following should be followed by all instructors teaching this course (online and in the traditional setting): 1. Two hours of lecture per week. 2. Lecture should include coverage of: a. b. c. d. e. f. g. h. i. 3. Overview of the dairy industry. Breeds of dairy cattle i. Ayshire ii. Brown Swiss iii. Guernsey iv. Holstein-Friesian v. Jersey Judging dairy cattle. Fitting and showing dairy cattle. Breeding dairy cattle. Dairy cattle management. Dairy cattle health, disease prevention, and parasite control. Dairy cattle building and equipment. Milk secretion and handling. Examinations, quizzes, and homework assignments (online and in the traditional classroom) should include exercises and objective questions that require students to demonstrate an understanding of dairy science theories/concepts and their application. Assessment Responsibilities: Instructors teaching this course are expected to participate in the assessment activities as required by the University. Generally this course is assessed by utilizing preselected assessment questions imbedded in the final exam.
