Microwave Potato Chips Ingredients: 3 Red potatoes 2 tsp. olive oil ½ tsp. salt Directions: 1. Slice potatoes into thin (1/8 in.) (Can use box grater) rounds. 2. Toss the slices in a medium bowl with oil and salt and coat evenly. 3. Coat a large microwave proof plate with cooking spray and arrange potato slices in a single layer on the plate. 4. Microwave on high for 2-3 minutes (until they start to brown), then turn the slices over and continue microwaving for 2-4 minutes more depending on the thickness of the potato chips. 5. Have another plate of chips ready to go so you can put them in the microwave when the others come out. 6. Repeat with remaining potato slices. 7. Let chips cool completely.
