Directions for conducting Spring 2015 taste tests
with students for
Truitt Family Foods Traditional Hummus and Dippers
Materials and Supplies
1. One sample per flavor per students
2. Supply both veggie stick (carrots, jicama, or celery) and
cracker (or chip) for dipping
3. Print out surveys. Two formats are provided below. (1) fullpage if testing all three flavors or (2) half sheets if testing
one flavor.
4. If possible, have water available to sip before starting and
between samples.
5. Enough pen or pencils per student to complete the survey or
students can complete it online
6. Napkins and supplies to clean up any potential spills
7. Way to wash hands and / or hand sanitizer prior to tasting
8. Latex-free gloves for serving up samples
9. Containers for putting samples in. Boats work great.
Process:
1. Please read script below and follow-up questions so you will know what to say and
what to look for during the testing.
2. Make accommodations for food allergies and hand sanitation. Read or provide
students with the ingredients list. Provide hand sanitizer or allow students to wash
hands prior to tasting.
3. If possible, divide students from seeing each other’s reactions. Use white binders to
create a space, or conduct the taste tests in isolated small groups.
4. Provides students with one sample, survey, pen, water and napkin. Note: students
are more likely to try something if served by a peer.
5. Conduct tasting and survey for the first flavor, then repeat for the next flavor
6. Clean up & answer the taste test administrator questions as soon as possible
7. Return all survey sheets to Michelle Ratcliffe 1375 Front Street NE, Salem, OR 97301.

Script to read aloud: Today we are going to taste test three new products for consideration
in the school meals program. You will get a dip, crackers and veggie sticks. You have an
opportunity to taste the dip and write down what you think about the food on this sheet of
paper. If you have any suggestions for what we should serve it with there is space on the
bottom of the paper. The whole process will take about 2 minutes per flavor, and we have 3
flavors to try. Please know your thoughts are very important. Also, you do not have to try it
if you do not want to, and all the information you provide will be kept anonymous and
confidential. That means no one will know who makes which comment. Any questions?

Taste Test Administrator Questions
Immediately after the taste test, please take 5 minutes and answer these questions:
(1) Was it easy for students to open?
(2) Did students choose the cracker or the veggie sticks more when dipping the first
time? Was it different the second time?
(3) Did students have consistent or different reactions to the hummus, ranch and / or
chili lime flavors? Was there one they seemed to like most or least?
(4) About how much of the samples did students eat? All of it, half of it, just a little, or
none? Did it differ by hummus, ranch or chili lime flavor?
