Children and Parents - Together we can cut the waste!
The Children at Knightswood Primary want to share ideas with you to help us stop the food waste in
Scotland.
This year we have worked together in our houses to try to cut the food waste in the dinner hall. We
managed to do this and between December and March we reduced waste from as much as 72kg per day
down to 4kg on our Clear Your Plate Day.
We hope you will think about using up any leftovers and also enjoy this healthy tasty meal.
Bubble and squeak
The perfect way to use up leftovers, and great at any time of the year. Serves 4
Ingredients
1 TBSP olive or sunflower oil, plus extra for frying,
1 leek, washed and sliced,
2 1b leftover cooked cabbage or Brussels sprouts.
Salt and black pepper.
Instructions
1. Heat the 1 TBSP of oil and gently cook the leek for 3-4 minutes until softened but not coloured.
2. Mix leeks, potatoes and cabbage/sprouts in a large bowl and add plenty of salt and pepper. (Some whole
grain mustard is a great addition too)
3. Share the mix into 8 small rounds, pressing firmly to ensure a good shape.
Heat some more oil in a pan. Fry in 2 batches, for approx 3 minutes on each side, until golden. Serve with
poached egg, some homemade baked beans, or some bacon.
*A small piece of savoy cabbage, a carrot and a piece of leek or onion can form the basis of a hearty soup
along with some beans, veg stock and a squirt of tomato puree.
*Almost anything can be used as a pizza topping or added to a frittata-small bits of various cheeses, most
vegetables, leftover sausages or ham, just use your imagination.
*if you have access to a microwave, NEVER throw out leftovers from an evening meal. Most meals-lasagne,
curry, soup, chilli, sausages and mash-will be perfectly fine if stored in a fridge for up to 3 days and will
taste fine when microwaved.
