LASAGNA
step-by-step instructions

STEP #1
Before you begin, sanitize work area
with bleach solution.

STEP #2
Determine the number of pans of
lasagna you will need to prepare.
1 pan = 24 servings
2 pans = 48 servings
3 pans = 72 servings…

Gather Equipment

Large mixing bowl or pan
2” full hotel pan(s) (12” x 20” x 2”)
Measuring cups
Rubber spatula
STEP #4
Gather Ingredients

Ground Beef
Marinara Sauce
Lasagna Noodles
Cottage Cheese
Shredded Mozzarella
STEP #5
In a large mixing bowl or hotel pan
combine the ground beef and
marinara sauce. For each pan of
lasagna combine 7.5 cups beef +
1 bag marinara.
STEP #6
Spray pan(s) with pan release.
STEP #7
For each pan, layer the
ingredients as follows:
1st Layer: 4 cups
sauce (beef and
marinara)
2nd Layer: 7 uncooked noodles
3rd Layer: 4 cups sauce
4th Layer: 3 cups cottage cheese
5th Layer: 2 cups
shredded mozzarella
6th Layer: 6 uncooked noodles
7th Layer: 4 cups sauce
8th Layer: 3 cups
shredded mozzarella
STEP #8
Spray aluminum foil with
pan release.
Tightly cover the pan(s)
with parchment paper
then with aluminum foil.
STEP #9
Bake the lasagna at 375 degrees F
for 40 minutes or until the lasagna reaches
165 degrees F.
Carefully remove the pan from the
oven and uncover. Continue baking for 5
minutes, uncovered, or until the surface of
the lasagna is golden brown.
Let the lasagna stand for 15
minutes at room temperature
before cutting.
Cut each pan 6 x 4 (24 servings)
Grade K-12 serving size: 1 slice

140 degrees or higher**
