VEN CONMIGO A LA REPUBLICA DOMINICANA The Indians who arrived brought with them a knowledge of ceramics, semi-sedentary agriculture based on maize and yucca, a religion based on zemí worship (ancestor spirit-guides and mythical gods represented on earth by artistic symbols and objects of the same name), and ceremonies that included community-wide dancing/singing festivals called areitos and soccer-like ball games called bateyes. Song of the Taínos The Taínos were not only in the Dominican republic, but in Puerto Rico, Cuba, Venezuela, and other caribbean islands. They taught the civilizations which they were at many new things. They helped advance the civilizations and make them grow. The first major battle over the Dominican Republic was the European-Indian battle at Santo Cerro. It was a massive battle that took place in 1495 after Bartolomé Colón had led Spanish troops against the Taínos of the Cibao for 10 long months. The first sign of the break of a European-Indian treaty was when there was a massacre in 1504 at Cacica Anacaona’s where Europeans killed hundreds of men, women, and children. As a result the first systematic exploitation and enslavement of both Indians and Africans in the New World under Spain’s encomienda and slave laws. This slavery and bad treatment led to a rebellion in 1519 that lasts until 1533. The rebellion led Colón to announce the New World’s slave-control ordinance on January 6, 1522. Ingredients: 2 unripe plantains 1/2 cup of oil 4 teaspoons of cold water 1/2 teaspoons of mashed garlic Salt Preparation: Peel the plantains and cut into 1 inch thick slices. In a deep frying pan heat the oil and fry the plantains till golden brown. Flatten the plantains using the bottom of a flat-bottomed glass bottle. Fry the plantains again for 30 seconds on each side. Mix the water, a pinch of salt and the mashed garlic. Stir and pour over the plantains. Serve immediately. Ingredients: 1/4 lb. of ground beef 2 cups of oil 2 leaves of basil chopped finely 1 tablespoon of tomato paste 1/4 cup of raisins 1 teaspoon of salt 1 small red onion 1 green pepper Black ground pepper. 1 lb. of cassava (yuca, yucca roots) 1 garlic clove (peeled) Preparation: Chop the onion into small cubes. Cut the pepper and get rid of the seeds. Chop the peppers into small cubes about the same size as the onions. Put the ground beef in a bowl, mix the pepper and the onion, add a pinch of oregano, a pinch of pepper and a teaspoon of salt. In a shallow pan heat a tablespoon of oil. Add the ground beef and stir so it cooks uniformly. Add two tablespoons of water and the tomato paste. Let simmer at medium heat. When the meat is ready let all the liquid evaporate, adjust salt to taste. Boil the cassava until it is tender adding the garlic and salt to taste to the water. Mash the cassava and let cool down to room temperature. Form into balls. On a lightly oiled surface flatten the balls with your hands until they form thin disks. Put a teaspoon of the chicken in the center, double over in a semi-circle and seal the border pressing it with a fork. Deep fry the pasties in very hot oil and put on a paper towel for a minute before serving. Time: 90 Mins Difficulty: Medium Serve: 4 people Before starting to cook: Heat oven to medium heat. Ingredients: 8 egg yolks 13 oz evaporated milk 13 oz sweetened condensed milk 1 teaspoon of vanilla 1/2 cup white sugar 1/2 cup water Preparation: Melt sugar in heavy saucepan over low heat. Add 1/2 water and stir constantly until a thick, dark caramel syrup forms. Pour into prepared baking pan and spread all over.Mix together egg yolks, sweetened condensed milk and evaporated milk. Stir in vanilla. Pour into baking pan, trying not to disturb the caramel layer. Bake in hot water bath in oven for one hour. Loosen edges of flan, place a serving plate on top of mold (one which will retain the syrup) and invert. Chill thoroughly before serving.
