While Sicily claims to have invented pizza, it was Naples
that modern pizza is thought to have begun.
In the 18th Century, Neopolitan royalty had a pizza oven
at a summer villa, and in 1889 the Queen of Italy,
Margherita of Savoy, summering in Naples, had the city’s
famous Pizzaiolo Raffaele Esposito make her pizzas.
His patriotic combination of red, white and green
(tomato, mozzarella and basil) became known as
“Margherita”.
