Passport 3 Christine Carpenter I decided to make Cuban recipes. My husband and my birthday are coming up so I thought something new to celebrate the day would be nice. I chose to make Cuban Chicken Stew with Alcaparrado. Alcaparrado, means dressed in capers. This meal took about an hour to prepare and then 30 minutes to cook and get it in the oven. See the photo. I have to say I was skeptical as the recipe called for mixing many ingredients together that I didn’t think would necessarily go well together. Spanish olives, raisins, red wine, orange juice, lime juice capers, diced tomatoes, red pepper, peas and chicken. Before putting it in the oven I thought it was very colorful and looked tasty as it was at that point. Once it had cooked for 20 minutes the aroma was very enticing and I wasn’t quite sure I would make it to dinner before tasting it. I did wait and the dish was delicious! It was super flavorful, and the ingredients ended up created a new taste I have never experienced. Everyone in the house gave this recipe a thumbs up. Tomorrow I will be making Pumpkin Flan another Cuban recipe. My husband is a big flan fan, so I hope he likes this rendition of it. Note: The Pumpkin Flan was a hit!
