Objectives:
• Identify the types food service operations
• Familiarize with the charcterisitcs of diffirent types of food service
operations.

Introduction
In this module you will be able to identify the different types of food service
operations where popular restaurants belong. You will also learn on the characteristics of
each food service operations.
Lesson 1
Types of Food Service Operations
1. Fast Food- a quick service restaurant within the industry itself. It is a specific
type of restaurant characterized by its fast-food cuisine and by minimal table
service such as Mc Donalds, Jollibee, Chowking and Mang Inasal.
2. Traditional- quick service and high traffic locations characterize traditional fast
food outlets. It offers a standard menu with limited and in expensive choices that
attempt to satisfy the broad audience.
3. Quick comfort Restaurant- in expensive, nutritious, home cooked family meals
in fast service fashion.
4. Double drive through- based on limited menu and service, reduced
development and operational costs, and cheaper products. This segment has no
indoor setting.
5. Cafeteria- a food service restaurant that is located in an institution such as large
office or school.
6. Buffet Restaurant- refers to eat all you can restaurant.
7. Themed restaurant- it is characterized by a special theme that incorporates the
design, menu and service of the restaurant.
8. Ethnic restaurant- reflects on a specific international cuisine. Many are owned
by families of a specific cultural heritage.
9. Specialty restaurant- menu revolves around a particular category of menu
items or specialty. It can be either dependent restaurant or chain.
10. Coffee shops- chain operated, franchised or independent establishment offering
variety of coffee beans, an extensive menu of hot and cold drinks and a limited
selection of pastries and sandwiches.
11. Ice cream Parlor- specialty outlets that offers varieties of ice creams.

12. Casual dining- a restaurant the serves a moderately priced foods in a casual
atmosphere. It typically provide the table service.
13. Formal dining- a dining restaurant that offers a high class service. It normally
offers a five course meal( appetizer, soup, salad, main dish, dessert, and
beverage,during a formal dining.
