1. Pick a new and emerging food and nutrition related product (or service!) and evaluate
their perceived or real benefits to CDN consumers.
a. Does it compromise overall health or nutritional status?
b. Do you think the claims made are valid? Why? What criteria would you use to
assess the validity of claims?
2. Why would people adopt this eating pattern, product or service?
3. Has this trend, product or service influenced government policy or any kind of
legislation? Should it?
4. Can you think of any other current trends in food or any concepts that should be trends in
your opinion?
5. Create a menu that utilizes your food trend (Appetizer, Main Course, Dessert)!
