Sustainable Agriculture and Ecosystems
Hawaii CC
• Extending Forest TEAM Program from job training to entrepreneurship
and business incubation.
UH Hilo
• Offering Sustainable Tourism course to show interconnection between
the environment, agriculture, and Hawaiian culture and to instill
stewardship.
Maui CC
• Developing internship program in agriculture and natural resources with
local industry; developed recycling project.
Leeward CC
• Established new course, Hawaiian Horticulture and Nutrition, as full lab
science, fulfilling AA degree requirements; collecting and maintaining
native plant garden for preservation and general use.
Windward CC
• Expanding bioresource development and management program.
Biotechnology and Bioproducts
Maui CC
• Adding capacity and developing new curriculum in biotechnology.
• Launched two successful high-end gourmet products, Raspberry Wine
Jelly and Roasted Pineapple Jam using surplus by-products, thereby
reducing agri-wastes and increasing profitability for local producers.
Windward CC
• Producing skilled workers in agriculture and plant biotechnology -biotech graduates are entering workforce or pursuing advanced degrees
in related academic fields.
Honolulu CC
• Conducting Marine Education Enhancement Project at HCC; developed
state-of-art facility to enhance Marine Science education.
UH Manoa
• Introducing students to biological engineering through hands-on
curriculum.
Nutrition and Culinary Arts
Maui CC
• Developed Food Technologist Club to meet diverse needs of local
community; Club launched sugar-free product line to provide healthy
menu options for Hawaiian population increasingly affected by diabetes
and heart disease.
• Working with other programs to establish food R&D as specialty
services career ladder.
Leeward CC
• Integrating training on plant production with nutrition so students
make informed, healthy choices.
Kapiolani CC
• Developing series of Culinary Tourism Programs that benefit local
farmers and growers including Farm-to-Table Hands-on Tour, Culinary
Tour of the Hawaiian Islands, and Hawaiian Regional Cuisine
Demo/Dinner.
Agribusiness and Entrepreneurship
Kauai CC
• Transforming on-campus Garden Program into learning laboratory
and demonstrating vertically-integrated agricultural production in
cooperation with island farmers, markets, and restaurants.
Kapiolani CC
• Developing Farm-to-Consumer Website that allows consumers direct
access to culinary related information about local agri-products.
UH Hilo
• Integrating post-secondary curriculum focused on the commerce and
technology of e-commerce.
Consortium-wide Student Recruitment
and Retention, and Curriculum Articulation
• Supporting K-12 education through Career Pathways Program,
teacher retraining, and sponsorship of field days.
• Developing core courses across multiple Consortium programs.
• Establishing Consortium-wide recruitment and internship effort.
