PORTFOLIO REQUIREMENTS
CAKE DECORATING II
A portfolio will be due on the last day of the semester when you take the written final
exam. It will count as 5% of your final grade. Please be advised of the following:




Your portfolio should be presented in a 3-ring binder or photo album in a format
appropriate to take to a job interview to demonstrate your skills.
The portfolio should contain all finished cakes and decorations you have made
throughout the semester.
Each cake picture should include:
o Techniques used (piping, appliques, hand painting, modeling, etc.)
o Outer cover medium (buttercream, fondant, marzipan, etc.)
o Décor/applique medium (chocolate, gumpaste, marzipan, fondant,
buttercream, etc.)
Any additional cakes you have made outside of class may be included, but are not
required.
