Elements and performance criteria Element 1 Prepare to produce stuffed poultry breasts. Performance criteria 1.1 Materials and equipment assembled are consistent with the product specifications and company operating procedures. 1.2 Materials, equipment and work area are prepared in accordance with the company safety policies and procedures. 1.3 Materials, equipment and work area are prepared in accordance with the company quality assurance policies and procedures. 1.4 Preparations ensure that the weight of stuffing produced for each poultry breast is consistent with the product specifications. Element 2 Produce a pocket in poultry breasts for stuffing. Performance criteria 2.1 The pocket is produced in accordance with the product specifications and company procedures. 2.2 The pocket is produced in accordance with the company safety policies and procedures. 2.3 The pocket is produced in accordance with the company quality assurance policies and procedures. 2.4 The pocket is produced in accordance with the company production throughput requirements. Performance criteria 3.1 The pocket is filled in accordance with the product specifications and company procedures. 3.2 The pocket is filled in accordance with the company safety policies and procedures. 3.3 The pocket is filled in accordance with the company quality assurance policies and procedures. 3.4 The pocket is filled in accordance with the company production throughput requirements. Element 4 Clean and flush the stuffing machine. Performance criteria 4.1 The stuffing machine is cleaned and flushed in accordance with the company operating procedures. 4.2 The stuffing machine is cleaned and flushed in accordance with the company safety policies and procedures. 4.3 The stuffing machine is cleaned and flushed in accordance with the company quality assurance policies and procedures. Please note Providers must be accredited by the Qualifications Authority, or an inter-institutional body with delegated authority for quality assurance, before they can report credits from assessment against unit standards or deliver courses of study leading to that assessment. Industry Training Organisations must be accredited by the Qualifications Authority before they can register credits from assessment against unit standards. Accredited providers and Industry Training Organisations assessing against unit standards must engage with the moderation system that applies to those standards.
