7795 version 3 Page 1 of 4 Mould and cook flaked cereal products using automated production equipment Level 3 Credits 9 Purpose This unit standard is for people who are currently working, or who intend to work, in jobs which involve the set-up and operation of automated moulding equipment for flaked cereal products. People credited with this unit standard are able to: use safe work practices and procedures while preparing, moulding, and cooking; prepare and mould; and cook moulded, flaked cereal products using automated production equipment. PPE refers to personal protective equipment and may include but is not limited to: protective clothing, gloves, safety glasses/headwear/footwear, hearing protection, safety devices. Elements and performance criteria Element 1 Use safe work practices and procedures while preparing, moulding, and cooking flaked cereal products using automated production equipment. Performance criteria 1.1 PPE is used in accordance with organisational procedures. 1.2 Work environment is clean and free from hazards in accordance with organisational procedures. Range 1.3 hazards to – personnel, product, plant; caused by – personnel, equipment, environment. Documentation is completed in accordance with organisational procedures. Element 2 Prepare and mould flaked cereal products using automated production equipment. Performance criteria 2.1 Equipment for moulding flaked cereal products is available, operational, and fit for purpose within agreed time-frame. 2.2 Product for moulding is available in sufficient quantity for scheduled and anticipated production within agreed time-frame. 2.3 Moulding equipment is correct speed and depth for product in accordance with organisational procedures. 2.4 Cereal is moulded to correct shape and size in accordance with organisational procedures. 2.5 Cereal is correct thickness and weight in accordance with organisational procedures. 2.6 Moulded cereal products are at correct compression and breaking strain, and retain correct moulded shape. Range variations include but are not limited to – moisture, ingredients, size, weight, shape, consistency, breaking strain, compression, thickness, colour. 2.8 Preparation and moulding of cereal products complies with organisational procedures, and legislation. 2.9 Documentation relating to moulding flaked cereal products is accurate and complete in accordance with organisational procedures. Element 3 Cook moulded flaked cereal products using automated production equipment. Performance criteria 3.1 Ovens are correct temperature for product in accordance with organisational procedures. 3.2 Oven conveyors are at correct speed according to product specifications. 3.3 Moulded flaked cereal products are cooked for agreed time. 3.4 Moulded flaked cereal products are fit for purpose and conform to product specifications. 3.5 Cooking of moulded flaked cereal products complies with organisational procedures, and legislation. 3.6 Variations in product and performance of automated ovens are identified, and corrective action is taken within a time-frame that optimises performance and minimises product waste. Range 3.7 variations – qualitative, quantitative, safety. Documentation related to cooking moulded flaked cereal products is accurate and complete in accordance with organisational procedures. Please note Providers must be accredited by NZQA, or an inter-institutional body with delegated authority for quality assurance, before they can report credits from assessment against unit standards or deliver courses of study leading to that assessment. Industry Training Organisations must be accredited by NZQA before they can register credits from assessment against unit standards.
