This unit standard is for experienced people who are employed
in the slaughter and dressing department in a meat processing
operation.
People credited with this unit standard are able to: prepare
internal by-products for inspection; dispatch recoverable
product for further processing; and prepare viscera equipment,
in a meat processing operation.

Evidence requirements
1.1
Inedible and edible offal are presented for inspection in accordance with
organisational requirements.
1.2
Knives and equipment hygiene requirements are met between carcasses in
accordance with organisational requirements.
Outcome 2
Dispatch recoverable product for further processing in a meat processing operation.
Evidence requirements
2.1
Saved product is placed in the chute or container for further processing in
accordance with organisational requirements.
2.2
Unrecoverable or condemned product is disposed of in accordance with
organisational requirements.
Outcome 3
Prepare viscera equipment in a meat processing operation.
Evidence requirements
3.1
Viscera equipment is washed and sterilised in accordance with organisational
requirements.
3.2
Viscera equipment is re-positioned in the designated waiting area for inspection
as required in accordance with organisational requirements.
