This unit standard is for people working as an experienced operator or technical specialist in a primary products food processing operation.
People credited with this unit standard are able to: coordinate the implementation of food safety procedures; analyse occurrences of non-compliance of food safety procedures; and develop continuous improvement processes to maintain food safety, in a primary products food processing operation.

1 Legislation relevant to this unit standard may include but is not limited to
– Animal
Products Act 1999, Food Act 1981, Health and Safety in Employment Act 1992, depending on the candidate’s work sector.
2 Definitions
Non-compliance – any event which occurs as part of the work process where a law, regulation, specification or work standard is not met.
Organisational requirements – instructions to staff on policies and procedures which are documented in memo, electronic or manual format and are available in the workplace.
Primary products food processing operation
– covers a meat processing, dairy processing, seafood or baking yeasts manufacturing operation.
3 Evidence for the practical components of this unit standard must be supplied from the workplace.

Coordinate the implementation of food safety procedures in relevant work area(s) in a primary products food processing operation.

Evidence requirements
1.1 Food safety requirements and procedures are communicated to others in the work area in accordance with organisational requirements.
1.2 Implementation of food safety procedures is analysed to ensure compliance with organisational requirements.

1.3 Mentoring and coaching is provided to support individuals and/or groups to implement the food safety procedures.
1.4 Food safety information is recorded in accordance with organisational requirements.
Outcome 2
Analyse occurrences of non-compliance of food safety procedures in relevant work area(s) in a primary products food processing operation.
Evidence requirements
2.1 Causes of non-compliance are identified and analysed in accordance with organisational requirements.
2.2 Options for dealing with the non-compliance issues are identified and communicated to relevant stakeholders in accordance with organisational requirements.
2.3 Control measures are agreed and implemented in accordance with organisational requirements.
Outcome 3
Develop continuous improvement processes to maintain food safety in relevant work area(s) in a primary products food processing operation.
Evidence requirements
3.1 Potential food safety issues are identified and recorded in accordance with organisational requirements.
3.2 The adequacy of existing control methods to ensure food safety is reviewed in accordance with organisational requirements.
3.3 Opportunities are identified to prevent, eliminate, or reduce food safety risks to an acceptable level in accordance with organisational requirements.
