2016 Summer Wild Mushroom ID Certification Course Sponsored by: Chanterelle, Hedgehog, Yellowfoot , & Chicken of the Woods Mushrooms In accordance with the Minnesota Food Code, this certification will be accepted by the state of Minnesota to fulfill requirements set forth by the Minnesota Food Code (Minnesota Rules, Chapter 4626) and Minnesota Administrative Rule 4626.0155 3-201.16. Mushroom Foragers wishing to sell their wild mushrooms to commercial establishments in Minnesota must have taken a course in “Mushroom Identification, Traceability and Safe Food Handling” and provide documentation (letter) of course completion from an academic institute to the Minnesota Department of Agriculture (MDA). The following mushrooms will be included for identification certification: Chanterelle Cantharellus phasmatis Cantharellus flavus Cantharellus spectaculus Hedgehog Hydnum repandum Yellowfoot Craterellus tubaeformis Chicken of the Woods Laetiporus sulphureus Add’l Topics Covered: When and where to find these mushrooms, how to positively identify them, how to confidently recognize toxic look-alikes and best transporting, cleaning, preparation and preservation.
