Claire S. Copperstone is the assistant co ordinator of the Post Graduate course in Nutrition and
Dietetics and is involved with the day to day activities of the course. She also services other health
care courses such as Nursing, and Environmental Health students, in Nutrition, and is currently
involved in upgrading the Nutrition courses to involve more practical aspects of Nutrition.
She is also currently reading for a doctorate degree in Nutrition in conjunction with the University of
Aberdeen on Maltese children and diet assessment. Her project involves the set up of a local
website that will allow schoolchildren to access and record their food intake and physical activity
levels.
She is also a member of the British Nutrition Society, a locally registered Nutritionist, and is the local
contact person of an Erasmus dietetics network, which brings together local and European Nutrition
and Dietetics students.
