In order to maintain eligibility for TEFAP, all recipient agencies must:
1. Display the “And Justice for All” poster in plain sight. If you need a poster,
please contact Zia: 631-582-3663 ext. 134.
2. Attend an annual Civil Rights training. Trainings are added to all regularly
scheduled workshops.
3. Food Pantries ONLY – must have clients sign the Universal
Entitlement form. This form is for your use only. Do not send it back to
LI Cares.
4. Maintain delivery records/universal entitlement forms for a minimum of 4
years.

FEATURED FOODBANK ITEM OF THE MONTH…KIWI FRUIT!
Did you know that two kiwi fruit have as much vitamin C as one Navel Orange? Not bad for these fuzzy
little brown things, huh? Next time you want to consume your daily dose of Vitamin C and build up your
immune system and skin collagen, try kiwifruit. These sweet-tangy fruits taste like a combination of melon
and strawberries and are best eaten when ripened. If you want more fiber you can eat the skin on the
outside and add 5 grams of fiber to the juicy 4 grams already inside the fruit. Of course, be sure to wash
the skin well to remove any dirt and or pesticides.
Kiwi Tangerine Salsa
This is a perfect dip to eat with whole grain tortilla chips, or enjoy it over fish, chicken or pork. The sweet
and spicy combination takes advantage of in-season tangerines and kiwis - making this the perfect lateWinter early-Spring snack! Total prep time: 20 minutes. Makes about 2½ cups.
The fresh stuff you need:
3-4 kiwis, peeled and diced
4 small or 2 medium tangerines, peeled and diced
1 cup peeled and diced jicama (hee-ka-ma)
½ cup diced red bell pepper
¼ cup chopped cilantro
2 tablespoons lime juice
1 tablespoon vegetable oil
1 small jalapeno pepper, seeds and ribs removed, diced
¼ teaspoon salt
What to do with the stuff:
In a medium bowl, combine all the ingredients. Chill briefly before serving.

Is it Spring Yet?

Just Say Yes to Fruits and Vegetables (JSY)
Program
If you are like me, you are counting the days until March 20th….the 1st day of Spring! Spring can mean many things
for different people. For me, Spring means more sunshine, warmer weather and lighter meals. A salad full of veggies
and protein can be a great “no cook” meal. Let’s free up our time in the kitchen so we can spend more time outside.

Try this Lentil Vegetable Salad taken from
the “Fruit and Veggies More Matters”
website:
Ingredients:
½ cup dry lentils, rinsed
1 can (15ounce) potatoes, sliced
1 cup peas, frozen
2 large carrots, shredded or chopped
1 tablespoon parsley
2 tablespoons vinegar
1 tablespoon mustard
¼ cup vegetable oil
Directions:
1. Boil 1 cup water in a saucepan. Add the lentils.
Cook for 15 minutes over low heat until tender, drain.
2. While the lentils are cooking, cook the peas in another
pan for about 3 minutes. Rinse and drain.
3. Wash, peel and shred (or chop) carrots.
4. In a large bowl, combine cooked lentils, potatoes, peas,
and carrots.
5. In a small bowl, combine parsley, vinegar, mustard
and oil. Stir well.
6. Pour dressing over the lentil vegetable salad. Enjoy!
7. Refrigerate leftovers.
Makes 6 servings
When they come home hungry,
have fruits and veggies ready to eat.
