Our Suppliers are an important part of our kitchen, and as such we make certain we work closely with them to ensure we receive fresh local produce from around Grampian & Scotland. Our suppler chain is checked regularly to ensure the quality and sustainability of products from all farms and producers. We see our role as not only delivering locally sourced food of great quality but also honouring and preserving the environment from which this resource has arrived. We work closely with several leading marine and farming environmental bodies, such as the Marine Conservation Society & Red Tractor to ensure that we have the very latest information on our sustainability targets. This in turn has allowed us to have been amongst the first to take a number of important initiatives that have now filtered into the mainstream – removing endangered species and low welfare livestock from our menus way back in 2006, something the supermarkets took another four to six years to implement. We work hard to remain true to our roots. Our shellfish, beef, pork and fish continue to come fresh from around Aberdeenshire, Grampian and the North Sea where our suppliers actively committed to supporting and protecting the area they farm, its ecology and communities. We will not serve food from endangered stocks and we ensure that the products used in the restaurant derive from a sustainable resource, either wild or farmed responsibly. There is nothing our owner Martin enjoys more than tasting food...! Being a restaurateur isn’t just about cooking, plating and serving meals. As part of his job Martin meets with and visits our food suppliers on a regular basis, checking the produce that is being bought, grown, reared and harvested on our behalf. Checking on our suppliers quite often means that Martin has to get the old welly boots on and traipse around farms and farmers markets, not to mention the early start to head of to the Peterhead fish market and the Glasgow fruit market each fortnight, too see the new produce on offer! It’s tough at the top. Supporting the local food industry is something we take very seriously; there is no fresher pantry than the one on our doorstep. During the changing seasons we change our menus to ensure that over 75% of our food purchased comes from the Grampian producers. The less the food has travelled the fresher it is.
