Hello! Welcome to the show. So what have you had for breakfast this morning?
Cereal? Slice of Toast? Perhaps a horse burger? Yes I say horse burger because
that’s exactly what either myself or Ben will be having for our breakfast this
morning, yes indeed for the past week you have been voting on our online poll to
determine whether myself or Ben will be eating horse burger LIVE at the end of
the show so make sure you stay tuned to find out just exactly how is tastes…
Also coming up on this mornings show, cheap mince VS butchers mince, we
found out which you preferred…I spoke to local farmer Geoff Bolton about the
celebrated Lincoln Red cattle…and if horse steak was on a menu? Would you go
for it? We spoke to a Lincoln gastro-pub owner who’s recently introduced horse
steak to his menu!…

Just scrolling through our Facebook page now, we’ve had a few responses from
you concerning this.
 Charlotte Baulch from Essex found a ‘Metal filing in a supermarket ready meal,
which got attached to back of her throat and had to be surgically removed. ‘
My gosh, bless you Charlotte I hope you made a full recovery from that!
 Alison Hosking - Found a small piece of rope in a jar of marmalade a good few
years back
Sean Oxspring found a snail in his peas!
So it’d been frozen with the peas, cooked and served to him on his plate! How
strange!

Which leads us to today’s main questions ‘what are we eating? And where does it
come from?’
65% of you said that you have NOT been put off buying cheap imported meat
following the horsemeat scandal. Interesting? This raises some important
questions as to why, even after shocking revelations of consumer deception,
we’re not supporting good-quality local meat, such as Lincoln’s celebrated Red
Beef, which guarantee’s 100% beef...no bull.’

behind its society….’
‘If you buy something cheap, there has to be a reason why it’s cheap’
That was Geoff Bolton there talking about the importance of quality locally
sourced beef, so Emily, how was your day at the farm?
Ben, I literally had the best day ever, honestly it was wonderful to see just how these
beautiful animals are kept and to talk to such a passionate farmer
Did the cows have anything interesting to say on the matter?
I’m going to be honest ben, not really, just one-word answers…‘moo’
(Joke around)
No but seriously, it was so reassuring to find out just where the meat comes from
and Geoff explained the process from birth to the butcher which was interesting.
it was a great experience!
Anyway! Geoff suggests that there HAS to be a reason why cheap meat is priced
accordingly. So what’s the difference between cheap beef and butchers beef?
Well we invited a group of you over for a little tasting test session! Using the
same bolognaise sauce with two different samples.
Sample A contained quality, locally sourced lean steak mince beef which was
priced at 60p per 100g… in comparison to Sample B, which is 32p for 100g.
Let’s see which sample you preferred and why?

It doesn’t surprise me actually, once the two samples were side by side it was
obvious which one was generally better all round
It would be interesting to see the percentage of actual beef in the cheaper option,
because there was very little to tell you on the packaging, which was a little
worrying? What ARE we eating?
No nutritional information either!
Also there were a few remarks about the smell of the butchers mince whilst it
was cooking, you found it quite off putting didn’t you Emily?
Yeah it doesn’t smell like what I’m used to, I’m used to supermarket, cheap mince
which doesn’t really smell of anything…
But we’ve been assured that the slightly overpowering smell of the fresh mince
beef is how it should be so don’t be alarmed!
It smells just like a butchers shop actually so it can’t be that bad!
Introduce Kenny. ‘Now joining us in the studio today, we have Kenny Roberts,
the owner and master butcher of Elite Meats in Lincoln’s Bailgate. So you’ve been
running the business for 24 years, this coming November…
Listening to the verdicts of the samples of beef we tried, are you surprised that
100% of us preferred your quality steak mince?
Does good quality meat generally have to be more expensive than less quality
meat?
Geoff Bolton suggested that cheap meat is often blasted off the bone…are there
any other general differences?
Why should people buy meat from their local butcher, as opposed to the
supermarket?
So I understand that you sell alternative meat to just the usual chicken, beef etc.,
can you tell us what else you sell?
_____? Have you ever tried _____? I’ve never even thought about it! What’s it like?
Since the horsemeat scandal, have you found that it has affected your trade in
anyway? Positively or negatively?
We’ve found out that generally some of us are put off from buying quality
butchers meat because of its high prices in comparison to cheap meat at
supermarkets, do you see this as a problem?
In these tough times, are you feeling the pressure? Have meat prices risen?
And finally, were finding out soon which one of us is eating horse burger for the
very first time, Do you have any delicious horse recipes you’d like to share?

Short sting
So the Lincoln hotel is set in the very heart of uphill Lincoln, with the stunning
view of the cathedral literally on its doorstep. We met up with head-chef Dale
Gill, to discuss the advantages of the Lincoln hotel being one of a minority of
restaurants that serve Lincoln red beef. Dale had a lot to say about the
advantages of using locally sourced produce.

However Dale seemed fairly positive that the Lincoln Hotel would continue to
serve traditional dishes as averse to experimenting with alternative forms of
meat.
Curious, we asked you if you were interested in trying horsemeat, which led to a
50/50 divide in opinion…WE HAVE DIVIDED YOU!
And with very few local restaurants wishing to take that risk and push the
boundaries by introducing alternative and exotic meats to their menu... where
can the half of you who were interested in trying it, actually go?

Now as ____ tucks in, let me just tell you a little history behind this particular
horse burger, its all the way from France, 97% horse, the rest is onions and
seasoning, and its been cooked on a griddle pan for approximately 7 minutes or
so it should be nice and tender!
So how does it taste ___?

What do you think to trying horsemeat? Would you and your son be interested in

Since the horsemeat scandal, are you more worried about what you and your son
are eating when purchasing goods from the supermarket?
What do you rather go for, convenience and the cheaper options or good quality
meat that may be more expensive?

So if I informed you that you could buy quality butchers mince beef, more than
enough to feed both yourself and your son quite happily for dinner, priced at just
£2, does that sound appealing to you?
One of our British newspapers posted an article about the Horsemeat scandal
suggesting that it 'could make pupils switch to unhealthy packed lunches'. As a
parent, are you put off paying for school dinners that use ingredients that we
don’t necessarily know where they’ve been sourced?
Times are tough at the moment for all of us, are you finding that you’re being
pushed more towards buying meat in bulk meaning cheaper and less quality?
Do you have any tips for parents out there who are worried about what they’re
eating and feeding their children and how to over come this? Meal time
alternatives for example?
And finally, do you feel more open to introducing alternative forms of meat into
your diet, as long as you can guarantee its traceability?
