SHORT COURSE OPTIONS AT BOMA INTERNATIONAL HOSPITALITY COLLEGE/ALPINE CENTER, NAIROBI,

1. Certificate Course: BASIC COOKERY

COURSE DESCRIPTION: This course introduces the learner to the culinary field where they will be able to apply the basic cooking methods used in various classical and modern cuisines.

40 HOURS

Class Time/Dates: From 08:00 until 12:00 noon. Starting Saturday, February 20 th and goes until

Saturday April 30 th . As Easter falls into this 10 week program the dates will be as follows: Feb 20 th ,

27 th , Mar 05 th , 12 th , 19 th , Apr 02 nd , 09 th , 16 th , 23 rd , 30 th .

2. Certificate Course: PASTRY & BAKERY

COURSE DESCRIPTION: This course introduces the learner to pastry and bakery production

Objective – To prepare participants on production of pastries, cakes, tortes, flans, confectionery and yeast goods eg. breads, and snacks for tea. The lessons will be a fusion of practical demonstrations and individual participation. Recipes will be provided at the beginning of every lesson.

3. Certificate Course: REVENUE MANAGEMENT

COURSE DESCRIPTION: Revenue management is often defined as selling the right room at the right price to the right customer at the right time. It focuses on how we can generate the maximum revenue possible for a certain time period especially where demand exceeds capacity; however, it can also be used to help facilitate an understanding and attract more profitable demand and/or ensure a hotel is operating with the optimal supply profile. This module prepares you for a career in hospitality where an understanding of revenue management will be increasingly vital to your success. It will provide grounding in the principles of revenue management, effective pricing models and duration-management techniques and their application at a sector level and it considers the future potential to increase revenue by applying the techniques to new areas of business.

Class Time/Dates: Thursday’s - 25 th February until 07 th May – 17:30 until 20:30. Exam scheduled

4. Certificate Course: CUSTOMER CARE & GUEST RELATIONS

COURSE DESCRIPTION: This course is tailored for customer service personnel in any hospitality industry position. It covers basic customer care in service, especially addressing and learning to deal with customer complaints, record keeping, problem solving and proper follow up procedures and goes into guest relations when organizing excursions; customer care and relations in airline catering.

20 HOURS

5. Certificate Course: FRENCH FOR BEGINNERS

COURSE DESCRIPTION: This is a 20 hour short intensive course spread over 10 weeks with 2 hours of classes per week. For the first five weeks, the classes are structured with 1 hour of theory (grammar and structure) and 1 hour of practical (orals and conversation). In the second half of the programme, the learners will have 1 hour of theory and 1 hour of orals. The aim of this course is to provide basic knowledge and use of the French language.

Class Time/Dates: 18:00 until 20:00 Wednesday, February 24 th , March 02 nd , 09 th , 16 th , 23 rd , 30 th ,

April 06 th , 13 th , 20 th , 27 th . Exam May 04 th .

COURSE DESCRIPTION: This course provides fundamental entry level ICT skills through an understanding of computer operations and components (Hardware/Software /Network); Windows 7

and 8 operating systems; Microsoft packages – Word, Excel, Outlook applications and Google tools;

Email communication – sending, receiving and storing; research of reference materials using elibraries.

9. Certificate Course: HOUSEKEEPING FOR ROOM STEWARDS

COURSE DESCRIPTION: This short course will provide primarily training for room attendants, as well as training and “hands on” experience for those who would like to begin their career in

Housekeeping. It will introduce some basic skills; outline the important role of housekeeping within the hotel and other hospitality operations; and cover use of cleaning supplies and accessories, safety and security, interpersonal relationships and environmental matters.

40 HOURS

Class Time/Dates: 08:00 until 12:00 noon and 13:00 – 16:30 hours - Monday, April 25th th to Friday,

April 29 th with the exam on Saturday, April 30 th from 10:00 until 12:00 noon.
