addition to conducting initial and follow-up nutrition assessments, and reviews for
patients with different medical diagnoses including: Diabetes, Cardiac, GI, Enteral,
Parenteral, Pulmonary, and Renal.
 Additional time was spent at Lehigh Valley Health Network working in Oncology and
Pediatrics, Moravian Hall Square for Geriatrics, and Manor Care working in Neurology.
 Provided patients specified diet education when consulted or requested.
 Researched, summarized, and critically analyzed evidence-based articles from medical
and nutrition journals, while providing realistic applications for the research findings.
Community Rotation- Various sites across Eastern PA and NJ- 200 hours.
 Took part in a variety of activities throughout the community with different
organizations, including Second Harvest Food Bank, Cooking Matters, AARP, elementary
schools, senior centers, cardiac rehab, Head Start, Diabetes support groups, and
Lafayette Organic Working Farm.
 Prepared posters, interactive nutritional games, newsletters for family members,
numerous PowerPoints, and health fair displays for differing age groups and community
organizations including Bethlehem Head Start, School Lunch for Daniel Boone
Elementary School and YMCA Healthy Kids Day.
Food Service Management Rotation- PPL Corporation, Bethlehem, PA- 200 hours.
 Spent time with General Manager learning about budgets, food cost, inventory,
ordering food, receiving deliveries, planning employee schedules, and assisting in
catering functions.
 Completed various assignments including federal and state legislative summaries,
HACCP summary, cooking demo, and system analysis project.
 Planned, organized, and executed theme meal in the main cafeteria per assignment
guidelines.
Work Experience:
Camp Counselor: Camp Pennbrook, Pennington, NJ, Summer 2013
 General Counselor – role involved living with a particular group of girls,
participating in all activities, and following the same routine as enrolled campers.

Involvement:

 Role as a member of the security team, with the job of ensuring security of the
families and students during THON weekend, occurring every February.
