Relationship of Gamma Oryzanol Accumulation to
Anthocyanin and Nutrient Content in Purple Rice Grain

Introduction
Relationship of Gamma Oryzanol (-oryzanol) accumulation to the content of Anthocyanin (cyaniding 3glucoside: C3G), Ash, Crude Protein (CP), Crude Fiber (CF), Ether Extracted (EE) and Nitrogen Free
Extract (NFE) was evaluated in 8 purple rice local varieties (Oryza sativa L.) and two white modern
varieties (Oryza sativa L.).
Material and Methods
Semi-gamma oryzanol and gamma oryzanol
were estimated from an extraction of unpolished grain crude oil,
using n-hexane and ethyl acetate
Contents were verified through
a reverse-phase HPLC.
C3G was extracted using 0.5%TFA in 95%ethanol
The relationships were estimated
by correlation coefficient analysis.
Other nutrients were evaluated using a proximate analysis
Result

Conclusion
• Gamma oryzanol had a positive correlation with CF and CP but negative correlation with NFE
indicated, rice varieties with higher sources of cabohydrate would have less potential as a source of
gamma oryzanol.
• There was no correlation between gamma oryzanol and C3G indicated, there was no linkage of both
gene control.
• A negative correlation was found between C3G and Ash meant, pigmentation was no correlate with
seed nutrients.
