The business field I will be competing in is the food service
industry.
This is a hard industry to be in because when customers
come back to your restaurant they expect to have
everything prepared exactly the way they had it last time.
The number of jobs in this industry have been increasing
every year.
Restaurants made more than $1.3 trillion in gross sales in
2007.
In the U.S., consumers spent 44 percent of their food
budget on meals prepared away from home in 2005, up from
40 percent in 1997.
My Plan
My business will be a fine dining restaurant.
It will offer first-class food in a relaxed atmosphere with
reasonable prices.
About one fourth of the restaurant will be a dessert bar
that will offer specially made coffees, after dinner drinks,
and desserts that will be made fresh daily in my kitchen.
The menu will be seasonal, New American cuisine with
Southwestern and Asian influences.

My Motivation for This Plan
Fine dining is very popular in my area because it is mostly
higher income second home owners that expect nicer dining .
Restaurants in the area are not always consistent with
service and the quality of food.
No other restaurant serves my type of cuisine in the area.
No one has a dessert bar attached to their restaurant in the
area.
Personal Traits
As of right now, I am working at a very nice fine dining
restaurant in Highlands, NC
I believe that I possess the determination, business sense
that will come with my college degree and also from watching
my parents running two small businesses, and the culinary
techniques (such as plating skills, flavoring and knife skills).
I also know what people want when they go out for a nice
meal because I am currently working in the industry.
Reasons for This Business
Lack of consistence at the restaurants in my
area.
The area does not have this type of
restaurant.

Mission Statement
The mission of my restaurant will be to provide
quality fresh products and exceptional fine dining
experiences to my customers that expect nothing
but the best. By doing this, we will create a stable
company that ensures the well being of my
employees, investors and myself.
Organizational Plan
•I will be the head chef and will be responsible for every
. aspect of the business ultimately. But my daily job will be to
cook, order the food, lead my staff and delegate jobs that I
will not have time to do but have to be done on a daily basis
in a restaurant.
•The definitive goal of the restaurant is to make the
customers happy so that they will come back. The way to do
this is for me to make sure that my restaurant runs like a well
oiled machine.
•Front house staff needs to be dressed appropriately and
friendly, waiters and waitresses also need to be dressed
properly, attentive to customers needs and up to date on all
kitchen specials, kitchen staff needs to be attentive to my
requests and capable of doing those requests quickly.
Marketing Plan
We will sell our product to the second home owners, locals and
tourists.
Some of our competitors will be other fine dining restaurants in the
area which currently include …On The Verandah, Wolfgang's On
Main and Lakeside restaurants.
My restaurant will be a fine dining restaurant.
We propose to sell high quality fresh made to order food.
We will be located in Highlands, NC.
We intend to serve 120 customers per night during the busier
season.
Our profit will be approximately $100,000 per year.
Promotion will be thru the local Chamber of Commerce and the local
magazine.
Entrees will be between $15.00 - $30.00.
This will be a full service restaurant.
