We have tested our unique technology of pasta production and patented in Russia and Ukraine. Its success is in the use of double steam treatment of pasta. First steam treatment is before loading pasta into the drying chamber. As a result, pasta becomes glassy, with even, shining surface and a smooth cut. Repeatedly pasta is steam treated immediately after exiting the drying chamber. This eliminates internal mechanical tensions that appear because of temperature fluctuations, preventing cracking and helps their stabilization (level-consistent temperature and humidity throughout the volume of product). Some manufacturers product is dried in a drying cabinet that increases the duration of drying and quantity of service staff. By not using our technology they are forced to increase the number and overall dimensions of the equipment forming a line, which leads to its significant cost increase. Pasta production process Flour is loaded into the sifter, from where the vertical screw passes it into the vacuum batcher of pasta press, after which it enters the camera of a high-speed mixer. Due to high speed of mixer rotation a mix of flour and water is broken up into very small particles, this makes it possible to humidify a product evenly. Then the dough goes to a two-chamber (to increase the duration of mixing and better ripening of the dough) dough kneading machine, from where it is picked out by screw and extruded through the extrusion die, which determines the shape of a specific product. Thus, the entire process, from flour feed by hopper, occurs in vacuum conditions. This, in combination with high-speed kneading, imparts properties enabling to obtain products of excellent quality, to the dough. Greater accuracy of dough humidity keeping is provided by vacuum batcher’s rotation control with frequency converter. From the extrusion die pasta is cut with a knife and through conveyors and steamcuring chamber falls on the conveyor-stacker that evenly distributes them all over the grid of the upper tier of the drying chamber. Poured a few times with a tier to tier, pasta is treated with steam for a second time, transferred to a stabilizing conveyor to evaporate residual moisture and cooling from the surface. From the conveyor a product is loaded into the storage hopper for final stabilization. The final step is packaging in bags on the packaging machines. The entire process is automated from flour sifting to packing the finished product. The line is served by a one operator. Besides, you need one person to load the flour into sifter and two to work on the packaging. Our equipment has a high level of performance and produces short-cut pasta of excellent quality, with both glossy and mat surface. In addition, we are the only company in the CIS that produces pasta conveyor drying chambers, which use natural gas as an energy source. The application of different types of heat exchangers using hot water or steam, as some manufacturers of pasta equipment do, is accompanied by large heat losses and hence lower efficiency. On our equipment the cost of energy resource is minimal. Besides, the drying time of products is much less than that of other manufacturers. On request, we can manufacture also drying equipment with the boiler operating on solid fuel. In this case the cost of production will be even lower. For the final drying of thick-walled products of complex shapes (noodles lying closely on the belt and drying poorly), and when using extrusion dies with rundown spinnerets we propose to set an additional tunnel drying chamber with a 2-4-6-fold pouring . However, 80-90% of pasta products do not require final drying. The above process is the optimal both as on the technology and on the composition and cost of the equipment. Our compact line can be placed in a straight line, L-shaped, or flat-topped. AUTOMATED LINE FOR VACUUM PASTA PRODUCTION WITH THE CAPAСITY OF 250 KG/HOUR Engineering-and-economical performance of versatile automated line for short-cut vacuum pasta, capacity - 250 kg/h (based on electric and gas drying chamber) Technical Data 1. Average capacity of the line - 250 kg/hour of dry product ± 15% (depends on the type of pasta product). 2. Water consumption for dough - 20% of the line’s capacity (approximately 50 l/hour). 3. Water consumption for cooling press’ jacket on condition of drain to sewage - 0,25 m3/hour On condition of using the automatic cooler of press’ extruder (closed contour) consumption is zero. 4. Monthly expenses on maintenance of the line include purchase of vacuum oil, lubricating materials. 7. The line is intended for round-the-clock work, with the half a day for maintenance. Monthly capacity of the line is calculated per 28 days. A capacity of shift is calculated per 11 hours, taking into account time loss on repeated extrusion die replacement (maximum 1 hour/shift). 8.
