Apple Experiment
Come and get 2 slices of apples ( A & B – keep
separate), paper towel and a bottle of lemon
juice.
When you get back to your seat:
1. Write A & B on paper towel. Place apple A on A side and apple B on B side
2. Immediately squeeze lemon juice over apple slice B.
3. IMPORTANT! Don’t get lemon juice all over both slices.
4. Set your apple slices aside and return the lemon juice bottle.

Why are we devoting

to a protein molecule?
Nearly all chemical
reactions in
biological cells need
enzymes to make
the reaction occur
fast enough to
support life.

What Affects Enzyme Activity?
• Three factors:
1. Environmental Conditions
2. Cofactors and Coenzymes
3. Enzyme Inhibitors

1. Environmental Conditions
1. Extreme Temperature are the most
dangerous
- high temps may denature (unfold)
the enzyme.
2. pH (most like 6 - 8 pH near
neutral)
3. Ionic concentration (salt ions)

2. Cofactors and Coenzymes
• Inorganic substances (zinc, iron) and
vitamins are sometimes needed for proper
enzymatic activity.
• Example:
Iron must be present in hemoglobin in order
for it to pick up oxygen.

Inhibitors
Competitive inhibitors: are
chemicals that resemble an
enzyme’s normal substrate and
compete with it for the active
site.
