Industry Knowledge
Unit 1
Investigate the Catering and Hospitality Industry
This unit provides learners with an understanding of the main functions, scope and size of the
hospitality and catering industry. Learners will also develop understanding of the links with
other related businesses. They will also carry out a simple survey to compare key indicators
between different sectors.
Unit 2
Products, Services and Support in the Hospitality Industry
This unit enables learners to gain knowledge and understanding of the products and services
the hospitality industry offers and the support it receives from other industries.
Generic Sector
Unit 3
Principles of Customer Service
This unit provides introductory knowledge to customer service. Learners will be able to
appreciate the vital role they play as employees or potential employees in contributing to the
quality of customer service.
Unit 4
Bookkeeping for Business
This unit examines the methods and documents commonly used by businesses for recording
financial transactions and for bookkeeping. The unit also looks at why these methods are
used and how they help to prevent fraud.
Unit 5
Consumer Rights
The aim of this unit is to enable learners to understand how the law operates with respect to
consumer rights. Learners will learn how the law applies to situations that affect consumers
in the purchase of goods and services.
Unit 6
Exploring Marketing
The aim of this unit is to enable learners to understand the principles of marketing and the
key functions that fall within the scope of marketing. Skills will be developed through practical
marketing activities to research and promote a product.
Occupation Specific
Unit 7
Alcoholic Drinks
The aim of this unit is to enable learners to gain knowledge and understanding of types of
alcoholic drinks, their storage, equipment and presentation and issues linked to their sale.
Unit 8
Service of Alcoholic and Non-Alcoholic Drinks
This unit provides knowledge on serving alcoholic and non-alcoholic drinks, and identifies the
appropriate legislation that needs to be complied with.
Unit 9
Service of Food at Table
This unit gives learners knowledge on greeting and providing customers with information in
choosing food. It also covers serving customer orders, providing customers with items such
as cutlery and condiments and keeping the dining area clean, tidy and safe during service, it
also covers storing and dealing with broken glassware.
Employment Preparation
Unit 10
Preparing for Employment
The aim of this unit is to prepare learners for employment in their chosen sector. They will
identify potential entry points and opportunities for career progression, and will develop skills
to support them in the job application process.
Unit 11
Developing Employability Skills
The aim of this unit is for learners to develop skills and qualities that are sought after by
employers in their chosen sector. Learners will reflect on their own skills and qualities,
prepare a personal development plan and participate in a work-related project to further
develop employability skills.
Unit 12
Work Experience
This unit aims to give learners an idea of what it would be like to work in the XXXX industry.
They will gain experience of the work undertaken and learn the necessary skills, knowledge
and understanding required for the industry.
