*INSECT REPELLENT use is recommended at all times while on the
fairgrounds.
* RABIES Vaccination Certificates are required for all animals.
* NO DOGS allowed on the Fairgrounds - except at 4-H Dog Show and
assisting the blind or hearing impaired.
* SMOKING is ABSOLUTELY forbidden in and around 4-H Exhibition
Building!
* ALCOHOLIC Beverages are NOT allowed on the fairgrounds.
*RAFFLES being held by organizations at the Fair must be reported
to the Fair Office prior to 10:00 AM of Opening Day; Raffle Winner
names must be furnished back to the Office before the Fair closes
Sunday evening.
*The Stratham Fair Committee reserves the right to use
photographers and videographers on the fairgrounds to capture
images of fair goers and the days events and to use such subject
matter for promotional purposes without the need for permission

Where Do the Monies Go?
People often ask, what does the Fire Department do with the monies raised at the Stratham Fair?
The Stratham Fair is an integral part of the town and continues to put monies into projects
meant to improve the quality of life for our town residents. For example, over the past years
proceeds have contributed greatly to new bathrooms in 2004 and electrical upgrades at the
park in 2006. Approximately $40,000 of fair proceeds contributed to the reconstruction of the
David C. Noyes stage in 2003. And finally, fair proceeds, and labor donated by Fire Department
members, constructed the new dressing rooms at the stage.
Besides these park projects, monies raised at the fair go to helping the Fire Department
towards purchasing new fire trucks, fire equipment, training for the firefighters and emergency
personnel, etc. At the same time, though, there are many other organizations in town that have
booths at the fair that help them raise needed monies to support their fine work.
The Stratham Fair is run and staffed with unpaid volunteers, many of whom come from
surrounding towns to give of their time to help our community. Stratham Fair Committee
members provide all the training you will need. If you can spare just a few hours during the four
day event, please give us a call. You will meet many of your neighbors, make new friends and
help a worthy cause. To volunteer please call us at 772-4977.

Stratham Volunteer Fire Department
On April 24, 1951, nine citizens of the Town of Stratham, New Hampshire signed Articles
of Agreement to form the Stratham Volunteer Fire Department. These forward thinking
individuals were: Ernest T. Wiggin, Robert S. Berry, Nelson E. Barker, Donald Baker,
Rudolph Bume, Elmer Wiggin, James Breslin, Richard G. Scamman, and John P. Cole.
They purchased a used 1946 Ford and housed it in the town shed. The Volunteer Fire
Department continued to grow and they purchased a second truck, the John Cole, from
Amesbury Massachusetts. The John Cole was also housed at the town shed. In 1955, the
town shed (a.k.a fire station) burned. In 1956, construction started on the new fire station
at the location it stands today.
Stratham has been blessed with volunteers dedicated to the idea of “protection to life and
property in its broadest sense.” Those who served as fire chief for this group of dedicated
men and women were: Ernest T. Wiggin, Robert T. Wiggin, Sr., James I. Scamman,
Fred A. Hutton, Sr., Lawrence Dowling, R. Stanley Walker, Jr., Robert A. Cushman,
Robert O. Law, R. Stanley Walker, Jr. and the current Fire Chief Rob Cook.

Dedication
Dan Whittier
Dan is the man that gives the Fair
“The Juice”. He makes sure that the
electricity (“juice”) goes where it
is needed and that it is safely used.
Months before the Fair, he can
be found at the park, testing and
improving all the electrical
appliances to his rigid standards.
Dan is a man of many talents. He has
been actively involved with building,
running, and tearing down the Fair
infrastructure each year. He also
went on to become the Master of
Ceremonies for the Miss Stratham
Fair Pageant for 8 years. His smiling
face and poetic voice helped kept the event lively and entertaining until it
retired in 2014.
Dan and his lovely wife, Mary Ellen, started working at the Fair with Ken
Lanzillo on the admission gates 18 years ago. Later Dan joined the legendary
Chicken Barbeque event as a friend and neighbor of the Crow Family. When
you pass by the Chicken Barbeque cooking area and yell “CORN”, Dan will
look up from his duties as corn cooker and smile and wave hello to you.

In Memory Of
The Stratham Fair remembers, with sadness, the passing of
these fellow legacy Fair family members:
Dwight Crow
Dwight ran the very first Chicken Barbeque for the Town’s 250th anniversary the year
before the Fair started. The East Kingston Fire Department came over with their chicken
racks and showed him how to do it. Since that time, it has always been a Crow Family affair
at the Stratham Fair that continues to this day.
Dwight did the advertising for the 250th anniversary celebration, and continued it for
the Fair for many years thereafter. He and his wife, Ellie, distributed Fair books to the
advertisers and went to camp grounds from Dover to Plaistow delivering posters and
Fair books. He would grab the Crow children, neighbor children or Boy Scouts and go to
Hampton Beach, shopping malls and other retail venues to plaster the area with posters.
Dwight could always be found on the fairgrounds ”clucking” at the announcement booth
to let people know “It’s 11 a.m. and time to get down to the Chicken Barbeque before it’s all
gone”. Dwight was one of the original cornerstones of the Stratham Fair. We all miss him dearly.
Barbara Dowling
Barbara was one of the original organizers of the SVFD Ladies Auxiliary Sandwich Shoppe
at the Fair. For over 25 years, she volunteered tirelessly for the Stratham Fair. She and her
husband, Larry, who was a member of the Stratham Volunteer Fire Department and Fire
Chief for three years, could be found helping with all sorts of activities at the Fair. Barbara
will be missed by all whose lives she touched in our community.
Elizabeth Noyes
Elizabeth Noyes was one of the people who was a driving force since the very beginning of
the Stratham Fair in 1968. She was a partner in the well-coordinated team of Elizabeth and
David Noyes. David was President, and Elizabeth was the First Lady of the Stratham Fair.
Elizabeth also served as Fair Secretary and Program Book Director for many, many years.
Behind every great President is a dedicated and hard-working First Lady. Elizabeth was
such a woman. Her early contributions and organization of the Fair Program Book helped
make it a lasting piece of history that continues today. Elizabeth was one of the original
founders of the Stratham Fair. She will be missed by her extended Fair family.
Carolyn Hutton
Carolyn Hutton was a lifetime member of the SVFD Ladies Auxiliary. In the early years at
our Fair she helped form the legacy Sandwich Shoppe. Carolyn was also a member of the
original Disaster Committee team that prepared food and beverages for Fire Department
personnel who responded to lengthy emergency calls. Carolyn was married to Fred Hutton
Jr., former Stratham Highway Department Agent and long-time SVFD member. They were
married for nearly 50 years. Carolyn was known for her soft voice and infectious smile.
Her contributions are part of the legacy of Stratham Fair.

4-H at the Stratham Fair
The 4-H Youth Development Program provides a diversity of opportunities for youth and adult
volunteers to make a difference in their lives and that of their communities. Rockingham County
4-H is part of University of New Hampshire Cooperative Extension and helps young people acquire
valuable knowledge and life skills through participation in local, county, state, and national programs.
We are flexible in offering many opportunities for youth and family participation, including 4-H
Clubs, 4-H After-school, short-course, summer, and other enrichment programs to foster positive
youth development. You can learn more about what is going on within Rockingham County 4-H by

At Stratham Fair, you will see the finished results of many 4-H member and volunteer leader efforts.
Practical life skills are emphasized in 4-H Youth Development programs with a broad variety of
projects and activities for youth to choose from. These include: cooking, rocketry, shooting sports,
gardening, raising & showing animals, sewing & textiles, GPS navigation, communications skills,
wind power, hiking & environmental stewardship, service-learning, and much more. Many of these
projects are displayed in the 4-H building. The 4-H exhibit building was built in 1977 and dedicated
to Lynn Garland, upon her retirement as 4-H Extension Educator in 2008.
Many 4-H members work on projects related to agriculture and animal husbandry. 4-H animal
projects help youth learn responsibility while they care for their household pet or farm animal. At
the country fairs across New Hampshire and the United States, 4-H members show their animals,
not only as they pursue ribbons and fair premiums, but also as they work to educate other fairgoers
about responsible agricultural practices. At the Stratham Fair, 4-H members are evaluated for fitting
& show classes on how the animal has been fed, trimmed and cleaned, and how the 4-H member
presents the animal in the show ring. In type classes, the animal is evaluated according to breed
characteristics. In 1968, Stratham Fair began with dairy and sheep outdoors, and club exhibits in a
tent. Beef, poultry, and dog shows were added in 1969. The first swine show was in 1972. Rabbits
were added in 1973, dairy goats in 1975, and the state 4-H oxen show came in 1977.
Volunteers are always needed to expand our 4-H youth development opportunities.
Volunteers in 4-H also learn and develop their potentials, while sharing time and talents
with youth. Adults and teens volunteer as organizational leaders, project leaders, special interest
leaders, helpers, or judges at 4-H events. Be that special person for a youth, volunteer for 4-H!

Nelson & Hilda Barker 4-H Scholarship
This college scholarship honors Nelson Barker, who served 22 years as Treasurer of the
Stratham Fair and Nelson’s wife, Hilda, who was a 4-H volunteer leader. The scholarship
presentation is made to a 4-H member with at least three years active involvement in
Rockingham County 4-H programs at the Stratham Fair. The application and information

Fiber arts are fantastic! Youth and adults who enjoy spinning will come together to
demonstrate spinning in the 4-H exhibit building on Friday afternoon at the Stratham
Fair. They will be utilizing spinning wheels and drop spindles to turn wool roping into
yarns. Watch and learn how fibers are twisted together to create amazing textures.
Ask questions you might have and you might even get an opportunity for a “hands on”
experience, too. Youth and adults who enjoy spinning are invited to join in the circle
of spinners and help to showcase this fun creative hobby. If you want to join in the 4-H
Friends Spinning Bee, call Cheryl McCarthy, at 978-465-3705.

Entered items are brought to the Lynn Garland Exhibit Hall at Stratham Fair on Wednesday,

Rockingham and Strafford County 4-H members ages 5-18 and 4-H clubs are eligible
to enter projects made since the 2014 Stratham Fair. These projects can earn ribbons
and premiums courtesy of the Stratham Fair. Projects made by 4-H members ages 8-18
are judged and awarded either blue, red, or white ribbons based on the quality of work
completed. Projects entered by 4-H Cloverbuds, ages 5-7, are not judged but do earn
participation ribbons. Projects entered reflect the diversity of interest areas that members
pursue in 4-H hands-on projects. Division areas include: aerospace, art, childcare and
babysitting, citizenship, clothing and textiles, crafts, electricity, computers, entomology,
foods and nutrition, food preservation, forestry and conservation, gardening, home arts
and needlework arts, health, first aid and safety, home improvement, horsemanship,
horticulture, leadership, leisure education, livestock equipment, mechanical sciences,
photography, outdoor education, hiking, fishing and camping, poultry, resumes, records
and memory books, and special projects. Some exhibits require a specific number of
items to qualify, so be sure to check the 4-H premium list available from Rockingham or
Strafford County 4-H Youth Development program of UNH Cooperative Extension.
During the fair there are many special events in the building.
• Action Exhibits presented by 4-H members and volunteer leaders
• 4-H Kids Coloring Contest for youth ages 4-12. Every child receives a ribbon and
a chance to win a 4-H t-shirt.
• Horticulture Judging, Thursday, 1-5 p.m.

Event: This event is open to all 4-H members ages 8 - 18 as of 1/1/14.
Participants will be divided into age divisions:

All participants must register by July 1st and have a signed permission form from a

• When two teams pull the same distance, within their final round, they shall return for
one final hitch. If equal distance between those teams is again pulled, their place shall
be determined by the flip of the coin.
• Officials in charge of the Stratham Fair Oxen Pulling Events are John Hutton,
Brad Reardon, and Daniel Sewall. The officials’ decisions shall be final.

Come, bid and have lots of fun at our auction that raises monies to enhance the 4-H
Youth Development programs in Rockingham County. Proceeds from the auction go to
support program scholarships to assist youth in attending major county, state, regional
and national 4-H programs such as 4-H camp, Teen Conference at UNH, career trips
and project tours. It also helps leaders attend training conferences and leader’s forums.
The benefit auction also funds our college scholarships for 4-H alumni and our 4-H club
community service action grants.
Items for the auction are displayed in the 4-H exhibit building during the fair until 4 p.m.
on Saturday. Anyone wanting to donate to the annual 4-H benefit auction may contact

Open to all 4-H Poultry Club members in Rockingham and Strafford Counties. Number of entries may be limited
because of space and will depend upon the number of entries received. If there is not sufficient space, youth will be
notified if they can show based on dates entries are received in the 4-H office. So get your entries in early.
You must provide your own food and water along with water and food containers. There is a possibility that you will
need to provide your own cages for the show. No sandals, open toe or backless shoes allowed in animal area. Sneakers
or boots required in animal areas. There is a mandatory meeting for all animal exhibitors, Thursday, 9 a.m.
No poultry over the age of 5 months allowed unless certified as per State Health Regulations
1. All poultry must be free of all infectious and contagious diseases and exposure thereto.
2. All poultry over 5 months of age must have been tested within one year for, and found negative to Salmonella
Pullorum and Avian Influenza, identified by official leg band. Birds under 5 months of age need official
documentation (from where the bird was purchase or hatched) showing that the bird comes from a Salmonella
Pollorum and Avian Influenza free flock.
3. Poultry under 5 months must be progeny of Pullorum clean stock and free of all infectious and contagious
diseases and exposure thereto.
4. Poultry under 5 months. All animals must be in proper physical condition, be properly identified with a
permanent leg band and free of visual evidence of infections, contagious or parasitic disease at time of arrival.
5. All approval forms and state vet test papers must be checked by the poultry superintendent – before unloading poultry.
6. The superintendent has the right to refuse any bird or to send one home if showing signs of illness.

Rabbit exhibits will be received on Thursday at 8:00 AM. All rabbit exhibits must be in place by 8:30 AM
on Thursday. Rabbits are released each evening at 5:00 PM (3 PM on Saturday). They are to return each
day by 8:00 AM. N.H. Youth exhibitors must have at least one rabbit on display at the fairgrounds and
be present for all four days of the fair in order to receive any premiums. Exceptions will be made if there
is not enough cooping for each member to exhibit at least one rabbit. Cavies are not required to be on
display all three days of the fair. All rabbits and cavies being shown are to be on the fairgrounds by 8:00
AM the day of the show. All rabbits and cavies are displayed and shown at the exhibitor’s own risk.
A health check will be done daily on each animal. Check with the Superintendent for
coop numbers and for a health check
BEFORE placing rabbits in coops. Coops will be provided for display rabbits. Please bring your show
rabbits and cavies in approved wire carriers with a solid bottom. Cages, boxes, cat or dog carriers are
not allowed. Cavies are not to be brought to the fairgrounds each day.
Exhibitors must be a YOUTH member of The American Rabbit Breeders Assoc. or a 4-H member with
documented proof of rabies vaccine for each rabbit that they show. The rabies vaccine must have been
given to the rabbit at least 30 days before the show date. Each exhibitor must supply their own hay, water,
and feed dishes for each entry. Only youth will be allowed to handle, groom and carry animals to and
from the judging table. Parents and other family members are able to observe the show from outside
the wire fence. Chris St. Pierre will judge pet Class. An A.R.B.A. Licensed Registrar will be on hand to
register rabbits after the rabbit show and showmanship is completed.

Pig Scramble
Saturday, 2:00 PM & Sunday, 3:30 PM
4-H Livestock Ring
Rules & Regulations:
• Stratham Fair will award the pigs to the contestants who succeed in catching the
pig in the allotted time.
• All contestants must be at least 8 years old and not over 12 on the day of the scramble.
• The parent or guardian must sign entry certifying entrants will be able to raise the pig.
• Duplicate entries will not be allowed.
• Two more entries will be drawn than the number of pigs available, plus 2 alternates.
• Contestants will have 3 minutes to catch, and hold the pig.
• Any contestant who touches a pig that another contestant has a hold of will be
disqualified and an alternate will take that contestants place.
• Judges will be assigned to the pigs and their decision will be final.
• Any pigs not caught in the first 3 minute heat will run in another scramble with
new contestants, until all pigs have been awarded.
• If you catch a pig on Saturday, you are not eligible to participate in Sunday’s pig scramble
• All scramble pigs will be returned to 4-H Swine area, but must be picked up by
their new owners, no later than 6 pm Sunday night.
• Entries will close at 1 pm, Saturday, for Saturday’s scramble.
• Entries close at 2:30 pm, Sunday, for Sundays scramble.

Ruth Wiggin Memorial Trophy has been given for over 25 years at Stratham Fair to the senior 4-H member with the
highest combined showmanship, obedience, and quiz score. This trophy is presented each year from a trust fund set
up by Miss Webb in honor of her cousin, Mrs. Ruth Wiggin, Stratham.
Paul Morin Trophy is awarded to the junior 4-H member with the highest combined showmanship, obedience, and
quiz score. This trophy is in memory of Paul Morin, a former 4-H dog club leader in Stratham.
Sharon Beck Trophy is awarded to the novice 4-H member with the highest combined showmanship, obedience, and
quiz score. This trophy is given in memory of Sharon Beck, former 4-H member who enjoyed showing her dogs.
Costume Class: Friday, 7 p.m. - Bring descriptive narration.
Top entry receives a savings bond from the Rockingham County 4-H Foundation.

2015 King Arthur Flour Adult Baking Competition
Classic Cinnamon-Nut Coffee Ring

Cake:
5 tablespoons butter
2 teaspoons vanilla extract
⅓ cup vegetable oil
2¼ cups unbleached all-purpose King Arthur Flour
1 cup sugar
2 teaspoons baking powder
3 large eggs
½ teaspoon baking soda
1 teaspoon salt
1 cup sour cream
1 teaspoon ground cinnamon
Filling:
½ cup chopped walnuts
½ cup unbleached all-purpose King Arthur Flour
½ cup chocolate chips
1 teaspoon cinnamon
½ cup sugar
3 tablespoons butter, melted
Preheat oven to 350°F.
For the cake:
In a medium-sized mixing bowl, beat together the butter, oil, and sugar until fluffy. Add the eggs one
at a time, beating well after each addition. Add the salt, cinnamon, and vanilla extract and beat until
evenly incorporated.
In a separate bowl, whisk together the flour, baking powder, and baking soda. Add the flour mixture
to the butter-egg mixture alternately with the sour cream, mixing on slow speed just until blended.
For the filling:
In a small mixing bowl, combine the nuts, chocolate chips, sugar, flour, cinnamon, and butter.
Spoon half of the cake batter into a lightly greased Bundt-style pan. Smooth the batter to level it and
sprinkle on two-thirds of the filling. Top with the remaining batter and sprinkle with the remaining filling.
Bake the cake in 350°F preheated oven for 45 to 55 minutes until a cake tester inserted in the center
comes out clean. Remove the cake from the oven and let it cool in the pan for 15 minutes. Turn out
onto a wire rack. Cool completely, sprinkle with confectioner’s sugar before serving.
Submit coffee ring on a paper plate in a zip type plastic bag and bring opened bag of King Arthur
Flour or submit a UPC label from bag of King Arthur Flour. Bring to the Lynn Garland Exhibit Hall
at Stratham Fair on Wednesday, 7/15/15, between 3-5 p.m.

2015 King Arthur Flour Adult Baking Competition
No-Knead Crusty White Bread

The most basic of all no-knead loaves, this is a wonderful way to get into
yeast-bread baking. The easy stir-together dough rests in your refrigerator
till ready to bake. The result? Incredible, crusty artisan-style bread.
Ingredients:
3 cups lukewarm water 1 tablespoon salt
62 to 72 cups King Arthur Unbleached All-Purpose Flour 12 tablespoons instant yeast
The flour/liquid ratio is important in this recipe. If you measure flour by sprinkling it into your
measuring cup, then gently sweeping off the excess, use 72 cups. If you measure flour by dipping
your cup into the canister, then sweeping off the excess, use 62 cups. Combine all ingredients in a
large mixing bowl, or a large (6-quart) food safe container. For first-timers, Alukewarm@ means
about 105°F, but don’t stress over getting the temperature exact. Comfortable warm is fine; AOUCH,
that’s hot!@ is not. Yeast is a living thing: treat it nicely.
Mix and stir everything together to make a very sticky, rough dough. If you have a stand mixer, beat
at medium speed with the beater blade for 30 to 60 seconds. If you don’t have a mixer; just stir-stirstir with a big spoon or dough whisk till everything is combined.
If you’ve made the dough in a bowl that’s not at least 6-quart capacity, transfer it to a large bowl; it’s
going to rise a lot. There’s no need to grease the bowl, you can if you like; it makes it a bit easier to
get the dough out when it’s time to bake the bread. Cover the bowl and let the dough rise at room
temperature for 2 hours. Then refrigerate for at least 2 hours.
When you’re ready to make bread, sprinkle the top of the dough with flour; this will make it easier
to grab a hunk. Grease your hands, and pull off about 1/4 of the dough, about the size of a softball
or large grapefruit. Plop the sticky dough onto a floured work surface, and round it into a ball. Place
the dough on a piece of parchment; or onto a lightly greased or parchment-lined baking sheet. Sift a
light coating of flour over the top; this will help keep the dough moist as it rests before baking.
Let the dough rise for about 45 to 60 minutes. It won’t appear to rise upwards that much; rather it’ll
seem to settle and expand. Preheat your oven (and baking stone if your using one) to 450°F while
the dough rests. Place a shallow metal or cast iron pan (not glass, Pyrex, or ceramic) on the lowest
oven rack, and have 1 cup of hot water ready to go. When ready to bake, take a sharp knife and slash
the bread 2 or 3 times, making a cut about 1/2”deep. The bread may deflate a bit, that’s ok, it’ll pick
right up in the hot oven. Place the bread in the oven and carefully pour the 1 cup hot water into the
shallow pan on the rack beneath. It’ll bubble and steam; close the oven door quickly. Bake the bread
for 25 to 35 minutes, until it’s a deep, golden brown. Remove the bread form oven and cool it on a rack.
Submit 1 loaf in a zip-type plastic bag and bring opened bag of King Arthur Flour or submit a UPC
label from bag of King Arthur Flour.

Robin Weeks is from Greenland, NH, has been involved in 4-H since she was very young and
is a 3rd generation 4-Her. Robin is a volunteer leader in the Greenland Dairy 4-H Club and
is the superintendent of the Stratham Fair Dairy Show since 2008.
This OATMEAL COOKIE recipe is a family favorite:
Ingredients:
1 cup shortening
1 cup white sugar
1 cup brown sugar
2 beaten eggs
½ teaspoon vanilla
1½ cups flour
1 teaspoon salt
1 teaspoon baking soda 3 cups oatmeal
Preheat oven to 350*F.
Thoroughly cream the shortening and the brown and white sugars, add beaten eggs and
vanilla. Sift flour, salt and soda together and add to the creamed mixture. Beat well. Add
oatmeal. Drop by spoonful onto UNGREASED cookie sheet. Bake at 350* F for 12 minutes.
Cookies should be soft not crunchy.
Submit 6 cookies on a paper plate in a zip-type plastic bag. Bring to Stratham Fair’s Lynn
Garland 4-H Exhibit Hall, 7/15/15 between 3-5 p.m.
