Homemade Bread Dough with Instant Yeast Serves 12-16 2 teaspoons instant rise or rapid rise yeast 1/3-cup warm water Sprinkle of sugar 5 cups bread flour or high gluten flour 1/3-cup sugar A little less than ¼ cup vegetable or canola oil 1 tsp. salt 11/3 cups hot water Put warm water in a medium size bowl, add the yeast and stir, sprinkle sugar on top to make the yeast react faster. In a large mixing bowl or Kitchen- Aid bowl(fitted with dough hook), put the flour, sugar oil, salt and 1 ½ cups hot water, mix as you put in ingredients, add yeast mixture, continue to mix until all the ingredients are incorporated . Knead for approximately 5-8 minutes by hand or 2-3 minutes with a Kitchen-Aid (fitted with the dough hook). Put dough in a greased bowl and cover. Set in a warm place for approx. ½ hour or until double in size. Uncover, punch down and create your bread. (remember this is a double recipe) Bake most of the rolls for approx 16 minutes, each oven will differ. Bake whole breads at 350 degrees for approximately. 25 minutes, be sure you “egg wash” a whole loaf for browning. If you are just baking pretzels, you make want to bake at 375 for approx 14-16 minutes, again for additional browning try an egg wash. For Ciabatta type bread try a 374-400 degree oven, brush with egg and dust with corn meal. Bake for approx. 20- 25 minutes. Try all different shapes, parker house rolls, cloverleaf rolls, bowknots, snails’ twists, and braids. Try different glazes, Salt water glaze, butter top, olive oil, egg glaze, onion glaze, herb topping. Etc. The glaze recipe we use is basically 1 cup sifted powdered sugar with 2-3 tablespoons milk or orange juice or lemon juice; add a little vanilla or almond extract for a different flavor. Try garlic parmesan, cinnamon sugar, Italian herbs, rosemary, garlic herb, cardamon sugar, poppy seeds, sesame seeds, brown sugar cinnamon, walnuts, raisins, chocolate chips, cocoa powder with-sugar, green chilies, jalapenos, etc. It is endless what you can do with bread dough!!
