Our contribution is based in the development of classical
sensors for applications to control raw materials and food
products. Also, we have worked in collaboration with groups
developing sensors based on enzymatic reactions and
antibody recognition to improve on-line analysis. An important
part is the validation of biosensors or equivalent devices by
the comparison with reference analytical or physical methods
to determine target compounds or proximate analysis of
foods.
We can provide the gap between the development of
biosensors and the use of sample matrix in a solvent or
medium compatible with the response of the sensor (ex.:
aqueous solution or similar). This step will be developed
searching solvents and solutions capable to extract the
compounds to be analyzed to perform an effective control of
food quality or safety.
The use of new technologies to improve the shelf life of foods
can be included to evaluate the application of sensors in these
techniques to assure the food safety and sensorial quality.
