Pizza Oven Stones Cleaning Procedure
1.
The oven must be turned off for a period of 3-5 hours before cleaning begins. This greatly
reduces any possible injury and results in the best cleaning finish to the oven face. Turn the gas
valve to the off position and lonely leave the pilot light on. This will drop the oven temperature
down to 150° F, which is a safe working temperature level.
2.
Make sure the oven exhaust and make-up air are left on so that fumes are properly removed from
the restaurant while also ensuring fresh air is being brought in from the outside.
3.
Only clean the oven stones with a pizza scraper or brush.
**Never use any cleaners, water or salt. A wet mop will cause cracking within the stones.
4.
Only use a dry mop to wipe the inside of the oven.
5.
Do not leave the mop sitting inside the oven, as the mop will catch on fire.
**if the mop does catch fire, advise the workers around you and remove the mop slowly from the oven
and place it into the kitchen sink and turn on the tap water to put out fire.
