DISCOVERING NEW POSSIBILITIES
THROUGH THE POWER OF ACCOMPLISHMENT
Empowering individuals of all abilities to discover their fullest potential is the essence of what the
National Ability Center is all about. For more than 25 years, the National Ability Center has served
individuals with disabilities by providing sport and recreation activities that foster skill development,
broaden aptitudes and challenge stereotypes. Our success is based in a commitment to view people
not through a lens of disability, but through one of possibility and potential. We provide programs that
serve children, servicemen and women, veterans, adults, and athletes who have a variety of physical,
cognitive, and developmental disabilities. These individuals come from all corners of the country and
around the globe to participate in discovering new horizons of hope and opportunity along the way.
The past year at the National Ability Center has been one of challenge and achievement. Through the
generous and selfless partnership of many, we have accomplished much:
• Empowered more than 2,500 children and adults of all abilities, indirectly impacting nearly
10,000 caregivers, community and family members.
• Expanded military partnerships to serve more than 800 soldiers, veterans and their families in
2012 (an increase of 60% over the prior year).
• Granted 100% of scholarship requests.
• Provided 18,000 recreational and competitive lessons in 18 different sports and recreation
activities within 335 program days.
• Doubled the number of groups hosted in program activities from 44 (2011) to 97 (2012).
• With support of The Gibney Family Foundation, launched the COACH internship program aimed
at providing opportunities for individuals with disabilities to advance their recreational,
leadership and life skills.
• Welcomed 30 Wounded Warrior Project Soldier Ride warriors to join 70 other cyclists with
disabilities and more than 500 total riders for the Summit Challenge, an 18, 52 or 102-mile

road ride in the Wasatch Mountains.
• Provided training and competitive events for more than 60 Paralympic and 80 Special Olympic
athletes.
• Utilized 20,000 hours of time donated by volunteers in the delivery of our mission.
• Increased our lodge occupancy rate by more than 1,000 visitor nights, 38% over the previous
year and an increase of 94% in just two years.
• Operated as the only PATH International Premier Accredited Equestrian Center in Utah, offering
training and education opportunities to the community, including hosting Buck Brannaman for
a horsemanship demonstration and initiating a new partnership with the University of Utah’s
Equine Education Center.
The continued success of the National Ability Center is directly due to a collection of individuals who
are committed to changing lives for the better and possessed with a profound respect for the people
they serve. Today we celebrate this passion of generosity and service to others. It is only through the
combined efforts of many that the success of the National Ability Center and its commitment to the
development of lifetime skills for people of all ages and abilities can be achieved.

Thank you for joining us at what will be a truly special evening – the 9th
Annual Red, White and Snow Gala Dinner and Auction. Your presence
at this event pays tribute to the countless individuals – including family,
caregivers, community members and friends – who share a common
commitment to empower individuals with disabilities; enabling them to
visualize a better future and create an improved quality of life.
The National Ability Center has worked earnestly for more than 25 years to
promote a new world view of people of all abilities. Through participation in
programs based in an environment of inclusion and challenge, individuals
are no longer defined by their limitations, but by what they can achieve. And
when that occurs, the opportunities and possibilities are endless.
Tonight, we gather together to recognize the spirit of determination and
achievement that lives within individuals of all abilities. We also celebrate our
collective strength when we challenge ourselves to do more, to accomplish
more, than we ever felt possible.
We can only accomplish our goals with the ongoing support of caring
and dedicated individuals like you. Consider the important role you can
play in the future of the participants and families who are challenging their

The National Championship Air Races in Reno, Nevada is the last pylon racing event in the

Your pilot, Pete Zaccagnino is highly experienced with more than 15,000 hours of flight time
in 200 types of aircraft which includes experimental, propeller, turbine, helicopter, corporate
and fighter jets. Pete holds 7 world records, has made more than 300 crossings worldwide
and 9 around-the-word trips. He has taught in upwards of 80 different experimental aircraft

has test flown for numerous aircraft manufactures and military, designed a multitude of

Gold 2007 National Championship Air Racing Champion. He is a graduate from Embry-Riddle

The thing that makes any entertainer successful is the ability to connect with an audience. That’s certainly
something Bill Engvall has mastered. Bill’s quality to share the humor in everyday situations has made him one
of the top comedians today.
Among his long list of accomplishments, Bill was one of the stars of the sketch comedy show, Blue Collar
TV, on the WB network and was part of the enormously successful Blue Collar Comedy concert films. The
soundtrack for Blue Collar Comedy Tour – One For The Road (Warner Bros./Jack Records) was nominated for a
Grammy Award.
Along with his Blue Collar movies, Bill has several solo specials that aired on Comedy Central including Aged
and Confused (2009), 15° Off Cool (2007) and Here’s Your Sign, Live (2004), which was certified multiplatinum.
Bill also starred in the NBC series, The Jeff Foxworthy Show, where he played Jeff’s best friend. He recently
reunited with Jeff Foxworthy and Larry the Cable Guy on the Them Idiots Whirled Tour, which was filmed as a
special for CMT and aired in March of 2012.
Bill’s voice will soon be heard on the new animated comedy series, Bounty Hunters, which is set to air this
spring on Country Music Television (CMT).

Beginning as a teenage prep cook in an Italian kitchen in her hometown of Sudbury, Massachusetts, Rebekah Abrams
worked in every corner of the kitchen and mastered everything from pastries to whole pigs. You may have sampled her
cooking under Clark Norris at Park City Mariposa, or experienced her skill as a private chef at the home of one of her
regular Park City or Marin County clients. As welltraveled as she is well-seasoned, Rebekah brings an unexpected flair
to whatever she cooks and can be counted on to satisfy and delight you and your guests… even if it’s a powder day! In
which case you might catch a few runs with her before dinner.
SETH ADAMS • THE RIVERHORSE ON MAIN
Chef Adams’ culinary career commenced at age 16 with a job catering LPGA tournaments in his native Pittsburgh. He
earned his culinary degree at the Academy of Culinary Arts – Indiana University of Pennsylvania and moved to Park City
to take an internship with Deer Valley Resort. Seth’s restaurant experience continued at Morton’s in Chicago, and in Nag’s
Head, NC, but his love for the mountains drew him back to Park City repeatedly – he cooked for Deer Valley for three
winters and was promoted to Banquet Chef at Snow Park Lodge. He worked for the Grand Summit as Executive Sous Chef
before joining the Riverhorse organization in 2003 as Executive Chef.
SHAWN ARMSTRONG • MONTAGE DEER VALLEY
With a culinary career spanning two decades and several continents, Shawn Armstrong brings a world of experience to his
role as Executive Chef of Montage Deer Valley. Most recently Executive Chef of the Mandarin Oriental Las Vegas, Armstrong
has become widely recognized for his award-winning cuisine developed over a ten-year span in high-profile venues in Asia,
where he helmed the kitchens in Hong Kong’s Oyster & Wine Bar, Singapore’s Cliff Restaurant (Sentosa Resort and Spa)
and the Maldives’ Coral Reef Resort (Taj Hotels, Resorts and Palaces).
While in Singapore, Chef Armstrong was named Global Chef of the Year by Singapore’s premiere culinary academy
(At-Sunrice). He also went on to earn a Three-Chef-Hat rating for Cliff, ranking the restaurant as one of the top five
in Singapore – and recognition as New Restaurant of the Year by World Gourmet Summit. Chef Armstrong is an honors
graduate of the School of Culinary Arts (Art Institute of Houston) and Texas A&M University.
ED AXTELL • CAFÉ TERIGO
Ed Axtell opened Café Terigo in 1988. As Chef and Owner he has forged a style of cooking unique to the restaurant based
on his love of food and cooking. He has traveled extensively, eating at some of the best restaurants in the world, learning
to appreciate the mastery of fresh and local ingredients. In 2003, with his son Travis, Ed opened Purple Sage and American

Western Bistro on Main Street in Park City. In 2008 his daughter Carly joined the kitchen staff of Café Terigo as Sous
Chef and has continued to work alongside of her father, bringing her unique artistic talent and palate. Café Terigo is
now thriving in its 25th year with the Axtell Family at the helm.
SHANE BAIRD • J&G GRILL AT ST. REGIS DEER VALLEY
Shane M. Baird is currently the Chef de Cuisine at the St Regis Deer Valley’s J&G Grill. A member of the original
2009 opening team for J&G Grill, Baird brings to the position a comprehensive knowledge of food, beverage, events
and operations at this signature Jean-Georges Vongerichten restaurant, which is staffed by a team of more than 175
professionals during peak season.
Originally from Honolulu, Chef Baird came to J&G Grill with considerable experience in menu development and special
events. His background includes work as Sous Chef with Joie de Vivre Hospitality in San Francisco, the second
largest operator of boutique hotels in the U.S., and as Executive Sous Chef with Butterfly Restaurant, a fine-dining
establishment with four locations in Salt Lake City.
Baird attended New England Culinary Institute in Burlington, Vermont and trained in Spain under Michelin-starred Chef
Martin Berasategui in modern Basque cuisine, and in France with Michelin-starred Chef Yann Plassard in Nouvelle
French cuisine. Baird also studied at La Escuela Tandem Centro de Idiomas in San Sebastian, Spain. When not busy in
the kitchen, he enjoys fly fishing on the blue ribbon Provo River and skiing the sparkling powder at Deer Valley Resort.

KEVIN DONOVAN • THE HEARTH RESTAURANT AT PROMONTORY CLUB
Kevin Donovan is the new Executive Chef for Promontory. Chef Donovan joined Promontory in February from Montage
in Deer Valley. With previous Four-Diamond restaurant experience in the resort community of West Palm Beach and
the urban mountain city of Denver, Chef Donovan brings a unique blend of culinary expertise to Promontory.
In addition to Montage, Chef Donovan´s previous experience includes Executive Chef for Park City Mountain Resort,
Executive Chef at Log Haven in Salt Lake City and in restaurants such as Hibiscus in West Palm Beach and Prima in
Denver which earned the Wine Spectator’s Award of Excellence.
JAMES DUMAS • HIGH WEST SALOON
New York-born and Swiss-trained, James Dumas fuses classic techniques with artisanal-produced regional and
seasonal ingredients in unique combinations. Describing High West’s food as “innovative Western,” Dumas said,
“Our goal is to provide a special culinary experience. We hope our guests walk away with a better appreciation of
how spirits can pair well with food and what the difference is between many of the world’s great spirits such as the
different whiskies of the world. You can take a tour and learn how whiskey is made and then you can apply that
knowledge in our restaurant!” High West Distillery’s intimate facility is the perfect gathering place to refuel, discuss

CARL FIESSINGER • 350 MAIN BRASSIERE
Carl Fiessinger, a native of Charleston, SC has a true passion for what he says food should be. To Carl, cooking is
not about fads, it’s about cooking something correctly and with integrity, rather than doing something trendy and
for the moment. A Salt Lake City local for the last 9 years, Carl has taken on such ventures as Executive Chef of the
late Panache, Boulevard and Zola. Fiessinger is a Certified Chef de Cuisine by the American Culinary Federation and
has won many national culinary awards including: Silver Medal at Sysco Intermountain Western National Food Show
Competition; Gold Medal at Nicholas and Company A.C.F. sanctioned culinary competition. Chef Fiessinger began

cooking with his grandmother and mother at a young age. He has fond memories shelling bushels of field beans
with his grandmother from her weekly CSA basket delivery. After the beans were completed, Carl’s grandmother
would treat him to fresh baked bread, apple butter and a honeycomb as a reward. Chef Fiessinger has trained under
a few great-named chefs and attended Johnson Wales Culinary Arts College. He prefers, however, to claim his
understanding and success of gastronomy from long nights of reading Escoffier and working hands-on with farmers
and families. Chef Fiessinger has now taken the reins at 350 Main Brasserie and Spur Bar and Grill in Park City,
Utah as the new Executive Chef of Golden Rule Inc.
PETER HANSEN • FORMER CHEF DE CUISINE OF BAR AMERICAIN
Peter Hansen’s desire to become a chef began at the age of 15, when he got his first gig working in a professional
kitchen. He fell in love with the fast-paced environment of restaurants and appreciates the discipline it takes to be
a professional chef. Over the course of his professional career, Chef Hansen has shared his culinary talents across
the globe from the Caribbean to Western Europe to Martha’s Vineyard. Eventually landing in London, he accepted a
position with the Grove Park Hotel where he focused on modern European cuisine with international spices.
The call to come back to America came within 18 months of landing in London and Peter returned to the States
where he soon found himself working alongside Bobby Flay in midtown Manhattan as the Chef de Cuisine at Bar
Americain.
Chef Hansen’s commitment with Bobby Flay didn’t end in the kitchen. It would bring him numerous culinary
opportunities such as food and wine events in Miami, Charleston and Aspen. In addition, Peter as had the opportunity
to demonstrate his skills to a national television audience as Bobby Flay’s Sous Chef in multiple Iron Chef Episodes.
ZANE HOLMQUIST • STEIN ERIKSEN LODGE
As Executive Chef, Zane Holmquist leads the talented food and beverage team at Stein Eriksen Lodge and oversees
the Lodge’s biannual menu development as well as the management of overall kitchen operations and special
events. Prior to the Lodge, he served as Executive Chef and Food and Beverage Manager for Goldener Hirsch Inn in
Deer Valley. He also founded the upscale restaurant, Fuggles, in Salt Lake City in 1984 and served as the banquet
chef for the AAA Four Diamond-rated Hyatt Grand Champions Resort in Indian Wells, California. A graduate of the
Culinary Institute of America in Hyde Park, New York, Chef Zane has made appearances on NBC’s TODAY Show,
ABC’s Good Things Utah, Park City TV, Park City KPCW and Sirius Radio’s The Martha Stewart Show. His cuisine has
been featured in publications such as Bon Appétit, Gourmet, Sunset, SKI Magazine, Salt Lake Magazine, City Weekly,
Traditional Home and Food Arts. In 2005, Chef Zane was invited to showcase his work at the renowned James Beard
House in New York City and was the recipient of the 2005 Governor’s Culinary Artisan Award.
DEAN HOTTLE • SNAKE CREEK GRILL
Chef Dean Hottle started working in the kitchen at a very young age, learning the basics from his mother and
grandmothers. Growing up in New York and Connecticut gave him opportunities to work side-byside with the best.
Chef Hottle spent time in the kitchen working with the highly-acclaimed celebrity Chef Brendan Walsh at The Elm’s
Restaurant in Ridgefield, CT as well as Chef Chad Scothorn at The Cosmopolitan in Telluride, CO. Not only did he
work with exceptional chefs, he also received further training and education while earning an Associate’s Degree
from The Culinary Institute of America in Hyde Park, NY.
Chef Dean Hottle came to Utah in 1999 and spent six years working under Chef Barb Hill at Snake Creek Grill.
Chef Hottle brought his culinary vision to Snake Creek Grill, with fourteen years of fine dining experience. Dean
transforms classical dishes into comforting meals. The Snake Creek Grill is now owned and operated by Chef Hottle.

Starting his career at age 16 as apprentice under the head chef of New York’s famous Tavern on the Green Restaurant,
Kieffer earned his degree from the Culinary Institute of America, and upon graduation, relocated to Seattle to work
with several of the city’s most esteemed restaurateurs. Kieffer worked as a private chef to telecommunications
pioneer Craig McCaw, and then was appointed Executive Chef at the AAA Four Diamond-rated Bellevue Club Hotel.
After earning a degree in Holistic Health and Wellness, Kieffer was named Executive Chef at Microsoft Headquarters.
As a pioneer of the farm-to-table movement, Kieffer relies heavily on his relationships with local farmers and artisanal
food purveyors, purchasing only the finest, pesticide-free, organic produce, always selecting certified, hormone-free
dairy products and ordering only free-range, grass-fed meats and poultry.
MARIANN KISS • PRIVATE CHEF TO THE STARS
Chef Mariann Kiss is an accomplished Hungarian culinary artist who comes to Red, White & Snow with an impressive
resume. Spending the last decade as a private chef, she has served up her fare to a number of Hollywood’s elite,
including the Jolie-Pitt family, Jeremy Irons, Anthony Hopkins and Cynthia Nixon.
Chef Kiss has trained under and shared her talents as a chef at Le Bourbon with Laurent Vandenameele, Château Visz
with Thomas Keller and Klaus Deutschmann, and most recently with Miguel Rocha Vieira and Nicolas Rafael Delgado
at Costes, Budapest’s first Michelin Star restaurant.
IGOR KRICHMAR • LESPRI PRIME STEAK SUSHI BAR
A rising star in the Park City dining scene, Chef Igor Kritchmar became an Executive Chef at the young age of 24.
Prior to achieving the post at Lespri Prime Steak Sushi, Igor was a part of the culinary team that opened the Montage
Deer Valley and acted as the Executive Sous Chef of Apex. Prior to Park City, Chef Igor spent time in the kitchens of
a few famous establishments including Bouchon Bistro in Yountville, CA, The Fat Duck in the U.K. and Stratta in Las
Vegas. A graduate of the Culinary Institute of America in New York, Chef Igor has relished in infusing his flare for
both European culinary stylings and locally sourced cuisine to create a chic and unique Modern Steakhouse dining
experience that is generating an exceptional amount of buzz
ROGER LAWS • DONE TO YOUR TASTE
Roger Laws is a Provo, Utah native who started his career in the Tree Room kitchen at Sundance Resort back in the
1980’s and has now made his way back to Resort Restaurants. Since his beginnings, Chef Roger has moved through
the culinary ranks and honed his skills with some of the most skilled chefs across the Wasatch front and back. His
experience has come from positions like managing the kitchen at The Lookout Café at Park West, working as a Sous
Chef at Solitude’s Roundhouse sleigh ride dinners, then serving as the Executive Chef of Pasillas Restaurant at the
base of the Uinta Mountains for 11 years. Most recently, Roger was the Executive Chef of Park City’s Zoom. His
culinary style combines Rocky Mountain cuisine with international influences.
Roger joined the culinary team at Done to Your Taste in June 2012. “Chef Roger’s dedication to nutrition, fresh
ingredients and locally-sourced products make him an ideal match for Done To Your Taste,” said proprietor Eileen
Dunn, who two years ago launched Done To Your Health, specializing in raw food trends and detox. “Chef Roger will
provide new, delicious options for our health-conscious clientele, as well,” she said.
CARTER LIGHT • SILVER RESTAURANT
Carter Light, Chef de Cuisine at Silver originally hails from Vermont. This is also where he began his cooking career.
He has worked in kitchens from the age of 14, when he began as a dishwasher in North Hero, VT. It was here that
he worked his way up through every position in the kitchen at Shore Acres Inn. Vermont, known for its tried and true
methods of agriculture, is also home to the world’s best artisan cheeses, wonderful maple syrup, dedicated small
farms, and some of the most organized organic and traditional ranchers. The region helped to foster his love for food.
Chef Carter acquired his culinary degree from Southern New Hampshire University in 2008. After spending a year on
the North Island of New Zealand, Carter moved to Jackson Hole, WY and began work with The Fine Dining Restaurant
Group. He started as line cook at Il Villaggio Osteria under the watchful eye of Chef Paul O’Connor. The two bonded

quickly, and Carter began ascending the ranks. He worked his way up to Sous Chef in 2011.
As Chef Paul took on the new task of Silver, in Park City, he left the reigns of Osteria to Carter. Carter once again
proved himself to be a very talented and capable chef. In the summer of 2012, Carter took over as Chef de Cuisine at
Silver Restaurant. Here, he has been able to put his own personality on every plate. Silver has been achieving incredibly
high marks as a direct result of Chef Carter and his talents. His love of food is dwarfed only by his love of the outdoors.
Carter is an avid hunter, fisherman, skier, and dog lover.
PAUL O’CONNOR • SILVER RESTAURANT
Paul O’Connor, Executive Chef of Silver Restaurant in Park City, was born and raised in Troy, New York. Chef O’Connor
graduated from the Culinary Institute of America in 1999. He has worked at Stein Eriksen Lodge in Park City, was
co-owner of Stoneground Restaurant in Salt Lake City, Executive Chef of Old Yellowstone Garage in Jackson Hole, WY,
and Il Villaggio Osteria in Teton Village, WY. Chef O’Connor has appeared on an episode of Giada’s Everyday Italian on
the Food Network. O’Connor is also co-owner of VaporBeats Production Company (vaporbeats.com) and known as DJ
Flambe in the music scene. O’Connor resides in Alpine, Wyoming.
VIET PHAM • FORAGE
Viet Pham grew up in the San Francisco Bay Area with parents who loved food and cooking. His upbringing inspired
him to pursue a career in food and he graduated from the California Culinary Academy in 2002. While attending school,
Pham interned at Michelin-starred Fifth Floor Restaurant in San Francisco, CA under award-winning chef Laurent Gras.
Pham went on to cater local private events before relocating to Provo, UT to secure the Executive Chef position at
Spark Restaurant Lounge.
During his time at Spark Restaurant, Pham met his business partner, Bowman and Brown, and the pair opened Forage
Restaurant in Salt Lake City, UT. Though a unique concept in the Salt Lake City restaurant scene, Forage Restaurant
was well-received by the community and quickly emerged as the top eatery in the area; it won Salt Lake Magazine’s
Best New Restaurant - Salt Lake City in 2010, Best Restaurant - Salt Lake City in 2011, and Pham won Best Chef from
the magazine in 2012.
Pham won Food & Wine Best New Chef in 2011, after receiving a nomination from the magazine the previous year for
People’s Best New Chef: Southwest. His scallop sashimi with Meyer Lemon confit was also featured in Food & Wine in
the 10 Best Restaurant Dishes of 2010. The James Beard Foundation has nominated Pham for Best Chef: Southwest
in 2010 and 2011.
In 2012, Pham participated in Food Network’s show Extreme Chef. He also appeared on Iron Chef America where he
competed and won against Chef Bobby Flay.
ROBERT VALAIKA • SHABU
Chef Robert has a B.A. in food arts, a four-year program, from Kendall College in Illinois. He externed at Charlie
Trotters in Chicago and then worked for more than two years with Nabu Matsuhisia in Los Angeles. He opened the
Aspen Matsuhisia in 1998 and operated it for two years. Chef Robert joined forces with his brother Kevin and started
Shabu in Park City, which features freestyle Asian cuisine. Together, they share a passion for food and mountain life.
BILL WHITE • BILL WHITE ENTERPRISES
Bill White began in the restaurant business at age 12 cooking French fries at a drive-in restaurant in Northern
Michigan. By age seventeen, he was running the entire kitchen operation of a steak house grossing $2 million/year,
and overseeing a staff of thirty.
At age 22, he enrolled in the Culinary Institute of America in Hyde Park, New York. At the Culinary Institute, Chef White
excelled in his studies and upon graduation, was selected to be assistant instructor to Master Chef Mark Erickson,

then the youngest master chef in the United States. A year later, Ferdinand Metz, Director of the Culinary Institute,
offered Chef White a job teaching culinary arts at the Center International de Glion, a hotel school located in the
mountains above Lake Geneva, Switzerland. After a year there, White decided to expand his own culinary experience
by traveling throughout Switzerland and France working at Michelin-rated three-star restaurants (the highest rating
for a restaurant in the world).
Chef White then moved to Utah later that year and bought the Alpine Prospector Hotel in Park City, planned and
executed a major renovation, and then reopened it as Grappa Italian Restaurant in January 1993. Bill White’s
restaurants now also include: Chimayo, Wahso, Windy Ridge Café and Bakery, Ghidotti’s, and Sushi Blue.
Chef White’s restaurants have received the DIRONA award (Distinguished Restaurants of North America) for the past
seven consecutive years and the Wine Spectator award for the past consecutive eight years. In 1999, The Robb Report
Magazine listed White as one of the top ten chefs in the nation.
ZEKE WRAY • TALISKER RESTAURANT COLLECTION
As Executive Chef for Talisker, Chef Zeke’s focus is to provide extraordinary guest and member experiences with
delectable cuisine made from scratch. Now in his second stint with the Talisker Restaurant Collection, Executive Chef
Zeke Wray’s culinary experience has taken him all over the West. Raised in Fort Collins, Colorado, he began working in
the restaurant industry as a dishwasher when he was 16 years old. Wray attended the California Culinary Institute in
San Francisco, where he gained hands-on experience in the kitchen at the prestigious five-star restaurant, Jardiniere.
Later, Wray made his way to Park City and worked for Bill White Enterprises, where he met Chef John Murcko, ran
a small catering business and joined the Talisker Club kitchen team at the Talisker Tower. Yearning to open his own
restaurant, he moved to Arizona and opened “Sophia’s” in Sierra Vista, Arizona. “I call it my business school,” Wray
says of Sophia’s, which he named after his young daughter. “It taught me what it takes to run a business and the
different areas of a restaurant that are affected together.”
The snow and the Talisker Restaurant Collection beckoned Wray and his family back to Park City. In 2011, Wray
was introduced as the newest Executive Chef of Bistro at Canyons where he still creates traditional bistro fare while
adhering to kosher guidelines. In July 2012, Chef Zeke was promoted to Executive Chef of Talisker.

Asi Yoked is Reef’s owner and chef. Reef’s is the culmination of Asi’s dream and determination to establish a
restaurant that offers high-quality and delicious food in a warm and inviting atmosphere. Asi grew up in Tel Aviv,

In the 1990’s, a group of friends with a passion for life and good wine decided
to crush a few tons of grapes in Napa Valley for their own personal cellars. The
results were so well received they started producing wine for the public the
very next year. They appropriately chose to name the wine, Amici (“friends” in
Italian).
Amici’s Partners include John Harris, Bob and Celia Shepard, Sharon Kazan
Harris, Bart Woytowicz and Joel Aiken. At Amici, the focus is on quality not
quantity. Because they insist on keeping production small, they can carefully

CHIMNEY ROCK WINERY
The story of Chimney Rock is entwined with the story of Napa Valley’s Stags Leap
District, home to some of the most elegant Cabernet Sauvignon produced on
American soil. Owned by the Terlato family, the distinctive character of Chimney
Rock’s wines springs from a simple yet extraordinary foundation - the Stags Leap
District, Napa Valley’s smallest and arguably, most acclaimed sub-appellation.
All grapes for Chimney Rock’s Reserve Cabernet, Cabernet Sauvignon, and
“Elevage” are grown on the winery’s 137-acre estate at the southern end of
the District. Winemaker Elizabeth Vianna approaches her craft with an artistic

CIMAROSSA
Cimarossa, meaning “red hill top”, is one of Howell Mountain’s most scenic
estates, with terraced vineyards and olive groves climbing the hillsides.
Located at 2,100 feet elevation on the top of the Vaca range, the eastern
mountains of the Napa Valley, Cimarossa is ideally situated to produce worldclass wine and olive oil. The vines and olive trees are tended by hand, a labor of
love that is evident in the quality of the products. The vineyards on the estate
produce a rich yet elegant Cabernet Sauvignon.
CONTINUUM ESTATE
Continuum Estate was founded in 2005 by Robert, Marcia and Tim Mondavi.
Continuum’s 172-acres enjoy a magnificent vista and are the perfect site to
grow rich, concentrated Cabernet Sauvignon, Cabernet Franc, Petite Verdot and
Merlot.
Four generations of the Mondavi family have grown and produced wines among
the world’s finest. Cesare Mondavi was the first to bring wine to the table but
it was his son Robert’s passion for excellence that inspired both his family and
the world.
Continuum is a single red wine produced with clarity of focus at the highest
quality and expresses the Mondavi family’s unique understanding of and

DAVID ARTHUR VINEYARDS
Three generations have worked together to establish David Arthur as a worldclass producer of the highest quality wines.
Each of their hand crafted wines express the unique terroir of the estate. Despite
the rough, rocky terrain these vines hail from, year after year they produce wines
with lush fruit character and silky tannins.
From the 21 acres planted on its Pritchard Hill estate, David Arthur cultivate
small amounts of Cabernet Sauvignon, Cabernet Franc, Merlot, Petite Verdot,
Sangiovese and Nebbiolo. The wines, Meritaggio, Cabernet Sauvignon, and
Elevation 1147, are 100% crafted from these estate grapes.
FARELLA VINEYARD
Farella Vineyard is located a few miles from downtown Napa in the “Coombsville”
area, a likely future AVA. We specialize in high quality, food-friendly wines that
reflect our unique vineyard site.
We have produced Farella-Park wines for over 25 years and introduced our
Farella “Alta” in 2005. We also supply grapes to several other top Napa Valley
producers.

JONES FAMILY VINEYARDS
Jones Family Vineyards was established in 1996 as a family run winery with
the singular focus to produce the finest wines. Their location on a south facing
hillside between St. Helena and Calistoga in the Northern Napa Valley provides
the ideal combination of soil and climate for the development of Cabernet
Sauvignon.
Vineyard manager, David Abreu, and winemaker, Thomas Rivers Brown have
worked to maximize the potential of their unique locations to produce three
outstanding wines, the Jones Family Vineyards Cabernet, a cabernet blend wine,
The Sisters, and the newest effort Jones Family Vineyards Sauvignon Blanc.
JOSEPH PHELPS VINEYARDS
In 1973, Joseph Phelps bought the 600-acre Connolly cattle ranch in Spring
Valley, and began planting vineyards. The winery was completed in 1974 and
that same year the first Syrah was made, the first grapes were crushed at the
new facility and the first Insignia was produced. Nearly four decades later, the
flagship wine, Insignia, is recognized as one of the world’s great wines. 29 of 34
vintages have been rated 90 or more points by various wine publications.
Today the “goût de terroir” or “taste of the soil” is what the wines of Joseph
Phelps Vineyards are all about. From the elegant, multi-layered Insignia of Stags
Leap and the Rutherford Bench, to the aromatic Viognier from St. Helena.
KELHAM VINEYARDS
Kelham Vineyards, farmed by Rawson Kelham for the last thirty-five years, is
located in the heart of the Oakville appellation, surrounded by such prestigious
names as Harlan Estate, Martha’s Vineyard, Mondavi’s Opus One, Paradigm, and
Vinehill Ranch.
In the past, this great vineyard has supplied fruit to some of the most eminent
wineries of the Napa Valley such including Duckhorn, Cakebread, Mondavi and
Beaulieu.
The family goal at Kelham is to grow, produce, and bottle premium wines, solely
utilizing their prized vineyards. The varietals on the property consist of Cabernet,

Passionate about meticulous farming, whereby the Estate vineyard is farmed
using Biodynamic® practices, Lachini also works with a selected group of
exceptional vineyards who share similar holistic farming practices and embody
“winegrowing”.
Their old-world, limited-production Pinot Noirs are classically-styled for

LORENZA
Lorenza Rosé is homage to the lovely rose wines of the south of France. The fruit
is sourced from wonderful old vines grown in Northern California — Mourvedre,

Picked early in the season for wonderful acidity, whole cluster pressed to
achieve a pale pink hue, then fermented dry, Lorenza Rosé is a sophisticated
companion to many dishes.
Owned by mother-daughter team, Melinda Kearney a Napa Valley based
marketing consultant and Michèle Ouellet, an international fashion model,
Lorenza is the celebration of wine, fashion, art, and food.
MACAULEY VINEYARD
The Macauley Vineyard label was originally established in St. Helena in the early
1980s by Ann Macauley Watson and for several years produced a very well
received late harvest Sauvignon Blanc with help from renowned winemaker,
Rick Forman.
In the late summer of 2000, Ann’s son Mac went to work for Rudd Estate in
Oakville. After several months of winery work and education he was inspired to
revive the family label, and, working with winemaker and childhood friend Kirk
Venge, crushed his first grapes in October of 2001.
Mac and Kirk have one goal: to source the highest quality fruit in Napa Valley
and make wines of extraordinary depth and personality. The grapes they choose
showcase the terroir of the vineyards and create a remarkable wine-drinking
experience.

OAKVILLE RANCH VINEYARDS
Oakville Ranch is the original mountain vineyard of the sub-appellation that
produces the New World’s most celebrated Cabernets. Covering just two square
miles at the heart of Napa Valley, the Oakville district may be small, but its wines
play a very big role in the connoisseur’s collection. At 1,400 feet above the valley
floor, Oakville Ranch produces fruit that speaks from the appellation’s signature:
red volcanic soil with a mountain accent.
The Oakville Ranch vineyard is an animated and effusively beautiful place, with
vines are surrounded by wild grasses, native meadows and unsullied woodlands.
Insectaries and raptor habitats provide efficient pest control and welcome
biodiversity. And of course, people work hard in the midst of it all to grow grapes
and make wines that are lush and unapologetically true, that hum with life.
PARALLEL NAPA VALLEY
In its first few years, Parallel Napa Valley has grown to be one of the most exciting
new Napa mountainside wineries in California. Parallel Napa Valley wines are the
result of a collaboration of eight close friends and two of the top winemaking
professionals in the industry today: Philippe Melka, who was recently named the
2005 Winemaker of the Year by Food & Wine magazine, and highly-acclaimed
Vineyard Manager Jim Barbour of Barbour Vineyards.
Philippe and Jim are responsible for crafting some of the most sought after wines
in Napa Valley. The inaugural 2003 Parallel Cabernet Sauvignon marked the first
time these masters had collaborated to create such an affordable wine.
PEJU PROVINCE WINERY
Peju is a dynamic family-owned and operated Wine Estate located in Rutherford
CA. The winery, with its magnificent 50-foot tasting tower, pristine gardens, and
extraordinary tasting environment, create a Napa Valley experience that should not
be missed.
Founded in 1982 by Tony and Herta Peju, today two generations are working side by
side at Peju as daughters, Ariana and Lisa Peju, take the helm. Dedicated to making
small lots of carefully crafted Cabernet Sauvignon and blends, the wines reflect
the vivaciousness and elegance exuded by the personalities of the family members
and their Rutherford and Persephone vineyards. One of only 18 Certified Green
Wineries, the Peju family is dedicated to sustainable and organic farming practices.
PORTER FAMILY VINEYARD
Our story starts five million years ago when a small sandpiper wandered along
the shore, seeing a world we will never know. The tiny tracks the sandpiper
left behind were covered with sediment and fossilized by the geological forces
that created what is now the Porter Family Vineyards in the Coombsville region
of Napa Valley. From our hillside vineyards and underground winery, our family
makes small amounts of beautifully hand-crafted wines—each one carrying the
unique signature from the vineyard.

RIVINO WINERY
Located along the Russian River in Mendocino County, Rivino is a boutique family
winery. All wines are handcrafted from select grapes grown on the family’s
Schrader Ranch Vineyard.
Being surrounded by grapes, and desiring to sample the fruit from the vines, the
family began making small amounts of wine for themsleves. Like many things in
life, that simple desire evolved. Realizing that they were producing far more wine
than they could consume on their own, the family decided it was time to take the
next step – hence the creation of Rivino, a 100% estate family winery.
RIVINO, is a combination of the words: RIVER and VINO “Where the river becomes
the wine.” With much excitement and hard work they have now released their
wines for others to enjoy.
TERRA VALENTINE
Terra Valentine blends the elegance of “place” with the bold subtleties of mountain
grown, estate wines. A climb up the switchbacks of Spring Mountain grants not
only extraordinary views, but a peek into the winery’s past – all enjoyed amidst a
tranquil, mountainside setting.
Winemaking at Terra Valentine, helmed by winemaker Sam Baxter, has always
been a mix of art and science. A keen focus on the grapes in the vineyard
to achieve ideal ripeness and flavor development leads to a winemaking style
marked by minimal intervention. The yield of this approach is evident in Terra
Valentine wines, which reflect a sense of place while showing the intensity of
mountain grown fruit and balanced elegance.
TRIFECTA WINES
The Nyárády Family has been making wine since the early 1820’s in the northwestern portion of Transylvania. In 1948, the once beautiful 40-acre estate
was seized by the communist Romanian government and destroyed. Today, the
youngest generation of the Nyárády family has made the United States his home
and resurrected this almost two century old family tradition in collaboration with
a third generation California winemaker, Bill Ballentine.
Good things always happen in threes, omne trium perfectum”, and Trifecta
Wines was created following their family’s win-win-win philosophy. Their wine,
their family, and the wine enthusiast or charity they support. The approach is
slightly different from most: Rather than spending energy on trying to make each
year’s wine similar to what may be expected from a previous vintage, the family
prefers to concentrate all of their efforts on what they refer to as “unique vintage
excellence” or the best nature has to offer that year.

Before the wine, came the appetite. At only 11-years old, Brett Feore began cooking in the kitchen of his childhood home in East Rockaway, NY while watching continuous episodes of Frugal Gourmet and Cooking Secrets
of the CIA. But it was not until six years later when a date brought over a bottle of wine that Feore’s oenological
curiosity was ignited. The very next day, Feore began exploring different wine shops in his neighborhood,
examining labels and familiarizing himself with different varieties of wine.
Feore never lost his thirst for wine after becoming a student at New York’s prestigious Culinary Institute of
America in 1997. He realized that the same explorations in cooking - balancing flavors and playing with textures
mirrored that of analyses of wine. After his CIA graduation and externship at New York City’s Atlantic Grill that
Feore earned his first of three Sommelier certifications and moved out of the kitchen and into the wine cellar.
Feore’s talents and approach to pairing wine were honed at a number of esteemed New York City restaurants,
including Laurent Tourondel’s Flagship BLT Steak, March, Picholine, and Apiary before returning to work with
Chef Tourondel at New York City’s new hot spot Arlington Club.
Feore joined the team with Laurent Tourondel at the beginning of this year at Arlington Club and has since used
his talents to further extend and improve upon the restaurant’s ever-changing global wine list. With steak as an
accessible, broad platform, Feore introduces diners to unique varietals, independent vintners and exceptional
bottles of wine. He also continues to challenge himself through The Court of Master Sommeliers.

TOBY MONTOYA
Toby Montoya may not consider himself to be a hero, but to many he is.
Montoya has served on and off in the military since 1992, re-enlisting after
the September 11, 2001 terrorist attacks. His service to our country has
earned him both a Bronze Star and Purple Heart. Montoya served missions in
both Iraq, as part of a “human intelligence team”, and Afghanistan. In many
instances he was in the thick of the hostilities, getting close to seven improvised explosive device (IED) explosions, including two car bombs.
On June 1, 2009, while serving as a specialist with the Illinois Army National
Guard in Afghanistan, Montoya encountered an incident that earned him the
Purple Heart, but ended his military career. While leading his convoy through
dangerous territory, Montoya was hit by an IED. The explosion sent his 37,000-pound “mine-resistant, ambushprotected” vehicle 5 feet into the air. The incident left him partially paralyzed and also resulted in partial loss of
his eyesight.
After returning home, Montoya struggled greatly with his physical and mental condition. Overcoming these injuries
proved to be difficult and he had a hard time coping with this new reality. It wasn’t until Toby connected with the
Wounded Warrior Project and the programs at the National Ability Center that he began to realize he could take his
life back. Through support, health and wellness services and adaptive sports programs – including adaptive skiing
– Montoya felt like himself again for the first time in years.
Although some days go smoothly and others bring confusion and vertigo, Montoya stays positive and keeps a smile
on his face. His battlefield mission may be over, but his new mission is helping fellow wounded warriors overcome
their struggles after they return home, a task Montoya finds immensely rewarding.
LISA SPECKMAN
Lisa Speckman is a miracle.
In 2005, Lisa had been working in a hospital for years. She was an Emergency Room nurse who was admired for her work ethic, her know-how and
her sense of humor. Lisa was also a wife and the mother of one beautiful
girl and another on the way. Lisa, her husband Steve and daughter Hannah
spent much of their free time skiing, hiking, running and cycling. They were
an active and happy family excited to welcome another little girl into the fold.
Lisa’s pregnancy had been effortless and on the morning of February 26,
Lillian Marrakesh Speckman was born via C-section. Later that day, Steve,
a reporter at the Deseret Morning News, was back in the newsroom showing off photos of his new baby. A few
days later, when Lisa should have been gathering up her flowers and wrapping Lily for the trip home, there was no
question something was wrong. She was in pain, frightened and experiencing trouble breathing. Her stomach was
terribly swollen and sore. Probably a kinked bowel, doctors reassured Steve as they wheeled her in for exploratory
surgery. However, the next few hours would reveal an infection so massive it would leave Lisa fighting for her life.
The Speckman family’s existence was about to change forever. Lisa would leave the hospital, but not the same way
she entered it. She would soon learn to live in a world of disability.
With amazing grace, dignity, tenacity and love, the Speckmans would reshape their future and come to the National
Ability Center to regain their lives as an active family.
Lisa will be sharing her incredible and miraculous journey with you tonight.
