BEER KNOWLEDGE
ABV:
Alcohol By Volume is the standard measure of how much alcohol is contained in a given
volume of a beer.
IBU:
Bitterness in beer is measured in “International Bitterness Units” or IBU, with each style
having a typical range of bitterness.
TYPES OF BEER
LAGERS: A type of beer that is fermented at low temperatures, normally kept in cold storage at the brewery. Giving them a crisp, clean flavor. It may be pale, golden, amber, or dark.
ALES: A type of beer brewed using a warm fermentation method resulting in a sweet, fullbodied and fruity taste. Historically the terms "beer" and "ale" referred to drinks brewed with and
without hops over time, "beer" came to refer to all beers, though - after the development of cold
fermented beer (lager) - "ale" came to refer to warm fermented beers only. The majority of Craft
beers fall into this vast Category.
IMPERIAL/DOUBLE: Beers that tend to have 7% or more ABV are often defined as Imperials or Doubles. These varieties also tend to have more intense flavors and sometimes feature extra hops. IBU
varies on style and brewers preference.
CIDER: Known as hard cider in North America, is an alcoholic beverage made from the fermented juice
of apples or other fruits such as pears. Most American Ciders tend to have a sweet, tart taste and be less dry
than their British counterparts. The three main types are Sweet, Semi-Sweet and Dry.
PALE ALES: A term that refers to many styles popular across the beer spectrum. With many varieties
and flavors, Pale ales are among the most popular Craft beers. Some examples include:
Amber Ales/ Red Ales; Light copper to light brown in color, made with a mix of Amber and Crystal Malts.
Blonde Ales; Tend to be clear, crisp with low-to-medium bitterness and aroma from hops, and some sweetness
from malt.
English Pale Ale (EPA); Sometimes defined as “Extra” or “Bitter”. This A mix of fruity, hoppy, earthy, buttery and
malty aromas.
American Pale Ale (APA); American Cousin of the EPA, expect a good balance of malt and hops. Fruity esters can
vary and bitterness can range from lightly floral to pungent. Tends to be cleaner and hoppier than EPA’s.
Indian Pale Ale (IPA); Color can range from very pale golden to reddish amber. Hops are typically American with a big
herbal and / or citric character, bitterness is high as well. Moderate to medium bodied with a balancing malt backbone.
Other styles include Rye,, Brown, Black, Cream ales, Extra Strong and Extra Special Bitters and other varieties.
Stouts and Porters; The malts they use which give them their flavors, texture, and bold black color. The only main difference many
brewers still agree on is the kind of malt that should be used to brew each type of beer. Porters use malted barley and stouts are primarily made from unmalted roasted barley, which is where the coffee flavor most people associate with stout comes from.
Milk Stout; A stout containing lactose, a sugar derived from milk. Because lactose is unfermentable by beer yeast, it
adds sweetness
Oatmeal Stout: Medium to full bodied stouts that have an unreal smoothness to them from the addition of oats to the
mash.
Porters: Whether it is highly hopping the brew, using smoked malts, or adding coffee or chocolate to complement the
burnt flavor associated with this style. Some are even barrel aged in Bourbon or whiskey barrels. The hop bitterness range
is quite wide but most are balanced. Many are just easy drinking session porters as well. ABV: 5-7% IBU: 20-60
Wheat beer: Beer that is brewed with a large proportion of wheat relative to the amount of malted barley; it is usually top-fermented.
The two main varieties are Weissbier and Witbier.
These are just some examples of the multitude of Beers out there for you to
enjoy. Try them all because you may just find your new favorite beer!

Really Cool Waterslides IPA
[ Style: IPA | ABV: 6.0% | IBU: 60 ]
Its smooth malt profile lets the hops do the talking. We combine three hop varieties over a ninety minute boil in three separate additions. To finish it off, we
dry hop the bejeebers out of it, resulting in a robust, tantalizing aroma.
Cashmere Hammer Nitro Rye Stout
[ Style: Stout | ABV: 6.5% | IBU: 13 ]
For this beer we started with the rye and piled it on, ensuring it would play first fiddle. The rest of the ingredients – the base, dark, and caramel malts,
along with Czech Saaz hops – were selected for their ability to highlight the rye and play off its boldness.
Baaad Boy Black Wheat Ale
[ Style: Dunkelweizen | ABV: 5.5% | IBU: 13 ]
Beneath its rich, dark exterior and cascading head, you will find a classic unfiltered wheat presentation fused with the smooth, roasty, chocolate-like
characteristics of the dark wheat malt. With a finish unnervingly smooth, you’re going to want to give this Baaad Boy a second chance!

Happenstance Ale

Three Way Pale Ale
[ Style: American Pale Ale | ABV: 5.2% ]
Three Way is a sessionable pale ale with a deep golden hue and a flavor characterized by floral and citrus-like hops. The selection of three traditional and
unique hops combined with three select malts creates a pleasing and balanced beer; described best by having a medium maltiness, a tropic hop character
and a moderate fruitiness with hints of grapefruit, pear and a subtle spiciness. The result is a beer that is sure to be desired by many anytime, anywhere.
Lost
Trout Brown Ale
[ Style: Brown Ale | ABV: 4.9% ]
Where have all the trout gone? The tale seems fishy, but Lost Trout Brown Ale isn't. Not your typicla brown ale, Lost Trout's favor is slightly sweet with a
good balance of chocolate and coffee. While not excessiely hoppy, hints of grape are apparent. The true brown color is the result of some slight roastedness. We're quite fond of this catch - a true Brown Ale brewed in Old World style.
Sugar Shack Maple Stout

We started home brewing together in 2006 in Jim’s one-car garage. Our first brew was on a -20 degree February day. As we huddled around a turkey burner (both
for warmth and because the garage was so small) we talked about how cool it would be to brew beer for a living. Then, in early 2009, an opportunity presented
itself. Ryan was looking for an internship, but having absolutely no luck. Suddenly, the “what if” discussions were no longer hypothetical, and we starting having

factory Omar’s parents ran for 35 years within those same 4 walls. Bandsaw blades, grinding wheels, and sanding discs came long before ales and
lagers. But let’s be honest, this is a lot more fun. Pale in color, this over-hopped, under-brewed Double IPA has almost twice the amount of hops & malt
crammed in the can. Seasonal between March and April.

Hop
An unexpected visual bend to an American India Pale Ale, this style is one that stands out in a crowd, or if you’re more like us – enjoyed at a campsite…
with no crowd. This non-traditional IPA is golden in color with an enormous floral/citrus hop aroma and a supporting malt profile.
Venture Pils
[ Style: Pilsener | ABV: 5% ]
This craft lager harmonizes noble hops and premium malts found in North America and in Europe. We did the traveling to save your the paddling.
Black
[ Style: Dark Ale | ABV: 6% | IBU: 35 ]
Brewed to be smooth, chocolatey, semi-roasted ale that bridges the islands of porter and stout. And if you aren’t a fan of bridges, there’s always the
canoe. This Black Ale drinks like a porter but is opaque like a stout. Brewed with a generous amount of oats to round out the flavor.
[ Style: Strong Bitter | ABV: 5.6% | IBU: 32 ]
ESB
Our well rounded approach to the classic British Ale. There’s middle of the road, and there’s middle of the river. And if there’s one thing that’s important in
the middle of the river – it’s balance. Our ESB is incredibly well balanced with a slight toasted malt flavor, traditional British hop accents with just a hint of
pine and citrus from the unexpected Amarillo / Ahtanum dry-hop.
Toppling Goliath Brewing Co.
Decorah, IA
RATING
BOOTH
#69
Toppling Goliath Brewing Company started in May of 2009 with Clark and Barb Lewey after months of dangerous experimental home brewing projects that claimed
the Lewey’s garage. As the recipes gained favor with family and friends, they decided to build a small nano-brewery “on the hill” in Decorah, Iowa. Brewing 3 times a
day, for almost 2 years on a ½-barrel nano-system, led to a demand that could not be kept up with. When a 10-barrel system lost its home in Washington State, it
relocated to NE Iowa and became the workhorse of our brewery. Soon, it too was incapable of keeping up with local demand.

Sodbuster
[ Style: Porter | ABV: 6.1% | IBU: 29 ]
It pours a deep golden color with a thick, white head that lingers in the glass. The first impression is the immense hop aroma that wafts out of the glass,
thick with tropical fruit, floral, and grapefruit notes. The flavor is a huge rush of hop character, combining citrus, floral, and resin with a slightly subdued,
smooth, and balanced bittering. The malt character perfectly compliments the hopping with clean, crisp flavors.
Sodbuster Porter is a beautifully balanced, robust beer that pours black with a thick tan head. Dominated by coffee, chocolate, roast, and faint hints of
smoke; this porter is rich and full on the palate, providing you with the fortitude to make it through North Dakota winters.

Patterned after the rich, smooth, malty ales of Scotland, Stone’s Throw is dominated by caramel toffee, toasty malt, hints of cocoa, residual honey
sweetness and just enough hops to keep this rock on the button. The perfect brew for someone new to craft beer. Cheers, skip!
Wood Chipper
[ Style: IPA | ABV: 6.7% | IBU: 70 ]
This classic American IPA showcases an aromatic, bold hop flavor. Horizon hops and oats provide a sleek, velvety body and balanced bitterness while
two pounds per barrel of dry hopping offer initial waves of citrus and pine. We’d give our left foot for another pint!
Fargo Original Lager
[ Style: Pale Lager | ABV: 5.1% |IBU: 15 ]
This pale golden lager is patterned after some of our favorite classic German lagers. It pours a very light gold color that is brilliantly clear and is capped
with a white head. The aroma is a blend of grainy Pilsner malt, light fruit esters from the lager yeast, and some subtle spicy hop notes. The flavor is
crisp and clean, balancing slightly sweet and cracker-like malt with a subdued bitterness and a touch of hop character. The result is a highly drinkable,
clean and crisp lager that is fast becoming a brewery favorite.

When this liquid reaches the stores, we begin the fermentation process and complete the brewing. We use Fermentus Interruptus at all of our Granite City Food & Brewery® locations.

flavor of this beer, giving intense citrus & pine character.
Zug Zwang Vanilla Porter
[ Style: Vanilla Porter | ABV: 5.7% ]
All the roasted and chocolate flavor that you'd expect from a classic Porter. The addition of real vanilla bean adds unparalleled complexity and a rich,
smooth, caramel flavor.
MISTER CORPORATE SCHWARZBIER
[ Style: Schwarzbier | ABV: 5.1% ]
Schwarzbier ("shvahrts-beer"), is simply German for black beer. It doesn't mean that it's necessarily heavy or light in body, although they tend to lean
towards light. Unlike other dark beers, like Porters or Stouts, they are not overly bitter with burnt and roasted malt characteristics that the others tend to
depend on. Instead, hops are used for a good portion of the bitterness. Very refreshing and soul lifting beers, they also make a great alternative for the
winter. Especially when you are looking for a lighter beer, but one with depth of color and taste. This beer is 100% hand tossed. This means that our
brewers had to lug around and lift 1300lbs of grain per brew. We feel the extra work is worth it for this extra special beer.

Our story begins over 35 years ago with a couple of young kids "sampling" apples from their unsuspecting neighbors. What started as an innocent taste-test has blossomed into a quest for the perfect cider. In 1997, we attempted our first batch of cider. It became the starting point for years of experimentation. Honing our craft didn't happen
overnight. It has been a learning process that we continue to fine tune. Many years and countless batches later, we
feel like we're onto something.

Balance is everything . . . In life, and in great ciders. Number 12 is no different. We are continuously experimenting to achieve a

culmination of 17 years of experimentation. And we're ready to share!
Number 12 Black Currant Dry begins with aromatic notes of jam and rich black currant followed by a crisp, dry cider finish. Once
considered the “forbidden fruit” due to a 100 year ban, the black currant is now experiencing a resurgence in America’s conscience. It pairs beautifully with locally grown apples by providing a tannic structure needed for depth and complexity. This is the
cider that will change your perspective.
