Jam Recipe Ingredients 3kg of mixed berries of your choice 3kg of white sugar Juice from ½ a lemon Method Wash and sterilise jars and lids. Place strawberries in a saucepan and stir through sugar. Add juice then cook over medium heat, stirring constantly, until fruit is soft. Remove 1/3 of fruit. Set aside. Cook remaining mixture until fruit is mostly dissolved and jam coats the back of a spoon. Divide reserved fruit between the jars then fill with jam. Allow to cool,then seal with lids. Berry Smoothie Ingredients ½ cup of frozen strawberries ½ cup of frozen Raspberries 2/3 cup of vanilla yoghurt 1/3 cup of milk 4 ice cubes Method Allow berries to thaw. Place berries, yoghurt , milk and ice cubes into a blender. Blend until smooth and frothy. Pour into a tall glass. (Serves 2). For a healthier option use low fat milk and natural unflavoured yoghurt and add honey for sweetening. Mango Daiquiri Ingredients 2 Cups frozen mangoes chunks ¾ cup white rum ½ cup cointreau 1/3 fresh lime juice ¼ cup of vodka 1 cup ice cubes Method Place mango, rum, Cointreau, lime juice, vodka and ice in the jug of a blender and blend until smooth. Pour among glasses. Garnish with mint to serve. Mixed Berry Crumble Preparation Time 5 minutes Cooking Time 25 minutes Ingredients (serves 4) 500g frozen mixed berries, thawed 1/4 cup caster sugar 1 tbs cornflour 3/4 cup rolled oats 1/2 cup shredded coconut 1/3 cup flaked almonds 1/3 cup brown sugar 50g butter, melted Ice cream, to serve Method Preheat oven to 180°C. Lightly grease 4 x 1 cup ovenproof dishes. Place the berries, sugar and corn flour in a bowl and stir until well combined. Spoon the berry mixture evenly into the prepared dishes. Place the dishes onto a baking tray. Combine the rolled oats, coconut, almonds, brown sugar and melted butter in a bowl. Sprinkle the crumble mixture over the berries. Bake for 25-30 minutes or until golden brown. Serve with ice cream.
