But now they’re coming up with ways to customize their breakfast orders as well. Guests are asking for their own variations of menu items or inventing dishes that are not posted on the menu as part of the ongoing trend to make the food their own. “I think the ‘control’ piece is definitely here to stay,” says Kevin Dorr, vice president of retail for Atlanta-based Morrison Healthcare, which provides food and nutrition services to 600 hospitals and healthcare systems. “People want control over their order.” Morrison is a division of Compass Group North America. Dorr says one factor contributing to the customization trend is that many restaurants have adopted a “step” system for choosing their food. “It’s, ‘Step One, choose your bread; Step Two, choose your meat,’” Dorr says. “The other driver of this is mobile ordering and kiosk ordering. You can customize your order and spend time on it and not have a cashier waiting.” For Morrison Healthcare, breakfast customization occurs mainly with omelets because the process allows people to choose ingredients. According to Datassential, that popularity is due to ethnic influences. The 2014 Datassential MenuTrends reported that spicy sauces have seen tremendous growth on breakfast menus over the past year. The biggest gainers were chipotle sauce, which saw an increase of 170 percent in menu mentions, habanero, which was up 132 percent, and salsa verde, up 74 percent. Other growing flavors include mole (61 percent), ancho chile (55 percent), poblano (54 percent), and chutney (46 percent).
